Just a regular ole summer lately post here at the KERF Casa. I’ve been in and out of vacation, so one day I’m eating ice cream and potato chips for lunch and the next day I’m craving salad like it’s my job! Here’s a mix of meals I’ve had before, after and in-between trips : )
Overnight oats in a sunbutter jar made with yogurt, oats, chia seeds and lots of fresh raspberries from our farmer’s market!
Fried egg, blueberries, a slice of Red White and Blue swirl with a side of hot tea.
Whipped banana oatmeal with sunbutter (a new jar!) and more of those delicious berries.
Yogurt + peach + Cheerios + blueberries + sunbutter
On the lunch front, I started the week with a hot dog! We had some Applegate Farms uncured dogs in our fridge that we grilled over the weekend and I had one leftover. Served with Turbana plantain chips, roasted carrot fries and a little bit of fresh juice for more vegetables (red pepper, carrot and cuc!)
Next up: leftover Cook Smarts couscous and salmon salad with lots of goat cheese on top. Such a great lunch for leftovers!
Lunch at a friend’s house – Sarah made us salads with almond chicken, feta, hearts of palm, and veggies all drizzled in some olive oil. Salads are so much better when someone else makes them!!
Picnic lunch at King Family Vineyards’ polo match! Veggie platter, Nut Thins, mango spice cheese, kale salad from whole foods and amazing deviled eggs that Sarah made!
We made 3 Cook Smarts meals recently – all 3 were delicious!! The first was on a Sunday – orangey salmon – and went into my weekend recap.
The second was the couscous salad that keeps showing up everywhere – (I know I’m so behind on this post because of the beach!) I topped it with goat cheese instead of feta and kale instead of spinach!
Next up we made the Cook Smarts summer risotto – yum!
Served with minty grilled zucchini and pine nuts. Cook Smarts really knows how to make risotto well in the oven. It’s so hands off, and I love that.
Everyone loved the risotto!
We also went out on an Evenings Supper Club date!
And lastly, made burgers with Karen. Served on a Spinach Feta roll with a tossed caprese salad on the side. And some vino!
I miss the beach soooo much but I’m very much ready to get cookin’ again!

I’m craving a beach holiday right now! It sounds like you had so much fun. And I totally agree with you – salads always taste so much better when someone makes them for you (hence the reason Whole Foods gets my money every single time I’m in a city that has one!)

I LOVE looking at other people’s salads and eating salad that other people make – but I never seem to make good ones myself. I’m not sure if I just need to find a better dressing or what.

We made them just like sweet potato fries (actually they were in the same batch!) We coated them in olive oil, salt and cinnamon and then roasted on a cooling rack over a sheet pan for about 45 minutes at 400*. Mazen liked them!

I guess I did when I switched to topics. I miss writing day by day too, but as a mom this topical approach is the best for my work life balance (because I can write in advance). I do hope to include more day in the life posts as we move forward (like I did at the beach instead of scheduling a bunch of topics).

Kath–potato chips?–! Oh, my. For so many years I wouldn’t allow myself to even touch one, and the same was true of other foods. You can guess which foods, I’m sure. I still am very careful to eat a plant based diet, with other foods too! Because of a medical condition, a prominent doctor in SF strongly advised vegan with fish as a diet. I did it for almost two years, and the most revealing question someone asked me was if I felt better. I did not feel better. And I missed my Italian culture in food that is vital to me–especially parmesano regiano which is the primary food source along with red wine that is responsible for the longevity of people on the wonderful island of Sardegnia, a group ,along with two others in the world, who live the longest. When my disease returned, the first food I ate was the parmesan. I was overwhelmed with guilt and joy–imagine. Very slowly I went back to eating beautiful foods which are healthy and not vegan. Truly, I feel so much better physically and emotionally. I write this because for four years I have been following your blog. Your diet is reasonable and healthy and unique. I have met so many amazing foods through your writing, and I want to thank for your dedication to your readership. Your blog is inspiring and motivating, and you have a way of being very even and fun and warm. Of course, I adore Mazen, having followed your pregnancy, and I think he has very artistic hands. I love the photo in this post where we see his little fingers (I think) reaching into the food. This weekend at Ikea, I had a hot dog and Swedish potato chips–naughty me and so out of character, and I still retain a little reprimanding voice! I think about you eating wonderful treats at the beach. It is so very important that food not only be nutritious but also periodically indulgent. All things in moderation seems to be your motto, and I commend you for the generosity of your blog writing but also for your guidance. You are very gifted and dear, and of course, I adore reading about Mazen. Thank you!

I’ve never made risotto in the oven–but yours looks good enough to make me want to try it! Although I must admit, there is something soothing about the stir stir stir of the risotto on the stovetop.
