Well, it’s not real old fashioned greasy take-out, but healthy grocery store take-out – my favorite kind! I mentioned this morning that the husband’s mom had oral surgery today and I brought over dinner for them – soup from EarthFare!
The husband and I both had the EarthFare homemade Thai Chicken Curry Soup – it was SO delicious! Much like the green curry dishes we used to get from our favorite Thai place back in college but much, much lighter on the coconut milk. I had about a cup; he had two 🙂
I also found these great sandwich buns by the Ezekiel line (I think the husband is offended that I bought bread, but I couldn’t refuse the nutritional panel and size of these!) Here’s a link to the nutrition facts at CalorieKing. Each bun has 5 grams of fiber and 150 kcal – and they’re big too! And quite delicious toasted with a bit of Smart Balance!
Lastly, the husband made us spinach salads with some veggies his mom had on hand. Plus a homemade honey mustard dressing, avocado and a bit of crumbled bacon.
I also had iced tea with an orange slice – what a brilliant combo my mother in law thought of!
All together (I took the photos on the counter because the lighting was so dim at the table)
I guesstimated this dinner to be about 450 kcal, 11 grams fiber, and 14 grams protein.
Dessert
For her doctored mouth my mother in law had Edy’s Vanilla Frozen Yogurt on hand. It was quite good – very “yogurty” compared to the ice cream line. It really tasted like frozen yogurt. I had a little (probably a little more than 1/4 cup – I just eyeballed) with some pumpkin flax granola sprinkled on top. Perfect way to end the evening!
Afternoon
Here’s my hot tea I had after lunch – fixed my hunger issues and actually held me well through Chem lab.
And here’s me in Chem lab – I asked my instructor to take my photo!! Lab actually went well today because we got to work in groups (which I normally hate but it was nice today to have people helping each other clean test tubes and share duties instead of having to do it all myself). Anyways, my group got our unknown molarity SPOT on with the known amount! The instructor was quite pleased with us 🙂 I also shared my blog with him (of course he wanted to know why I would ever want a photo of me in my goggles!) so now I have to – ahem – write nice things about how much I LOVE Chem lab!!!! ( 👿 )
After I got out of lab at 4:45 I debated having a snack or just waiting for dinner since I was on my way to EarthFare, as I wasn’t really that hungry (surprisingly – I told you my hunger is all out of wack!) But I decided it would be smart to delay the onset of hunger a bit since I probably would actually be eating for over an hour. I tried one of the Clif ZBars, which is nice because it’s on the small side for when you just need something to tide you over. I really liked it! It was a lot like the chocolate vitamuffins. I guess I’ll have to hunt for more flavors to try.

HE GOT THE JOB!!!!!!!!
The husband received the news tonight!! WHOO HOO!!! To say his job search has been excruciating would be an understatement. It’s been a rough few months. But I’m SO happy for him and it seems like it’s going to be a really cool company. More details about what he’ll be doin when we actually know more of them!

The honey mustard I make is equal parts honey, dijon mustard (the more honey mustard tasting mustard you start with the better – I like Guilden’s Zesty), lemon juice and olive oil. It’s SO good!!

I think anything up to a pound would be great. Just keep in mind that it will change the nutritional information quite a bit. You might want to add half as many extra veggies to keep the proportion of veggies closer to the original, but if you love turkey, then 1# would just be more per bite!

you look adorable in your chem-lab getup! reminds me of college . . . the funny thing about pre-reqs like chem is that they are definitely an important hurdle to get over, but it seems so random and arbitrary what you learn about! i guess it’s a foundation, though — i’m in medicine now (pediatrics), and if i hadn’t had all that chem and bio in college, i probably would have been confused in my basic science during med school, and then maybe that would have given me less of a background for the clinical stuff, and so maybe that’s the rationale . . .
or maybe they just wanted to make sure i was ok at math so that i didn’t miscalculate medication doses on everyone!
