Long time no lately! Which means….I have lots to share!!
First up is my Coffee + Almond baked oatmeal. Ate it the next day reheated with some chocolate peanut butter and fresh fruit on the side. I shared the rest of the bake with some hungry friends : )
Next up: eggs, toast, apples with PB, coffee.
Overnight oats with green juice on the side. A refreshing blend!
Halloween oatmeal with festive sprinkles (I told you I’m behind!) I put some Noosa pumpkin on top – delicious!
Breakfast in bed – apple cobbler swirl French toast with PB. Matt’s creation!
And a dreary morning of eggs, pear and toast with jam.
For the lunch bunch I had …
Leftover sushi with sautéed chopped Brussels. This was sooooo good the next day!
Leftover pizza – also appreciated this so much when I was starving for lunch the next day. Went back for one more slice! Salad on the side with greens, pepper, carrots and goat cheese.
My friend Jessica made these oat bars and brought them to the gym, so I had one of those as a post workout snack.
Since that filled me up a little, I had a lighter lunch of kale chips and cheese! Great combo ; )
He’s a mix of leftovers – lentils, roasted roots, greens, and a side of Eppie’s cornbread. (We always get too much when we eat there so I take the extra piece home!)
And finally, a quesadilla and a cup of homemade soup topped with parmesan.
Lots of pizza and salmon – and this is what M has to say about that!!
We went to Sal’s with Karen and got Caesar salads and the gooiest pepperoni pizza ever.
We did a simple salmon dinner the next night and used a bottled chimichurri sauce from Whole Foods. Not good – homemade is best! (Obviously…) Rice and broccoli on the side.
I had more salmon the next night at my friend Sarah’s house. She hosted a Matilda Jane party and had a DIY salad buffet.
More pizza!! We had some friends over for homemade pizza and salad. Matt’s pizza rules!
I made a big salad to go with it –
Mazen loves making his own personal pie! Spinach snuck into the crust : )
And finally – we had the Butternut, Mushroom and Kale dressing with some pork on the side. The pork was called “side meat” and was like giant bacon! A little too much fat for me, but still tasty.

Hi Kath! I just wanted to leave a suggestion for these lately posts…have you thought about doing them in a way so the meals work together and make sense? Like you could focus on one day “lately” or one week “lately” instead of just putting together random meals? I don’t really need to know what you ate for breakfast on Halloween since it was 20 days ago…I’d much prefer a snapshot of what you’re actually eating in a given amount of time. I think it would make more sense that way. Just a suggestion!

Thanks for the tip. I have thought about doing one day at a time, but then I’d miss out on sharing so many other meals. Most of the time all the meals in my Lately post are from one week, but they are usually a week or two behind real time. The only time it’s awkward is when there’s a holiday! Otherwise it’s just days like today. But I appreciate the feedback.

I’d also love to see the what you ate in one day — I’m trying to work more on balancing what I eat within a day (so, on a day with a carb-heavy breakfast, I try to do a lunch focused on veggies/lean protein, etc) and on keeping track of snacking throughout the day. I would love to see your balance within a day (or days).

I think it’s fine to miss sharing some meals, especially since I feel like we’ve seen a lot of these in previous posts. A lot that are posted in the Lately posts are also so similar to each other that I tend to have to scroll back and forth to because I think it’s a different photo of the same meal. That’s cool, we all eat like that (I know I eat the same things over and over when I really get into something, haha!)! I don’t think you need to feel obliged to share it all though. I agree that just one day at a time might be enough.

P.S. and can you froth almond milk the same way? That is what I use.

I have a milk frother from IKEA that works really well! It was $4. I’m not sure about almond milk – I use 2% and whole milk so I think the fat really helps. I am pretty sure you could get some foam out of almond milk though.

You can! I used a cheap frother from World Market, & I was able to make a nice almond milk chai latte for my boyfriend. 🙂

Just an idea for more side meat in the future. When I was a kid, oh back about 50 years ago we ate side pork a lot. It came with the pigs my Dad brought home and butchered. Well anyway. Mom soaked it in milk( although I don’t think it needs more than dipping) and then into seasoned flour. It was also sliced not in thick pieces like pork belly is, I think. It was then fried in a little oil until it was browned. Then into the oven for a while. Until it got VERY crispy. It was one of my most favorite things to eat and still is, but I am not able to find unsalted side pork where I live. It’s all salt pork here. I did try this recipe with salt pork and it was good, but still too salty after rinsing and soaking in milk.
