Let me know if you have other foods you’re curious about. I don’t think a full recipe would work here (it would be a 30-minute episode and not just a video!) but anything small, I can do.

Yeah, it so cute how he’s all into the blog! He’s actually quite opinionated on the cinematography and we even argued for a few minutes whether or not the title should have “An” in it!! He’s the best <3

I just have to compliment you on your video! I think you have a great presence in front of the camera, and I like that you allow your personality to come out while showing how to prepare the food. I think your own cooking/healthy living show could be in the future. 🙂
I have to ask you about your apple preference. What kind do you usually get? They kind-of look like Red Delicious, which I find to be the least tasteful of all the kinds I have tried. I know they are common, but IMO, they do not give apples the justice they deserve! Ha, ha. I love Honeycrips, Pink Ladies and Braeburns – crispy, sweet, tangy and delicious!

Hey Kath, Love all the videos. You do such a great job with this blog! I just had a question for you about the Shrimp, Eggplant, And Zucchini. I just measured out all the ingredients to get them ready for my dinner tonight, and it seems like such a huge portion. I was just wondering if you ate this whole thing yourself, or if some was for the husband too. Ill be perfectly happy if its all for me though! Thanks.

Kath-I just came to this site a few days ago from your post on “Eat Like Me”…I want to say that I feel so much better reading your blog about what you eat. It is clear that while you are mindful of the things you eat, that you eat good sized portions of whole good foods but still crave snacks and treats once in a while! Also the video is great, I had no idea what you even meant by an oatmeal pancake until I saw you make it! I will continue to check in everyday to see what great food you will whip up next!

I think it would be so cute and AWESOME if you and The Husband made a video cooking one of your famous dinners! Obviously it would be condensed time-wise but we could all see the stellar culinary team in action! It’s amazing how quick you do things…I am slow and klutzy in the kitchen!

I lick ALL bowls!! And plates. It’s kind of a bad habit and the husband makes fun of me. But if there’s oatmeal left, there’s no better utensil than my tongue to get it in my mouth!

Everything you saw in my bowl I ate!! It was half the eggplant (8oz raw) and half the zucchini (3.5 oz raw) that I roasted, and then 6 oz spaghetti squash, 1/2 cup sauce, 15 shrimp, 5 olives. I think that’s it??

Because my arms always get in the way of the camera!! We should shoot from the other side of me, but there’s not as much space over there. So I just have to block things. We even rehearsed with me using my right hand to increase visibility, but then I naturally used my left when we were recording.

Great idea! We’re going to put the husband in a video soon – but doing it together would be fun! But then we’d need a third person to videotape….or it would be boring and static. I’ll have to think about it…

Oh my GOODNESS!!! I tried this for breakfast this morning and it was absolutely delicious.
Instead of banana I used mashed raspberries (really really tasty, by the way). I also didn’t have any vanilla essence – I think the pancake would have been tastier with the vanilla.
Going to try banana version on thursday morning 🙂
