This Lately post is a good round up of eats of meals enjoyed at home and away.
Mazen would like to demonstrate his new found taste for arugula! He helped me spin the greens and make a dressing and then next thing I knew he wanted to taste it. I was so proud!
Let’s eat some breakfast! First up is an egg sandwich with jam and almond butter. This is one of my favorite combos! The egg adds a hearty bit of protein to a typical AB&J. Peach and tea on the side!
Next up: pancake day! Mazen loves to stir the pancake batter, and it’s his current favorite breakfast. I topped my two cakes with drippy nut butter, peaches and chia seeds.
One morning when we all woke up too late and I needed something quickly digestible, I made a green smoothie with banana, spinach, milk, yogurt, chia and oats.
Can you tell I’m into peaches!? Peach + yogurt bowl with granola on top. A few blueberries snuck in too!
More pancakes…!! With almond butter and chia sprinkles.
First up – a working lunch. I took my computer to Paradox Pastry and had delicious Tuscan bean soup with a side salad.
Plus this awesome hot toddy cookie for dessert!! I did my best to eat 1/4 and saved the rest for the family : )
Up next was a leftover hamburger and salady things from Mazen’s birthday party. Bean salad on salad.
On this clearly dreary day I had a quesadilla with leftover refried beans and a salad on the side topped with red peppers and cheese bites.
I loved the egg muffins I made from the Feeding Baby cookbook! They were packed with broccoli, thyme and cheddar. Served with leftover rice and apple slices.
And finally, leftover meatballs served atop a salad with tortilla wedges on the side and some Everona Dairy Piedmont cheese.
First up were some leftovers Karen brought over – big curly noodles with a creamy chicken sauce. We added broccoli and cheese to turn it into a one-dish meal.
Tuesday was girls’ night out at Commonwealth!
Tricia and I split this beet and greens salad (love golden beets!)
And I had these awesome scallops served over a mushroom risotto for my entrée.
I had an easy dinner of leftovers the next night when Matt was out. A bunch of brown rice topped with shrimp curry from the freezer. A big dollop of Greek yogurt on top.
This dish was a Cook Smarts lamb and feta burger that I turned into meatballs (of course!) Served over greens with more feta cheese, it made for a great weeknight dinner.
And finally, another girls’ night after the Monticello event – tacos at a new friend’s house! (I actually only had one – this is Sarah’s plate but it was a lot prettier than mine!)
Mazen and Matt loved the refried beans I made for them before I went out!

Love it that Mazen enjoys eating healthy foods with you! =) My 2 year old boy also loves avocado (plain), eggs with spinach, green smoothies, etc. just because its ‘normal’ everyday food in our household too!

We are eating more apples and squash nowadays. This week I’ve been making pumpkin, acorn squash, and butternut squash. I made a butternut squash and garlic sauce to serve over whole wheat ravioli on the first day of fall and it was the perfect way to welcome the season. All of your meals look so delicious!

i’m not certain whether even i like arugula! my best meal last week was grilled bbq chicken and a creamy mushroom quinoa & brown rice concoction that i came up with served with a simple salad.

I’ve never tried to refreeze and reheat shrimp (because I haven’t tried to cook it at home)! I’m surprised it holds up so well. I always think shrimp is delicate.

I only note this because I had been at the Monticello event eating before I got there. So I ate twice as much as she did!

I really like reading about your meals. Something that would be fun would be to read what websites/cookbooks/recipes you use for inspiration — though it does seem like most of your meals are CookSmarts or not from a specific recipe.
My favorite healthy eating website for recipes so far is skinnytaste.com — if you haven’t used her recipes before, it’s worth checking out! And I recently used this recipe from the Recipe Critic as the base for a fried rice that was chock full of vegetables. I tend to do 1/3 Cook Smarts, 1/3 invented-on-the-spot and 1/3 inspiration from blogs (so someone might make a chili and I get a craving). I don’t tend to use cook books as much because their recipes tend to be more complicated than I like. I’m all about quick and easy! I just made this Enchilada Soup from Gimme Some Oven this week that was super easy and delicious.

Since it’s not that often, maybe you could do a once monthly recipe roundup of recipes on the web — what you tried, what you liked, how you modified it, etc. I’d love to read it! (I’m going to try that enchilada soup, which looks great. Did you make the enchilada sauce? I’ve used the skinnytaste homemade before so that’s usually my default, but I’d be up for trying Gimme Some Oven’s recipe if you give it the thumbs up.)

I usually mention if it was someone else’s recipe in my Lately posts, but I will think about a post for some of my go-to sites to browse? I actually didn’t make my own (needed something super quick for the slow-cooker) but the next time I make enchiladas I’d love to give a homemade one a try.

I love Paradox Pastry! I’ve only ever had their chocolate and carrot cakes, but their lunches look just as delicious. I will definitely need to eat lunch there the next time I’m in town.
The best meal I had last week was Vegetable Lentil Soup with pumpkin cornbread. So excited for fall to be here.

I’m actually visiting Cville this fall with a couple of girlfriends from Northern VA/DC to visit some wineries/breweries, and we will definitely be checking out some restaurants! Not weird at all – its beautiful, especially as the leaves change!

When Mazen helps you in the kitchen do you use a chair, step stool or do you have a learning tower? Our almost 2 yo is starting to love helping in the kitchen and I usually just put a chair up to the counter, and would love a learning tower, but they are so expensive I’m wondering if it’s really worth it, or just continue using a chair with close supervision.

I just get a chair. We don’t have space for a fancy tower thing. He’s old enough now that he doesn’t teeter over, and I don’t leave his side.

Also I have learned from you. I take cheese and meat from Taco Tuesdays the night before and make quesadillas for lunch. Even when I have just extra flour tortillas and some cheese, I make them.

The best meal I had last week was at one of my favorite Italian restaurants. The dish is called Napolean Chicken and it is a thin grilled chicken breast topped with layers of sliced Portobello mushrooms, beefsteak tomatoes and fresh spinach then topped with crumbled goat cheese and a balsamic reduction. Delicious!

Okay… you officially win the Queen of Breakfast titles! I am so hungry now from looking at them. Those pancakes were to die for! The best meal I had last week was defiantly the pumpkin ice cream cone I had… does that count as a meal? Still, it was unreal!
