Work was a ghost town today!! The hospital was so different on a weekend than the hustle and bustle of a weekday. When I arrived I felt like I was in a dream and had gotten up to go to work by mistake!
I actually enjoyed the pace of weekend work though. I was in charge of most of the diet educations – Heart Healthy diets, Diabetes, Low Fat/Low Cholesterol, Gestational Diabetes, etc. So basically I got to talk to patients about healthy eating all morning! I really enjoyed it, as I’m quite a talker and am very passionate about healthy eating in general, so I like to talk about it. It seemed like the patients enjoyed the educations too. I even got to speak in [very broken] Spanish at one point when I couldn’t track down a translator. It’s been YEARS since I’ve spoken sentences in Spanish and I didn’t do very well, but I think I successfully communicated my point.
I ran ALL over that hospital from about 9 to 1PM. I was starving by the time I decided I was ready for lunch!
And here’s what I had! A snapshot for you!
-A big popover style wheat roll (Which I always drool over when the other RDs eat their lunch)
-A side of hummus from the sandwich area.
-A huge salad from the salad bar with:
- Spinach
- Broc
- Cuc
- Asparagus
- Mushrooms
- Tomatoes
- Peppers
- Garbanzos
- Raisins
- Dried date
- Tuna
- Cottage cheese
- Olive oil and vinegar
-And a piece of Caitlin’s chocolate!
It was a huge and very filling lunch! But it cost me $7.50. Makes me appreciate bringing my lunch everyday for a pretty high price.
I also brought in this Coffee Cake Scuffin (!) for the other two RDs to taste and had a bite myself
Back to work for a few hours and I broke into my snack (mostly out of boredom on my ride home) around 4:30. Kashi Cinnamon Harvest, a few almonds, mixed nuts and chocolate. It was trail mix from EarthFare.
Once home I discovered that our house has been prepped for our OPEN HOUSE tomorrow! Matt’s such a great helper. I imagine this must be what it would feel like to have a maid!? The yard was mowed. The whole house cleaned (including bathrooms and floors and laundry!) Such a relief. Thanks husband!
I drooled over this Crate + Barrel catalog for a bit before I headed out for my workout. I MUST buy these items!!
My workout was supposed to be a swim, but I wasn’t in the mood to get all wet so I changed things up and did the Stairmaster instead. It was a hard workout!
Bike –> 26 minutes of Stairs –> 10 minutes of heavy (17.5 lb) weights –> Bike
Came home, showered, turned on Zac Brown Band and got to work on dinner, which I couldn’t have done without some help!
Zac is awesome. Highly recommended for cooking music!
Tusker the Kenyan Elephant helped me open a beer!! After this long week I decided I beer was just what the doctor ordered. I’ve had this Abita Strawberry in my fridge for AGES!!!! This is the last of “my” beers. As you might imagine, Matt’s beer turnover is much, much, much higher than the ones I’ve claimed!
It was soooooooooooooooo good! Matt was still gone, but when he returned we discussed my favorite beers. I’m having a hard time pinpointing them! They are likely in a very casual order (some higher end, some not – but these are what I’d be likely to choose when I’m out)
- Cottonwood Pumpkin
- Moose Drool (and Zeb of Great Harvest Montana is bringing us some tomorrow!!)
- Brooklyn Brown
- Red Oak
- New Castle
- Blue Moon
- Some of the Oktoberfests that I can’t remember
- Abita
- Tusker!
- Harpoon Winter Warmer
- Sam Summer
- Shocktop
- Killians
- Dos Equis Amber
One of my helpers tried to have a sip – I was luckily able to get there in time! He’s only 10!
I had a lot of fun assembling this dinner!!! It was practically no-cook – just mix, heat and eat!
Frozen corn + okra
Canned pintos (LOVE pintos!)
Mix!
+ cumin + chili powder + salt + pepper
Franks
Oregano + lime
Nutritional Yeast “cheesyness”
Food Should Definitely Taste Good!! These are the brand-spankin-new Food Should Taste Good Cheddar chips. I’d liken them to Doritos, but less orange and more cheddar. I don’t really care for Doritos, but I sure liked these! They took a few bites to warm up to but then they went perfectly with the dinner!
Topped with greek yogurt and Don Sabrosa’s Peach, Blueberry, Honey salsa (which is now gone!)
The last of the FSTG Cinnamon chips on the side
This dinner was above excellent! And very filling!
After dinner Matt insisted we try a new beer he found – WTF!?
Heh heh – get it!?
I agreed to try it……since I obviously needed some Job Recovery!
But it was too hoppy-bitter for me.
I still ended up drinking my portion though and felt a bit loopy while we caught up on Glee!!

LOVE The Zac Brown Band! Too bad you weren’t having fried chicken to go along with it 😉
Emily says
I LOVVE Abita Strawberry. It’s made here in Louisiana so other than the great taste I’m supporting local brewry! lol I have 2 6-packs and I’m waiting for a special occasion to drink them!! Have you tried their fall and winter beer?
Kath says
I have not yet! And I like how 2 6-packs looks like 26!

Jessica @ How Sweet It Is says
I love Zac Brown Band, too!
Heather @ Health, Happiness, and Hope says
It’s never a celebrated occasion to go to work on a Saturday, but it probably is a pretty neat experience for you to have. Not all dieticians get their weekends off, so it’s just another aspect of the job. Glad you were able to enjoy it! 🙂
Stacey@http://stacey-healthylife.blogspot.com/ says
What a great easy dinner. Perfect on a spring day.
JessicaE says
Kath I think its adorable what a lightweight you are 😀
You and Matt make a great team! I love how playful your relationship seems, with the bears n all 🙂
Macrae says
Zac Brown sang before the Preakness Race, of course he sounded awesome!
Have you tried New Belgium’s Skinny Dip beer? It’s by far the best light beer out there, but it’s only out in summer. Also, you and Matt should try Terrapin Beer if you can find it. It’s an Athens Brewery but really tasty and I think y’all would enjoy it 🙂
Jil @ Peace, Love & Munchies says
Zac Brown Band is amazing – that guy can play the fiddle like no other!! Their rendition of ‘Devil Went Down to Georgia’ is a fave of mine!
ashley says
hahAhA! i wondered how you were going to take a picture of your lunch. that’s great!
Cynthia (It All Changes) says
I tasted those cheddar chips at Whole Foods yesterday and they weren’t that good to me. But your dinner looks good and I could use the buffalo version to dip in 🙂
Erin (Travel, Eat, Repeat) says
So many pretty plates! Loving bright colors right now for spring and summer.
Carolyn @ lovinlosing says
Boooo to working on a Saturday, but YAY! to finding the house prepped!
Melissa @ For the Love of Health says
That’s so awesome you guys are doing the health summit again! And Chicago is so close to where I am! I wish I could go but unfortunately I will traveling.
Great looking dinner!
caronae says
I love Tusker and the bears! Such helpful dinner makers. Sometimes I stick my baby stuffed duck Leland into my pictures. Today he tried to dive into a coke! Naughty Leland!
I love how you made the picture of your lunch. So clever.
caronae says
Oh and I had biscoff on my flight today in your honor! Never had it OR seen it before. It was tasty 🙂
Kath says
Yummy!! And funny Leland!
Krystina says
You’re adorable.
Kellie says
I can read the crate and barrel catalog for hours. Such amazing colors and cute patterns. I always plan out that when I am wealthy I will get new linens, plates and furniture for each season. Dreaming is fun!
Emma says
popovers (aka yorkshire pudding) which I think is what your pic is of! are soooo easy to make at home you must try them!
1 cup flour
1 cup egg (3-4 eggs)
1 cup milk
optional: rosemary or other savory herbs
put a tsp of oil in each muffin tin and heat at 425 about 10 min
fill muffin tin halfway with batter and bake around 20 min
voila!
Laura says
Just in case you are remotely interested, or are planning to visit the North East of England and don’t want to be accosted by angry locals (!!!) popovers are similar to Yorkshire Puddings, but the later are somewhat stodgier (more oil/dripping (!!) in the batter, no herbs, garlic etc), often cooked as a large rectangular block or as Toad in the Hole and I think the American adaption/version is lighter and fluffier. 😉
Kath says
We made those in our food science class! The roll I had was just the shape of a popover but was regular dough.
Jenn (Jenn's Menu and Lifestyle Blog) says
LOL, that lunch drawing is hilarious!! 😆
Your din looks delish! I love pinto beans, too. They’re really creamy, aren’t they? YUM
Jenn
Hannah says
What a busy day – but at least there were good eats, great drinks, and a wonderful husband at the end of it. Have a safe drive to Charlottesville!
Freya @ Brit Chick Runs says
Wow, busy day!! When is your next official hour off!?
I’m so glad you don’t like doritos – for years and years,I thought I was the only one – I felt so alone!
Have a good day 🙂
Laura says
Do I spy an ickle hedgehog helping you out at dinnertime? I too, was pleasantly surprised by the change of pace in hospitals at the weekend- so much less pressured! Christmas, Easter and New Year are also good times to work- so fun, we used to have parties for the patients! Have you + Matt been to Oktoberfest or Bruges (for the beer!) before? Highly recommended. Randomly, I read that some homebrewers add Beano (a-galactosidase) to their beers?! Not sure about that one! Hope you had a good power sleep!
Kath says
Never been!
Sarah @ The Smart Kitchen says
Oh I LOVE the Cottonwood Pumpkin….for someone who is not really a beer drinker, that is one I will actually crave 🙂
Simply Life says
I’ve never heard of that band before- great to know!
Becca says
A beer at the end of the day is sometimes needed! Have you tried Magic Hat’s Wacko beer? It’s their summer beer and it has a pink tint because it has beets in it! Its so good and refreshing! I was so excited to see it at my grocery store again!
Britton says
Where can I find nutritional yeast? I’ve looked for it in my local grocery store but I think I’m looking in the wrong place.
Also, your favorite beer list is awesome!
Kelly says
OMG, a Wilco beer???! That is awesome! Although, I know I wouldn’t like it (not a hoppy/bitter beer person).
Rachel says
Man you have good taste in beer! Brooklyn Brown and New Castle are two of my “go to” beers. Love them!
Have you tried Bell’s Oberon? That’s one of my summer favorites!
Sarah (Enjoying One Meal at a Time) says
Love your recreation of your lunch, perfect when there’s no camera handy 😉 And those plate from C&B are soo cute! Perfect and fun for summertime!
lynn (The Actors Diet) says
i’d love a matt-y maid!
mary ann says

Alycia @ Fit n Fresh says
your food always looks so good! love your blog (:
Casey says
Kath, is that Abita from your trip down to LA last year? If you guys ever come back to NO we will have to take you to this amazing brewery on the North Shore! It’s great!
Michelle @ Give Me the Almond Butter says
I love your nachos! They look absolutely fabulous and I love that you know whats exactly in it, unless most nachos you’d get from the store or ball park.
Anne P says
OMG! I tried that beer when I was in Austin! I liked it, but I couldn’t make it through a whole one since it was pretty heavy/intense tasting!
Dana says
Where the heck did you find that adorable bottle opener! I have to have it!
Sarah W. says
if you want pops of color I recommend Fiestaware. Its inexpensive, durable dinnerware – macys.com and megachina.com. Plus you can display it in your kitchen to add pops of color instantly! I personally don’t care for the lack of quality on Crate & Barrell’s dinnerware.
Snake says
Wow, is Bocker really 10? We’re getting old . . .
Love,
Snake
Eileen says
Nice beer list! I second the Magic Hat recommendation … my favorite is their No. 9.
