Whenever I start to feel overwhelmed about all of the things I must do everyday to get healthy food on the table, I turn to Cook Smarts. Cook Smarts doesn’t pay me to say that – I truly love the service! When I’m running late for the grocery store on Sunday morning I have someone else do the thinking for me. Done and done. “What’s for dinner?” is a surprise each night.
We have had several great dinners lately – including this one made with cauliflower rice!
It was my first time trying it (this falls into the “I would have never tried this on my own” category. It was very much like real rice in size and shape, but I think I prefer the real deal for its texture. However, if you can’t eat rice for whatever reason, this was a great substitute!
Served with shrimp and peppers in a red curry broth. Yum!
The next night we made pork-stuffed cabbage rolls. I used beef instead of pork (because I already had some in the freezer) and they turned out delicious. Another lightened up meal for the win! (Unlightened by red wine two nights in a row <3 )
On the dessert front, Carpe Donut is trying out a new smaller version of their Frodo, a donut ice cream sandwich (yes!!) I love anything that comes petite sized, so this was perfect split and shared in two. They are hoping to sell these in grocery stores!

I’ve heard of cauliflower rice but never tried it… you’re right, that’s definitely something that I wouldn’t try on my own but good to know it’s similar to rice!

We’ve done cauliflower rice a few times and I can’t get my husband on board. It’s annoying because he is the one who wants to go carb free, not me! I’m thinking that doing it with a sauce would make all the difference. I will try it one more time with a flavorful sauce and see what he thinks!

How did you make the cauliflower rice? I’m envisioning either a ton of chopping or a blender. Maybe you could post a tutorial or a recipage? I’ve been wanting to try it out, I just don’t know where to begin.

I used a food processor and just pulsed until is resembled rice! Super easy…if you exclude cleaning the food processor : )

Oooh, I feel you on the meal planning. I spent about half an hour today planning meals for the next two weeks (we are trying to hit the stores less frequently so we spend less money – it’s working!), and then got all my groceries over the lunch hour. My husband and I also prep and cook our lunches for the two weeks all at once and then freeze them. I find it makes everything SO much easier. That cauliflower “rice” looks like it might be worth a try. We’ve tried black rice recently (delicious, with a nice bite) but I confess I bought a microwave packet of Uncle Ben’s brown rice today. Some days I just like to take the easy route!

Cook Smarts may not “pay” you but you had to have gotten months upon months free when they were doing their referral program. I for one signed up through you so a little disclosure would be nice.
