Good morning! Today is my last long day of class EVER! I know that because I only have one more semester to go until my Dietetic Internship and my schedule next semester is 4 afternoons/evenings in a row (which I am not happy about) but at least there are no more early mornings.
I stayed up until 9:30 last night working on my oatmeal experiment. I’m about 40% of the way there. Shouldn’t be too hard to finish, and at least it’s my own research so it’s not hard to understand 🙂
I was up with a bound this AM at 5:10 because I knew I had to prepare for my peanut butter/palm oil presentation in Food Science today. We’re doing a trans-fat vs. palm oil PB tasting to see if the class can detect a difference.
I also planned a quick breakfast to give me time to assemble the PB cracker sandwiches:
I used up 3 things: the rest of my TJ’s greek, blackberries and Pumpkin Raisin Crunch.
This was about 3/4 a cup of yogurt (I promise it’s under there), just over a cup of PRC (used it up), a sprinkle of Aztec Crunchy Corn and Amaranth cereal, a handful of blackberries, and a tbsp ground flax.
I left off the PB because I know I’ll be having some at 11 for the tasting!

What’s the motivation behind putting the ground flax into stuff? When I stir it into the oats, it makes it look cool with all those little specks but, as far as taste and nutrition go, what does it do?

Yaay for your last day EVER of long classes! Trust me, I get the excitement! I am in grad school with you and it’s exciting that you’re almost finishing up because that means I’m getting closer! 🙂 This summer, I’ll be doing what you did last summer with evening classes and I’m dreading it already. Oh well, it will be done soon enough!
I was just thinking about this and wanted to throw it out there: I really appreciate that you eat things that look and taste good and that you stick to “real food.”
There are so many blogs that are like “this looks disgusting and tastes pretty gross, but it’s good for me so I’m making it every day!” or “this is lower-fat than the ‘real’ product, so of course I’ll eat it even though it’s fake,” or “this combination of things is absolutely disgusting, but it’s low calorie and high protein.” You don’t do this nonsense, and as someone who also tries to enjoy what she eats and eat the REAL stuff, I appreciate it! I have given up reading a lot of blogs because I just think it’s stupid to eat in the way I sort of mockingly described above. You don’t need all these powders or fake products…just eat healthy but good tasting food, enjoy unhealthier things in moderation, and move your body. That’s all there is to it, and I appreciate that you embody this every day.

Hey Kath,
I am wondering how you feel about the ethical and environmental issues of the palm oil industry? I have read so many horrible things about the industry, how it is completely unsustainable, the amount of destruction that follows it, not to mention deforestation of the rainforest and the killing of thousands of orangutans and other animals each year.
I’d love to hear what you think about this, as well as if you will continue to support products (such as Barney Butter) that use palm oil.

The flax must be ground for the body to be able to absorb the omega-3s. If they aren’t ground, they’re just fiber 🙂

6:20 is still fun because it’s like 26!!
Flax is super healthy for you because it is one of the few sources of plant omega-3s in the diet (also walnuts!). It also has fiber. I like it for the nutty taste, but I know it is very nutritious too. When I did a 3-day diary of my nutrients way back in my first nutr. class on the days when I had flax I was meeting my omega-3 requirement at about 80% and when I didn’t have flax it was closer to 10%! So it’s worth it to add a tbsp or 2 a day.

Yes, I did that all last summer. Stove-top reheated is still much better than microwaved oats to start. You just need to add some milk or water to help loosen it up again.

I found the environmental and local devastation heartbreaking when I researched it for my project. Since palm oil consumption is only expected to increase, I hope they work harder to find a sustainable way to grow it, which I saw is in the works. I do not consume many processed foods, so I feel that with Barney Butter and other palm oil nut butters, my footprint is pretty small. It is in a lot of other things – shampoos, etc. so I will definitely be more aware of reading those labels too.
