So sad to be here for the last day!!! I think I already mentioned a group of us are going out to sushi for lunch – yum! Although I’m so excited to be going back to school, I know the grass in corporate America will be VERY green when I’m gone. I’ll miss the office, the lightrail, the desk, wearing cute dressy clothes, the structure. (Everything I’m sick of now!) So I’ll try to soak it all up for one last horah!!

Rolled oats, 1 whole banana (the banana did the creamy thing – SO good! You add it when everything is still cold and stir a lot to break the banana down – it’s like big fluffy banana-flavored oatmeal instead of “oatmeal topped with banana” Notice how the oatmeal is kind of yellow-tinted), walnuts, cinnamon, Mexican vanilla, PB and flax.

I’ve only been reading your blog for a couple of weeks now, but I really enjoy it so far! I also eat oatmeal and bananas religiously for breakfast, but sometimes I get a little bored. Today i tried something new that I thought you might appreciate: I grated an apple in with my oats and mixed it all together with a little cinnamon. The apple shreds added a lot of volume and it was pretty yummy too 🙂

This is off topic — from reading some of your earlier posts – you mentioned eating roasted root vegetables. I would like to branch out from sweet potatoes, so do you have other suggestions for which root veggies? Also – I couldn’t seem to find how you cooked them. I have been following your blog for a LONG time, but finally decided to leave a comment!!
I am 15 years old, and live about one and a half hours from Charlotte! I am a very healthy eater, and was raised that way. A few years ago, I struggled greatly with anorexia. And while, I never think that eating disorders leave you completely, i feel that I have become much more healthy and a lot less restricting in what I let myself eat. I was hospitalized for my eating disorder, and a week after I got out of treatment, my father died. That tragedy left me struggling even more. Then, while on a trip to NYC, I weighed myself for the first time since my father died, and I realized that I was back to my pre-hospitalization weight. That scared me so bad, and I began to add to my diet. I am now at a healthier weight, and through my life events, have picked up running. Running was something that made me feel mentally, physically, and emotionally strong. And I actually have become pretty decent at running. I have received Top 3 Placings in my age group at many races I have competed in, but I don’t run for that reason(sure, it’s a nice incentive) I run because of how it makes me feel.
I now aspire to be a marathon running coach/nutritionist who specializes in eating disorders. I feel that my story, and my life can really help other people who are struggling to find health in their lives.
Your blog has really been a joy for me to read and given me great recipe and meal ideas. I am cooking a spaghetti squash as I type this. I also enjoy reading about your daily fitness! I too strive to get in some fitness any time that I can! It makes me feel SO much better and makes me smile!! Exercise is my medicine!!
I am so excited for you and your decision to become a nutritionist! You will be an awesome nutritionist, no doubt!
I was in Charlotte recently and have friends that live near the EarthFare and some friends who live on Queens Road West. I went to a boarding school in Raleigh, NC, but am now at home because the environment wasn’t healthy for me, mostly mentally and it was very stressful. But, I frequent South Park mall in Charlotte and wonder if that is the Williams-Sonoma and Pottery Barn that you go to?
I’m really sorry for the long post, but i want everyone out there to know, that if you are thinking of starting to eat better and begin an exercise program(maybe a new year’s resolution) there is no bad time to start!! Anytime is a great time to try to become healthier every day. And although difficult to motivate yourself at first, find supportive people!! This blog, for instance has many healthy, supportive people that read it everyday and are great motivators!! Kath herself is awesome!! So, just get there, start moving and adding one healthy thing to your live everyday and you will be on your way to a happier, healthier, more fulfilling life!!

I made that same shrimp, veggie, spaghetti squash recipe last night but I used different veggies.
I sprayed a baking sheet with nonstick cooking spray and tossed on some chopped carrots, celery and onion. After salting my eggplant, I rinsed it off and chopped it up and added it to the baking sheet. Then I drizzled it with some EVOO and sprinkled on Mrs. Dash. After a good mix, I followed Kath’s advice and put it in the oven at 400* for 26 minutes. It was great and the house smelled amazing!!

I appreciate your post – your mature outlook on your health/body (both mental and physical) is awesome, considering the obstacle you’re overcoming! You have an amazing attitude and I think any help you will give others that are struggling with an eating disorder will be that much more rewarding. Living with anorexia is a very lonely place, but if there is a person out there that “gets it” then that is the person who can help. Keep on doing what you’re doing – it sounds like you’re on your way. 🙂

ROASTED ROOT VEGGIES:
There’s not really a recipe we use for this, but here’s a list of veggies we frequently use:
-8oz cremini mushrooms
-1 medium butternut squash, cut into 1in cubes
-1 acorn squash, same cut
-3 medium carrots, halved lengthwise and then cut into 1in pieces
-3 parsnips, same cut
-2 turnips, cut into 1in cubes
-2 sweet potatos, cut in 1in cubes
The ingredients vary, but we almost always have carrots, parsnips, and mushrooms. There are two main ways we prepare it, once we’ve cut everything.
1) Toss everything with 1T olive oil, and a hearty sprinkle of kosher salt and black pepper. Roast in 400* oven for 40 mins or so
2) Make an herby vinaigrette (2t olive oil, 3T vinegar, salt, pepper, garlic, dijon, huge sprinkling of chopped herbs). Marinate veggies in vinaigrette for approx 1 hour (up to maybe 3). Grill veggies for 10 minutes, moving everything around in the middle. Put in roasting pan and finish in 400* oven (maybe 20 minutes?)
Don’t forget to eat the delicious squash skin!

Kate, I definitely enjoyed reading your comment from earlier, it was truly inspiring. I am also 15 years old and haven’t been diagnosed with anorexia, but I have had a little difficulty with eating in the past. However, I am currently feeling healthy and continue to eat enough to provide energy for my body. I am a dancer and love it, and I absolutely don’t want to let this keep me from being active and healthy. I was just wondering any tips that you might have as far as overcoming this issue, and would also love ideas for healthy eating. Thanks!

Hana, the first step is definitely realizing that something is wrong!! My weight plummeted and I was drained of my energy! Finally, I had enough and asked my mom to find a therapist for me. I didn’t think that the therapist would ever tell me that I had a full blown eating disorder, but she was so concerned, that she recommended I go to an inpatient treatment facility. I did that, and stayed for three weeks. But it was not a fun experience, and the place that I went to was not very helpful at all. I have mostly gotten better because of help from my family and my own willpower and running too; I definitely need energy if I want to run well:)!! I definitely recommend going to see a dietitian or therapist that could offer you professional help if you feel that your problem is kind of serious. Or if like me, your sick and tired of being sick and tired. That’s how I felt, and just wanted someone to tell me what to eat and when to eat it. Some people might not like that, but i wanted a structured meal plan that I could follow.
I think that we both feel the same way about the sports that we participate in. Being a dancer, you definitely need energy and I know that, just like the running world, it is to your advantage if you are thinner. That can be very stressful and difficult.
This blog also helps me tremendously. Kath definitely shows correct portion sizes and balanced eating. The way that I want people to remember me is, not by being the skinny, grouchy, emotional boring girl, but by the healthy, fit, energized fire ball!!
I am petite anyways, (barely 5’2) so, the skinnier I am, the younger I look. And, when I’m fifteen, I don’t want to look like I’m 8 or 9. And, at my thinnest, I wore clothes that were made for 7-8 year olds. That’s just not normal, and when I finally realized that, things got a lot easier.
Adding healthy fats, such as actually eating the avocado in sushi(which I used to not do), and eating All natural peanut butter will make you feel more energized and make your skin and hair healthier!!
