Good morning! I’m popping in with a random lifestyle post for you packed with a few meals, my current love for arugula, and lots of shoe talk!
This was strawberry banana cottage cheese almond butter oatmeal. How’s that for a mouthful!
It’s been a while since I’ve scrambled some eggs. They are marbled yellow and white because I just scrambled them in the pan instead of whisking in a bowl first. #lazy ! We also bought a loaf of Dave’s Killer Bread this week for something different and it’s pretty killer! I love the sweetness and the texture of all the whole grains.

Give me all the arugula! It’s my current favorite green because it’s so….dry? Dontcha feel like mixed greens and kale have more water weight per leaf? Arugula is so light and not moist at all, so something about that combo is extra appealing to me. I’ve been making a homemade dressing (usually Wegmans Basting oil, white wine vinegar, Dijon mustard, salt and pepper) in a big mixing bowl and tossing the salad together there before pouring into a smaller lunch bowl. While I do love to eat salads out of huge bowls, my mixing bowl is stainless steel and I do not like the sound of a fork on metal while I’m eating. Strange, I know!
This salad had homemade dressing, arugula, leftover steak and polenta (see below!), and feta cheese.
When I was younger, I used to love the salad combo of cottage cheese, broccoli, blue cheese dressing shaken together with sunflower seeds and greens. It was my salad of choice in college! I put some cottage cheese on my salad this week for a dose of protein, and it had a similar effect. Pretty good, especially with raspberries, avocado, and artichoke.
Let’s pause the food to talk about shoes! I bought these two styles of Toms to try on. Blue Chambray Del Reys and and the Grey Chambray Cabrillos. I’m on the hunt for comfortable shoes to walk miles in. Thanks to those of you who voted in my poll on Instagram!
I loved them both, but ultimately I decided to send them back and get a different style without laces that don’t require socks. I got these to try out instead. (And these for Mazen!)
The reason I sent the laced Toms back was because I bought these Saucony’s and like them a lot (for half the price) and think for laces shoes these will do the trick. I don’t need more than one of the same style of shoe. But I DO need some slip-ons that are comfortable and I can walk miles in. Some of my flats give me blisters when I walk too far in them in the summer, and Toms are the only shoes I’ve found so far that don’t other than flip flops and wearing socks/tennis shoes.

Onward to dinner! We made a classic chili with some Whole Foods cornbread on the side. Sharp cheddar cheese tastes SO GOOD to me right now.
We made this Blue Apron dish that came with two others that I’m doing a blog post about one other night. It was the Seared Steaks with Maple Brussels and Rosemary Polenta. SO good! The rub on the steaks, the maple on the Brussels. and the rosemary in the polenta all made this taste extra delicious.

I actually scramble my eggs in the pan instead of whisking it in a separate bowl first really often too. Less dishes to do and it tastes almost the same in the end anyway! 😛

This might be the most boring comment ever, but the scrambled egg thing made me laugh. I never mix my eggs in a bowl because I think, why bother washing an extra dish when they mix just fine in the pan? (except omelets!)
I love love love cooking but I am lazy/always looking for shortcuts so I can focus on doing more creative things. I never do things like take the skins off tomatoes when I make tomato sauce (what’s wrong with chunky sauce?), I never peel any vegetables. Some people peel cucumbers and stuff and I totally don’t get that. I would never dare peel a potato for any reason, not mashed nor potato salad. Etc, you get the point! Lazy prepping is the way to go! lol.

Arugula is my favorite. I understood what you were trying to say about the water. I don’t like “spring mixes” for that reason. Too wilty, wet, and light. I love kale though.

For walking flats, I prefer Sanuks to Toms. More padding, I think.

Check out Allbirds. You don’t wear socks with them and they are made out of wool so you cash throw them in the wash when they get smelly/dirty. We’re obsessed in our household – my son even has a pair. It’s a popular brand in CA these days.

I checked them out and they’ve been in my Instagram ads (hmmm they know me well!) but they don’t have the colors I’d like right now. I definitely will be keeping my eye out!

Keep a look out for when the limited edition ones are available. The colors are great, but for a classic look you can’t go wrong with the all cream one. I wear them with dresses!

Saucony Jazz is my ultimate mom shoe! Recently got my 21mo a pair of teeny Velcro Sauconys too. So so cute. This is kinda fancy sounding, but I scored some adorable slip on chambray Kate spade sneakers last year at TJ Maxx- I love their shoes! Plus wandering around the store while I have a sitter is part of my self care routine. Haha

Hi there, I love the Tom’s slides, good choice! I am hoping for more information on the ingredients you used for the potato salad you had in your insta stories yesterday, I believe. I love artichokes as well as green beans so the salad looked delicious. I am curious about the dressing as well as if you used frozen artichokes or from a jar? If you can share the recipe I’d be very appreciative. Thank you!

I will email it to you! The dressing was a combination of mayo and sour cream, although I used greek yogurt, and the artichokes were canned!

Scrambling the eggs in the pan is my favorite #lazygirl way to eat them – I feel like I”m cheating the system but less clean up too and still tastes fine. And DKB is my favorite!

My fave arugula salad is: arugula, kalamatas, slivered almonds, red bell pepper, sliced salami, olive oil and juice from the olive jar. Try it!

Dave’s Killer Bread is seriously killer! We recently tried it in our household and became “killer” converts. I love the bread toasted with a little Plugra butter.

I have some Toms leather slip-ons that I’m crazy about. I probably have a hundred pairs of shoes (literally), and I find myself wearing these pretty much every day. They are sooo comfortable. I love the picture of Mazen trying to tie Sylvia’s shoes. That he doesn’t know how yet, makes it even more special. Love me some Brussels sprouts roasted with olive oil, coarse sea sale and fresh ground pepper. The maple syrup sounds like a winner, too.

I love arugula; my aunt describes the flavor as “tires and nuts”. and it does kind of have a rubber scent/flavor now that I’ve heard her say that!
I love my Toms but they did not fit after about 7.5 months of pregnancy! They went back to fitting a couple weeks after delivery though 🙂 Have you seen the glow in the dark fireworks pattern ones???!

You just need a pair of Birkenstocks. The classic two strap. They will last at least a decade, and if for example the cork needs to be replaced after six years they will do that for a small fee. The suede straps are my favorite.
I love arugala but with other greens as well, the arugala i buy at the farmers market is crazy spicy! I keep making a tahini miso dressing in a big batch at the beginning of the week so I don’t have to mix it everyday. ( 1/3c tahini, 1TB mild miso, 1 small monced garlic clove, juice of one lemon, splash of water as whisking to get as thin as you like)
