What’s going on friends!? Friendsgivings? Fall Festivals? Pumpkin beer? We didn’t get a chance to do our annual pumpkin beer tasting this year, but Matt brewed a really good one! Next year we’ll get back at the whole shebang and taste all the new ones to the market. We have been out hiking in the crunchy leaves!
We’ve also been doing lots of puzzles. All the time puzzles!!!
I went with my girlfriends to Nude Food for lunch one day and had this glorious spread!! LOVE the chickpea side dish! And that pimento grilled cheese was the bomb! The pot pie and wheatberries with butternut and kale dishes were also so good. This is the best place for a casual-but-sit-down lunch with really healthy food.
Had a bunch of the leftovers for lunch the next day!!
Hmmm…then I went to the grocery store to stock up. Got lots of healthy things on the bottom and then put unhealthier things like delicious cheese and crackers on top!
Breakfast one day was yogurt with raspberries, banana, raspberry jam, and homemade granola on top.
Matt made an excellent pasta dish with sausage while I was in Richmond and I had leftovers for lunch plus a bunch of steamed spinach and pesto on top!
When it gets cold out I get a little tired of salads, so I threw a bunch of veggies into a monster omelet for Lauren and I and the kiddos. Plus cheese oozing out of the inside!! Such a simple yet filling lunch.
Dinner one night was a Mona Lisa Pasta baked ziti. Plus baked acorn squash (had a bunch from the pan so I only had one one my plate!) and a massaged kale Caesar.
Mazen and I made some fresh squeezed orange and grapefruit juice one morning. Citrus juicer was a birthday gift from a nutrition-focused friend! Shirt optional ; )
We chased the fruit juice with eggs and raspberry jam toast!
Overnight oats with raspberries and sunbutter. The bomb.com!
I was working on a recipe involving macadamia nuts and ate a bunch, so I had a small lunch one day (wasn’t hungry at all!) Cucs with hummus and a yogurt with granola on top.
And finally, a big tempeh and slaw scramble with peanuty noodles from Cook Smarts! Topped with lime, honey peanuts and sriracha.

Yum! These look so yummy. I feel you on the salads… I’ve been trying to find warmer ways to get my noon veggies because salads have lost some appeal.

That omelet looks amazing!! Have you ever taken frozen strawberries and honey and made a little jam on the stove and then let sit overnight and add to yogurt? It tastes like a sundae!!

I take frozen berries and warm them on the stove. Add a tablespoon or so of chia seeds and gently heat till thickened. I’ll store it in the fridge after cooling it. Easy simple homemade sauce/jam/spread!

Since you are an RD you can answer this question. When you eat bananas, do you eat 1/2 as a fruit and a whole counts as fruits? Thanks

It seems like you’ve really been hitting your stride lately… I think I was drawn to the blog years back partly or the everyday food inspiration, but also because there seemed to be such an enthusiasm that seemed to spill over. When life changed for you, it didn’t resonate so much with me.. but you seem brighter lately, more Kath again? I don’t know… you seem like a pretty down to earth family on the whole. I think being a family of 3 suits you. Especially with the reality of effects on our world of every life, small is beautiful and you seem to be enjoying the guys for who they are, rather than slipping into the role of being a wife/mom. It’s a key distinction and it’s nice to see you genuinely have time to be a friend to M growing up. When the cultural mindset is always for more, it’s good to remember to be settled and happy with life just the way it is.

we made the same dish from CS! Used soba noodles and chicken and thought it came out great. the slaw add-in was brilliant!
