I’ve been busy eating! 3 meals a day. How ’bout you?
Quaker and Wild Friends party! I love those quick cooking steel-cut oats. And the Wild Friends Classic Creamy Peanut Butter is just about the best I’ve ever had.
Chia pudding is back!! I made a Juice Laundry strawberry shake with lots of chia seeds, milk and banana.
Even if Mazen won’t touch them, I love my scrambled eggs!! He devoured the strawberries. Banana with chocolate almond butter in the middle!
And finally – an oatmeal party. More steel cuts (with chia seeds) topped with PB and banana.
On the lunch front, I made a big massaged kale salad with almonds, apples and avocado, and had raisin bread on the side.
On another day I ate leftover meatballs over wilted spinach with cheese and grapefruit.
And more meatballs over kale pasta salad! (The last of it all, thank goodness!)
Lastly, a Spinach Feta roll with smoked salmon, pesto, manchego and spinach. Small package, mighty bite!
Dinners included Mexican night with Hillary and Ellen before Survivor. This is just a layered bowl of rice, beans, peppers, cheese, salsa and yogamole (aka guac with Greek yogurt!)
Dinner out at Maya! We shared pimento cheese fritters, fried oysters, mushrooms with acorn squash, salad and trout among friends.
And I ate leftovers for dinner the following night. It was so good the next day!
Finally, I bought a single salmon cake at Whole Foods and had that with some hot bar green beans and potatoes for dinner. I gotta resist doing this too often! Mazen enjoyed his hot bar selections too : )
We spent two whole days playing firemen. I wonder what the other drivers of Charlottesville thought when they saw me whiz by in my fire hat! ?

As a mom of an almost 4 year old and an almost two year old, other drivers must think I’m a lunatic. I’m usually driving singing some sort of toddler song with hand motions (Skinamarinky Dink, Wheels on the Bus, etc). They sure do make life fun 🙂

I’m really impressed that you’ve kept up “normal” meals during your separation. I seriously shudder to think about what I would probably eat for dinners if I were on my own– when my husband goes out of town, it’s usually like, microwave popcorn and string cheese, or some other equally random combination. But then again, maybe it would be a good chance to eat healthier– smaller portions, etc. Have you found that you’re eating differently at all?

Maybe a little!? I think it’s too soon to tell : ) I have learned that I don’t need much because I’m always doing lunches or dinners out with friends or having leftovers on hand, so I don’t need to really schedule that many “meal plan meals” into my week

Not really – surprisingly it’s gone down because I am doing less date nights out for two.

It’s just 1/4 cup chia seeds and 1 cup of milk. Plus anything else you want to add!
