Morning 🙂
Wish I could play all day today, but as it turns out, I’ve got a number of things that have to be done for my internship so I’ll be at the computer most of the day.
We’ve got a dreary rainy day so I think some hot tea will keep me company.I was really hungry this morning for a big bowl of oats!!
I ended up making a HUUUUGE bowl because I just kept throwing it all in!!
The Mix
- 1/4 cup Scottish oats (= 1 serving because of smaller grain size), water, vanilla soy milk, pinch salt, vanilla
- 1 small banana (started to put in half then just tossed it all in)
- 1 tbsp chia seeds
- 1/2 a cup of cottage cheese (again, started with about 1/4 a cup and only had a little left so I just scraped it all in and it ended up being a little to much!!)
- Crumbled granola bar "cookie" from last night 🙂
- TJ’s PB, sunk in
= one amazing but super filling bowl!
Christmas Blend + Pumpkin Spice Decaf
I think I lost a tooth!!
Wheeeeeeeeeee!
Anna @ Newlywed, Newly Veg says
Cue bowl!
Happy Groundhog Day!!! Good luck tcb’ing it today 🙂

I think I see a candy corn in your coffee! LOL

Jessica @ How Sweet says
Those oats look amazing! It almost looks like crumbled bacon on top….hahah where is my mind?
Erin (Travel, Eat, Repeat) says
I wanted oats, too, but was too cold to go out to the garage where the new box of oats is stored! 😛 Settled for PB toast instead and it’s just not the same.
Danielle (Coffee Run) says
Christmas Blend + Pumpkin Spice coffee sounds like heaven in a mug
(I see a shoe 😉 )
Nutritious Foodie says
hmm I could use a cup of coffee this morning. It is cold and drizzly here in Houston as well. I am hoping for a nice warm weekend for our 45 mile bike ride.
Kristin @ Iowa Girl Eats says
Ooo – I just had Scottish oats for the very first time this weekend. I love how chewy they are – so unique and different than old fashioned oats! Unfortunately I bought enough OF oats to last me 10 years at Costco, so I won’t be buying the Scott’s style anytime soon!!
Freya @ foodfitnessandfreya.wordpress.com says
That oatmeal looks and sounds amazing!! I do that with mine too – this morning I had oatmeal, banana, milk, peant butter, toffee flavour yogurt and Fru-Grains…the more the merrier in oatmeal I say!!
Have a good day 🙂
Daniel says
Looks delicious, it made me hungry at least.
Just curious, what kind of cottage cheese do you use? (Low-fat, non-fat, normal, large/small curd, creamy or dry, brand?) Every time my parents bought cottage cheese I chose not to eat it due to the obnoxiously long ingredients list and I was wondering if there was a decent style to eat w/o all of the junk in it. I’ve never tried cottage cheese with my oats but I figured if I can find some good cottage cheese, why not. (Sorry if you’ve posted it before.) ^_^
Kath says
Lately I’ve been buying Organic Valley 4% CC. I also like Cabot fat free (the ONLY fat free dairy product I’ve ever liked!) And I do like Breakstones too. Cottage cheese varies so much brand to brand. But the Organic Valley is awesome – and organic 🙂
Heather (Heather's Dish) says
what a yummy bowl! i love your love for oatmeal…makes me so excited about going and making my own 🙂
rustique says
Oh, wow. I think one day you should just open a restaurant specializing in decadent oats. You’d make anyone a believer.
Jamie says
great use of your oat bar! those things always get better when paired with oats 😉
megan says
even if you have lots of work to do, it’s still nice to be at home, isn’t it? I wish we had snow days! haha but I live in Michigan, so it would have to be an all-out blizzard before anything would get cancelled. i’m ready to move.
Kate (This American Wife) says
Have a great day, Kath! Enjoy working from home and stay warm and toasty.
skinnyrunner says
thats a massive bowl. can you eat that whole thing??
Kath says
YES! I would have said if I didn’t. It was actually the perfect amount.
leslie says
Hi Kath,
I’ve been reading your website for about 3 weeks now. It’s fun and inspiring! I love the oatmeal with the banana-I’ve made it many times and it’s so tasty!
I’ve asked this question many times, but I bet you have the perfect answer. How do you use a French Press? Exactly how much water to how much coffee? I can’t seem to make it taste right. I like my coffee fairly strong, then I add some frothed 1% milk and some stevia.
Thanks in advance and I hope you get lots done today!

Everything you need to know:
Sophie @ yumventures says
That looks like great oatmeal, I love the cottage cheese addition!
Kathleen Ichord says
How are you liking the Chia seeds? Considering buying them.
Kath says
Changed my life. I don’t know if I can eat oats without them! They improve the texture so much (thicken and fluff)
Kathleen Ichord says
That good?Thanks!
Sarah @ The Foodie Diaries says

Hannah says
I absolutely expected to be seeing those granola bars pop up on your oatmeal this morning – particularly when you said they ended up flatter and crunchier than you intended!! Oatmeal makes all those little bits and bobs so much fun 😀
Good luck with getting all your little jobs done!
Ameena says
I love your oatmeal creations! They are always unique unlike mine. I live vicariously through you. 🙂

Jil says
Rainy dreary days are good excuses to be productive (esp when you need to be 🙂 ) …not that you’re not one of the most productive people I know of already! 🙂 The oats look outstannndin’!
Susan says
Hey Kath,
That bowl looks bangin’! Question: do you heat the cottage cheese at all or stir it into the oats post-cooking? And does that make for a luke-warm bowl of oats? Just curious! Thanks!
Susan
Kath says
I stirred it in near the end – and the oats are usually so hot it doesn’t cool it down much at all. Takes about a minute to get hot again.
Rose says
The coffee also looks like a jalapeno, I think 🙂
You should collage all the coffee pictures together and create a print for your wall.
Hellena says
Kath!
Just wanted to let you know how much I appreciate your blog. Your posts are always interesting and the perfect length. And I think you pictures are FABULOUS! You’re doing a great job and I love checking in with you every day.
Getting some oatmeal inspiration is a bonus of course. I myself am totally into cutting up dried figs to put in my oatmeal at the moment. A suble sweet taste and interesting texture.
Kath says
Thanks 🙂
Jess says
Those oats look fantastic! I tried caramelizing the banana like you did yesterday (?) before adding the oats and it was fantastic! Yesterday, I tried your whole wheat yogurt pancakes. SO GOOD!
I love your blog, Kath!

GUESS WHAT I HAD THIS MORNING?
the coconut-cinnamon roasted squash i made last night 😀
OMG so good,
i knew i had to share it with you.
i steamed half a kabocha squash in the microwave,
brushed it with artisana goji coconut butter
and a little bit of vanilla syrup,
sprinkled it all with cinnamon and
roasted it in the oven at 350 for about 25 mins.
SUCH A GREAT NUTTY SMOOTH FLAVOUR,
