Here are a couple pictures from my Mother’s Day meal, and one of my mom, my sister, and me (all three of us are devoted KERF readers!).
My meal included 2 oz. salmon and 1 oz. shrimp with 1 oz. basil pesto spread over both. On the side, I had tons of fresh green beans and some gorgeous sweet potato fries (cut up sweet potatoes into strips, spray with olive oil, sprinkle on some salt, and bake at 400 F for about 30 min.). The salad was amazing, with spinach, butter lettuce, cucumber, carrots, onion, 1 tbs. guacamole, 1/4 c. feta cheese, and 1/4 c. black bean and corn salsa.
Dessert consisted of strawberries and watermelon with some granola for a little added crunch. SO GOOD!!

I’ve been seeing sweet potato fries everywhere in the food blogs these days. And without exception, they all look very good. I didn’t realize it was so easy to make.
