The worst is over….oh wait, I forgot I have Chem Lab! 👿 My quiz went OK – I screwed up on a big careless mistake 😥 I thought a carboxylic acid was a ketone! Whoops. But then I found out I aced my Microbiology test from last week! Sweet! After my meetings I was sent marching all over campus with a course overload form to take 13 hours next semester (I guess 12 hours is “normal.”) At least I got some more exercise under my belt!
I settled down to lunch at 12:30. Breakfast held me over beautifully this morning!
On the menu:
A hummus, green pepper and Bone Suckin’ Sauce sandwich on Great Harvest High Five bread. LOVE how crunchy this is with all the flax seeds!

And half a cup of TJ’s greek with flax and pumpkin butter with my Duke spoon –
And I picked up this butterscotch guy from the Registrar’s Office!
Fall Fantasy Guest Lunch
Here’s a guest lunch post from Sarah in Durham!! She reported on Friday that her shift at the NICU ended early so she got to have this fantastically fall lunch at home. All I have to say is “MAKE ME ONE!”
I will name this sandwich ‘fall fantasy’ because it is that delicious and seasonal. The ingredients:
– 2 slices rudi’s honey wheat
– 2 slices smoked organic turkey breast
– pumpkin butter!
– goat cheese
– spinachserved with some yellow pepper slices for crunch, and eaten with the backdrop of a sunny fall day (not by a computer with paperwork splayed out in front me or getting paged every 2 seconds!)

That Duke spoon is awesome. I have a favorite spoon and fork that I always bring with me and feel silly, but I won’t anymore because they make meals special, dangnabbit!
Sorry about the silly mistake- I Hate it when that happens. But you know your error, so that’s what’s important in the long run.

13 hours per week is overload? wow. when i was in university, i had 20 hours of class time. that was a fun term (not).
i only have one big jar of pumpkin butter left in my fridge. i’m trying to decide whether i should make more or just move on to tree fruit butters (apple and pear) once i’m finished. the problem with pumpkin butter is that it can’t be safely canned the way apple or pear can so if i make it now, i have to use it soon. i might be tired of pumpkin after another 500mls.

I just bought some delicious apple butter this weekend and I still can’t get over how yummy it is- especially considering the short ingredient list- apples and applejuice! That’s IT?!

I just had the ultimate autumn sandwich from this amazing restaurant in Chapel Hill called Sandwhich. It was butternut squash, brussels sprouts, bacon and cheddar cheese on grilled sourdough, and it was incredible! It’s a seasonal item, so it’s not on the regular menu. Here is the link:

Just this morning, we had a gunman loose in Santa Barbara, freezing the freeway for hours, and many of my coworkers were stuck in it! it was very scary, but fortunately, no one was hurt, and he surrendered.

wow 13 is overload? I’m a first year in law school and we have to take 18 hrs…yeah its so fun! haha! But undergrad the lowest you could go was 12 hrs a semester- I guess its different for every school! Good luck on your quiz Kath

The 12 hours is for graduate students since the courses are a different amount of work (mostly research) so even though I’m not taking major research classes, I still have to apply to take the undergrad load of 12-18.

I mean the pumpkin butter is just like jam. I’m not sure what the technical diff. is between jam/butter – probably something in the puree/gelatin, but they taste the same to me.
