Tonight was my last nutrition class at Queens – and the final exam, which I aced 😎
The husband and his mom have been meeting me for a VERY early dinner – 5:00 – at the dining hall all semester. It’s been fun, but this is one of the WORST dining halls in the country. The school is pretty small and sometimes they don’t have any non-meat protein at all. But I always love a buffet 🙂
For some reason unknown to me, much lunch was so satisfying today that I didn’t want to eat all afternoon. I had some waves of hunger, but I just didn’t feel like eating, which is a very strange emotion to me! I did have 5 almonds around 4:30 when I left for class to take the edge off my hunger at the dining hall – I didn’t want to end up getting too hungry and eating too much!
Dinner
“Vegetable cacciatore” (which was really just spaghetti. I had about 1/3- 1/2 a cup.
Dry, but good green beans. At least they weren’t soaked in butter!
Side salad with green peppers, mushrooms, carrots, raisins, black olives, balsamic vinegar and a bit of blue cheese dressing:
The husband brought this cake from an event he worked….Red velvet isn’t my favorite, but I LOVE that kind of icing….
But I was good!!! I only had this one spoonful. plus one more compulsive one about half this size when the cake was almonst gone (so compulsive I decided that a photo was not necessary!) I logged both as around 80 calories.
All together:
I only counted about 350 calories for this dinner. The beans were dry, the salad was mostly veggies, and the spaghetti portion was small. No wonder I was hungry when I got home! As with all meals out, I could be off by a hundred, but I did the best I could to be accurate.
Snack

I ate the pancake when I was done – good thing because I was hungry after such an early dinner!

I don’t know if you already answered this but could you possibly post the approximate time of all your meals throughout the day? I just want to know how long your meals keep you going.
Also, I have to say, RED VELVET IS MY FAVORITE CAKE… absolutely love it! It looks mighty tempting! =)
P.S. You and your husband are SO adorable! It would be great if you’d share the story of how you guys met, etc one day if you have some time. =P

I eat pretty regularly – breakfast at 7:30, lunch at noon on the DOT, and dinner between 6:30 and 7:30. I usually say if I eat at a different time than normal, so if I don’t say, you can assume I ate at these times. But I’ll try to put times on the weekends because my meals are much more varied then.
I asked the husband to share the story of how we met – to save me from another question. Husband, get to it!
