Hiya friends!
Was this week a little lighter after the big Thanksgiving festivities? Mine was! Squiggly line, all in. I always enter a period of “cut back” as my mom would say after a big holiday. Cravings for pie are low and cravings for kale are high. I love it when my body wants to be totally healthy! Let’s rewind a bit and see what’s been on the menu:
Breakfast of eggs, toast and fruit is my very favorite for feeling my best these days. I love the variety of flavors and textures.
Of course oatmeal is the opposite of eggs for breakfast and delicious in totally different ways. Stick to your gut and warming you up ways! These whipped banana oats were topped with baked apples, a sprinkle of granola and Good Spread Peanut Butter. <—I am head over heels for this stuff!!
What happened to the inside of this toast, we will never know. Unless you were a fly on the wall in my kitchen and saw me eat the gooey inside before it even went in the toaster! Served with eggs and pear.
Scooting back a week to a few other photos I have, I had leftover Big Fat Pancake from Brookville for days. Served with a green smoothie for a balancing effect ; )
And finally, I polished off my pancake, egg and bacon sandwich with a side of grapes. I think more pancake sandwiches need to be invented. The key is to get your pancakes firm enough that they don’t crumble apart in hand. I’m not quite sure how to do that!
In the lunch bunch – leftover brussels, cheesy eggs and a Spinach Feta roll with the last cheese bits stuffed inside.
Next up: some Smoked BBQ Company chili that I picked up on the way home from the gym plus a side salad topped with peppers, carrots, homemade dressing and a bite of cornbread muffin that I shared with Mazen.
We had leftovers for lunch the next day – Emily’s tempeh kale salad! See the dinner section for more details : )
I finished off my curdled-but-still-tasted-good broccoli soup as well. Extra good with whole grain croutons!
And finally, lunch at Eppie’s with friends. Tamale day! I have been wanting to try these for a while, and sadly it left me a bit underwhelmed. I’ll be back to the veg plate and Santa Monica salad next time!
These tacos were made with BBQ chicken, yellow and orange bell peppers (not the best choice for colors!), cheese and yogurt on local corn tortillas. Pretty delish!
Next up we made Emily’s Festive Kale Salad with Wheatberries and Tempeh. It looked so good in her post that she planted it right onto my meal plan! It was a delicious winner, and we hadn’t had tempeh in ages.
Next up we made Spaghetti Squash Bolognaise. I have a recipe for this, so stay tuned next week!
And finally, I went to see a Rolling Stones cover band with some friends and ate at Yearbook Taco. Fish tacos and chorizo were soooo good! Plus chips and margs. A big night out!

Looks delicious! Can’t wait for the spaghetti squash recipe (I love that alternative to noodles). Quick question, what does “Stick to your gut and warming you up ways!” mean? Sorry to be dense but I kept reading it over and thinking huh? So I thought I’d ask 🙂

Stick to your gut means it keeps you full and warming as in something warms you from the inside like soup, hot tea or oatmeal.

I think the sentence itself was confusing the way it was constructed, not so much the content.

“Sticks to your gut” was a commonly uttered phrase in my childhood. “Mom can I have a snack?” “Here, eat this peanut butter, it’ll stick to your gut.” To me, nut butter is the quintessential gut-stickin’ food – keeps you full for hours!

It may have been a little confusing because of the “ways” at the end of the second sentence, but I think Kath was trying to contrast the oatmeal with the eggs by saying they were both delicious, but in “totally different ways,” because the oatmeal “stick[s] to your gut and warm[s] you up.”

We didn’t have Thanksgiving leftovers this year and I am thankful for that. I would have ended up eating pumpkin pie every day until it was gone 🙂

I wish my squiggly line was all in this past week. I tried to be healthy with some kale in soup and ended up throwing it out. I’ll stick to kale chips and salad from now on. My pregnancy hormones have me craving all sorts of bad stuff which I’m trying to ignore. I needed your inspiration today!

Good lookin’ meals!! I absolutely love Brussels sprouts (I always roast them with powder or dill). And kale and lentils are such a great combo!!! I can’t believe I only discovered kale a year or so ago…I now eat it AT LEAST 2-3 times per week. These are some of my fave kale recipes:

Those fish tacos look great! My husband and I are going to see a Foo Fighters cover band next Thursday so maybe we can squeeze in a good Mexi-meal like that pre-cover band! 🙂

Can I suggest a more crepe like pancake for your pancake/egg sandwiches? I only ever use this pancake recipe as my husband disdains fluffy ones, but they are absolutely delicious and would stand up very well as a sandwich.

Added leftover homemade cranberry sauce to a smoothie today at your suggestion, brilliant! Also added leftover cooked oatmeal for the first time, totally different than adding raw and much nicer I thought. It made the smoothie a lovely creamy texture. Nice to have a new winter smoothie mix.
