We’re in the thick of it friends! Hope you’re having a great holiday season. I always stop other times of the year to pause and think about how it feels for it to be Christmastime. For some reason I’m having a hard time getting in the spirit this year! It might be the 70 degree temps or just that life has been a little crazy lately. Stay tuned for a post tomorrow about our little tree decorating party!
How’s this for a Christmasy smoothie!? Looks kind of like something the Grinch would sip… Made with banana, spinach, Juice Laundry Peppermint Bark cashew milk and berries.
Breakfast #2 is good ole OIAJ (oats in a jar!)
Hot whipped banana oats poured into a near-empty peanut butter jar and topped with a little granola.
Of course you’ll always find some eggs/toast/fruit combos in my weeks : ) A hungry morning!
More oatmeal – this time overnight oats made with that delicious peppermint bark milk, lots of chia and blackberries. Almond butter on top!
And finally some French toast – whole wheat cinnamon chip bread – with peanut butter on top.

I also had this delicious cappuccino at Mariebette with my girlfriends for our annual Christmas breakfast that turned into a stand-at-the-bar-and-chat-quickly-over-coffee event due to kiddos and busy schedules 🙂
Lunches!!
Matt came home for a lunch date one day while M was at preschool and made us these beautiful crab cakes he bought at the farmer’s market. Plus a salad and toasted Olive Sourdough he had baked that morning.
I was in charge of tea for dessert!
Another day I had leftovers from a Blue Apron meal – SO good! Full meal coming tomorrow : )
The next day we went to Great Harvest for lunch and I had a big salad with hummus and pimento cheese.
Leftover pizza always makes a fabulous lunch! With a little side salad and a sparkling water.
Dinners : )
I made a jumbo pot of chili so I could take some to my friend Tricia who recently had a sweet baby girl! I packed it with peppers, beans and local grass-fed beef.
We had the other half at our house for dinner and lunches.
Another night we had fish Mustard-Panko style. This is a technique I learned from Blue Apron that I can’t get enough of – rub the fish in a grainy mustard and then top with panko. Fry in a pan in some oil and you have a perfectly flavored two-ingredient recipe! Plus roasted broccoli and brown rice on the side.
Matt went out one night and I had a bunch of leftovers – including the last glass of wine in a bottle in my new fancy Crate + Barrel glass : )

Do you brown your meat before putting it in your chilli? In the picture it looks raw, I always brown mine first. Just curious on how you make it.

I have been a reader of your blog since right before your son was born. I love how your blog has transformed but I must say that your Lately posts are my favorite. For years I have wondered about pimento cheese. We do not have this in Vermont, that I can find anyway. I am so intrigued. I think I would love it!

The best way to spread Christmas cheer is singing loud for all to hear! I always blast some Pandora Christmas music in the kitchen while I’m doing dishes or cooking or something to get in the spirit. It’s finally snowing by me, which makes it a lot easier.
