I had grand plans for a beautiful Saturday morning run and a 9AM bakery arrival, freshly showered and refreshed.
But Matt needed me for kneading! We were down a sweets baker this morning and he had to get up at 3 to do that, plus bake, plus knead. So of course I agreed to fill in the spot.
I biked in during the beautiful sunrise
I got my workout doing 2 hours of shoulder exercises kneading that dough instead of running! Any workout that makes me break a sweat counts for the day!
Breakfast was fit in when I had time – which was never!! I’m just now eating it up.
A Siggi’s from home, plus banana, some of our new granola bars and apple crunch apples!
Granola bars!! They’re made from the Cville Cluster “dough” and they are awesome!
My favorite part of kneading is making fun shapes! I decided with the leftover Apple Crunch dough to make a pizza – aka flatbread
My GOSH is this good!!!!!!!!!
I’d like to put it on the menu. Matt is less creative. We’ll have to fight it out, bite by bite!
Snake came in for breakfast!!
He loved the Apple Crunch and is coming back after a long bike ride for Cheddar Garlic!
Come one, come all – we have lots of delicious bread to eat!
Laura @ Sprint 2 the Table says
You should defintely put that on the menu! My mom used to make something similar when we were kids. Baked cinnamon-y apples atop bread are still a fav treat.
Shelley says
Wow all that bread looks so yummy!! I have to agree with you Kath that apple curnch focaccia thing looks soooo good!! Ppl would love it, it definently deserves a spot on the menu!!
lynn @ the actor's diet says
you should make a “secret menu” a la “in n out” – a good way for your blog readers to connect!
Mastering Public Health (@MasPublicHealth) says
Oh, yeah! That’s like what they do on “DC Cupcakes” (the TLC show about Georgetown Cupcake) for their Twitter followers, giving out code words for the “secret” not-on-the-menu flavor du jour. Fun idea, but probably too much threat of waste?
Katie @ Nourishing Flourishing says
That looks awesome — like a soft scone! Maybe Matt needs to consult his “creative team” (you) more often 😉
Katherina @ Zephyr Runs says
How about a secret menu that includes things like your apple crunch flatbread 😛
Baking 'n' Books says
What kind of ingredients are in the C-Ville cluster dough?
I hate when my plans get changed – so your positivity is enlightening! Look at the bright side – a beautiful sunrise, and a funky flatbread.
Ashley @ the fit academic says
What a great idea! I definitely think you should put it on the menu! Yummmmmo!
Mom says
Hi Snake! Let us know what you think of the bakery!
Buzz
Snake says
Hey Buzz!
It’s fantastic. And it was always quite busy. I’ll be back in C-ville for a wedding in October and I can’t wait to get some more of that delicious bread.
Snake
Mom says
Excellent!

Ashley @ Coffee Cake and Cardio says
What a great workout!! I can only imagine how your arms must feel after all the kneading… though I’m sure bodypump has prepped you for days like this.
klm says
What is the “volcano” bread in the last picture?
KathEats says
Cheddar Garlic!!!
Ann @ Day by Day says
The apple pizza bread sounds so great! I’d definitely order that!
Liv @ The Salty n' Sweet says
Waking up at 3AM is crazy! But to be surrounded by the delicious smells of fresh baked bread, I think I’d be more than willing to sacrifice sleeping in 🙂
Alex Groff says
My work aholic side is screaming I WANT TO KNED! Day one of Push up training is being succesful.
Emily @ One Sweet Vegan says
Everything you guys bake looks so good, including your new creation.
Angela (Oh She Glows) says
That last bread looks very interesting! It looks like it has some kind of streusel!
Kneading dough is such a great arm workout. Last Fall I made 10 pizza doughs in one night and my arms were actually sore the next day.
The Teenage Taste says
Oooh that apple “pizza” looks delicious! It almost reminds me of a scone. Yum! 😀
Sarah says
I agree that any activity that has you/me breaking a sweat counts as a workout! I always “count” housecleaning as a workout if I’ve broken a sweat:-).
Simply Life says
oooh, I love your creation – I would definitely eat that up!
Allie (Live Laugh Eat) says
I am always a hot mess after kneading…especially in front of the gigantic oven. Definitely a shoulder workout! The Apple Crunches turned out gorgeous this time!
Maria @ Beautiful Busy Bee says
I’m a fan of anything apple cinnamon flavor. Those look like scones ! 🙂
Katherine says
I love how you eat out of the jars, it makes my life 🙂
Molly @ RDexposed says
3am? Wife of the year.
KathEats says
Oh no – he’s husband of the year for getting there at 3. Kneading started at 7!
Monika says
I’m headed to my local Great Harvest for some bread this weekend after being tempted by your blog all week…. what are a couple “must try first” loaves??
KathEats says
Dakota, High Five, Cinnamon chip!
Taste them all on the bread board there.
Khushboo says
Body pump yesterday, kneading today…I hope you will showing off those arms this summer 🙂
Lauren @ What Lauren Likes says
Woah! that would be quite a workout. I need to try some bread making! I could use some more upper body strength haha 🙂
Gina @ Running to the Kitchen says
Oh that “pizaa” looks good! You seem to roll with the changes in your schedule so well, I’d hate not being able to keep to what I had planned for the day but I guess that’s life when you own your own business!
skinnyrunner says
any sort of bread with apple and cinnamon is my fave.
i love reading all about the bakery and your life and fitting it all together btw. its really interesting!
Newman says
I see Mike still rocks the satchel, nice. Wish I could be there this weekend for evertyhing and see the bakery too, but alas, work prevents me from taking more time off. Wish everyone my best.
KathEats says
We miss you Newman!!
Fortunately you can see the whole recap of the wedding here tonight 🙂
Also, love that you write Newman and not Nick in the name blank!
Snake says
Dude, I rocked it the whole weekend in spite of (because of?) Waikart’s incessant groaning about it.
Jennifer says
Your bakery looks great! I don’t think I’ve seen a picture from the outside. I know just kneading dough for a pizza takes a lot of work so I can imagine your arms are really getting a workout. But, hey, that’s a good thing. 🙂 I would totally put that apple crunch dough bread on your menu. It bet it would do well.
Natalia - a side of simple says
Mmm I’m with you on being creative… Don’t knock it til you try it! And by the way, I would be MORE than willing to try GH granola 😉 haha Happy Saturday!
kaila @ healthy helper! says
PUT THAT ON THE MENU! It looks fabulous! I’m on teams Kath for this one!!!
Christine (The Raw Project) says
Sounds like a great workout, agreed on sweating! Gorgeous bread pics and just wow on starting at 3!
Carey @ Positively Blonde says
My vote is for it to go on the menu! Looks yummy!!
Cellabella says
I also vote for it to go on the menu! I used to live in Charlottesville and wish that I could be back there to visit GH and buy good bread. When I was in Cville, my sister and I would go to Albermarle Bakery on weekend mornings and get their Fruit Focaccia, a sweet focaccia topped with mascarpone and fresh berries – your apple pizza reminds me of that! I bet yours is just as delicious if not better !!! 🙂
Angel7 says
Love the pizza! Creativity is fun!

Carol says
I agree! Put it on the menu…come on Matt:)
Abby says
You and Matt are rockstars! 🙂 So cool to watch you fit everything in to a busy lifestyle!
trish says
why not make it a weekly thing- like every week you have a different fruit ‘pizza’? i would definitely stop in each week to see what you have created.
Jill says
I was up at 3am too (crying baby) sadly there was no fresh bread involved 😛
Ellie@fitforthesoul says
oOooOo are those mocha buns?! if so, those are sooo good!!! wow look at you, you hardworking girl~I hear bakeries are very tough for that reason–a lot of sacrifice and extra hours to make bread in the middle of the night. My mom always tells me “you better not open a bakery or something like that in the future!” 😛 Take care Kath
Amykinz says
OMGoodness, that’s Cinnamon PB sounds soooo amazing! And the apple bread you created looks really yummy, too!
Annette @ EnjoyYourHealthyLife says
mmm that apple bread looks might delish
Amy says
Another perk of the bakery – you probably have a plethora of jars to make OIAJ in these days 🙂
I think those shapes are totally fun…I would buy them. Sadly, there are no Great Harvests in Canada, much less YOUR Great Harvest, haha.
alison says
We love the cheddar garlic bread. Every few weeks, I meet some gym friends for coffee at our local Great Harvest (Lorton, VA) and my daughter always requests I bring home a loaf of the cheddar garlic. How could a refuse….it’s delicous. But your apple creation looks tasty, too.
Chelsea @ One Healthy Munchkin says
It’s awesome how you have total freedom to make and sell whatever you want. I can’t wait to see all the creations you come up with in the future!
Also, I vote to sell that apple flat bread. It looks delicious. 😀
Kelly Ann says
Apple Crunch Flatbread…sounds like a keeper…perfect with a salad, pork dinner, breakfast…the possibilities are endless…
J3nn (Jenn's Menu and Lifestyle Blog) says
I agree: Put the apple bread on the menu! It looks divine. 🙂
Noya - gluttonandstudent says
yummmm the bread looks fantastic!
I’ve been getting workouts in at work too, lifting tons of boxes and stocking shelves. Now I don’t have to pay for gym membership!
Hannah says
Aaaaah, that apple flatbread looks amazing!!!

KathEats says

Who are your davidson colleagues! I bet I do know them!
