I managed to sleep until 5:45 this morning (yay!) but when Matt got up to run, I was wide awake. 7 hours of sleep is sometimes OK, but not ideal. When he returned, he found me lying awake in bed – but of course the lure of a Matt-whipped breakfast got me up!
And that’s when I realized it was still dark out!
The question became: eat hot oatmeal now or wait until sunrise for pretty photos.
I chose the former. Like I could resist!?
I had a heck of a time getting a good shot. This reminded me of my internship days when I had to leave the house at 6am. Months of dark breakfasts!
Matt made whipped banana oatmeal with chia, milk and water. I topped it with sunbutter and Nuts Over Granola. Note how small this portion is compared to yesterday’s cottage cheese + strawberry mixins! (And a slightly bigger bowl).
Plus a side of Oolong tea!
when I was finished eating, the sun was up! I should have just waited 15 more minutes!
Happy Registered Dietitian Day!
Have a healthy, real food breakfast!
The Mrs @ Success Along the Weigh says

Not sure I can remember when the last time was I had 7 hrs of sleep.About 12 years ago I guess.5 hours is my norm.
Alyssa (wholefoodhappy) says
Happy Pi day as well!
Jana @ Newly Wife Healthy Life says
Today isn’t only ‘Pi’ Day, but also my dad’s birthday! Maybe I can convince him to have some birthday pie instead of cake! 😉
Ashley @ My Food 'N' Fitness Diaries says
it seems like i just started getting used to it being lighter earlier in the morning, and then it changed again. although if i had to choose, i would prefer to have more light in the evenings than in the mornings. or summer could just hurry up and come so we could have both! 😉
Janine @ThePurpleGiraffe says
I enjoyed an oatmeal smoothie this morning for breakfast – banana, strawberries, PB2 powder, chocolate almond milk and rolled oats! Deeeelicious!
Claire @ Live and Love to Eat says
Happy RD day, Kath – and Pi day, too! I got 7 hours of sleep and it’s the most I’ve had on a weeknight in a while!
Lauren @ What Lauren Likes says
Happy RD day! Haha breakie looks fab 🙂
Sarah @BlondeBostonian says
Happy RD day to you, Kath! I had yummy banana oatmeal today with almond butter mixed in and granola – very Kath approved!
Cait @ Beyond Bananas says
One of my least favorite things about daylight savings is that we return to dark mornings. I suppose it is worth the extra daylight in the evenings though!
Kim @ Spoonful of Sass says
Your dark breakfast just keeps it real. 🙂
Jasper Naomi @ crunchylittlebites says
I like the fact that there are nearly zero “unreal” foods to be found in our house…
Cheryl @ Happy is the new healthy says
Ahhh the time change! I appreciate being able to stay up later/having some energy at night since it’s not pitch black when I leave campus, but as a morning person, getting up at 5am and going by 6 is much much harder, I have to admit!
Happy RD day to you! I hope I’ll be celebrating as an RD by 2015–if things go according to plan my second degree will be done and that gives me a year to do an internship by then! So exciting to think about.
Jenn@slim-shoppin says
Happy RD Day. I made a batch of chia seed banana oat muffins that turned out great – I’m posting the recipe tonight. Only 200 calories per muffin (and they have chocolate chips in them!)
It does stink that it’s still dark out in the morning -but I’m not complaining – it’s going to be almost 80 degrees in Chicago today! That’s nuts!
Laura @ Sprint 2 the Table says
Good title – I love that song!
I’m happy it’s staying lighter later so I can get some shots of my dinners. 🙂
Katie @ Peace Love & Oats says
I’m glad you got a little more sleep, and Happy Registered Dietician day to you! Haha there are so many random holidays that I’m always completely unaware of!
Sarena (The Non-Dairy Queen) says
Happy RD day Kath! I was so happy the sun was out later last night to get some good food shots for dinner. It really is the little things some times. Have a great day!
Angela @ Eat Spin Run Repeat says
Happy RD Day Kath! I hear ya on the waiting for the light… I’m so happy now that I don’t have to go home during my lunch hour to take photos of dinner because it’s actually still light for a few hours when I get home now! You know you’re a blogger when… 😉
Heather says
My breakfast today included the Cville Cluster Granola that I ordered from Open Sky. It is so good. I am working from home today and I had to leave the bag in the kitchen so I don’t eat it all. It is so good. I was going to share 1 of the bags with a coworker but I want to keep it for myself. Thanks to you and Matt for such a wonderful product.
KathEats says
So glad you like it!
Elisabeth says
Happy RD Day! I’m so enjoying the light in the evenings. Light in the morning is nice for most people, but I drive home from work at 7ish (3rd shifter at a hospital) and enjoy it being darker in the morning for less interruption in my sleepiness 😉
Linds @ Linds Eats says
The time change this year has really taken a toll on me. I love, love, love having longer lighter days, but I can’t seem to get to sleep if my life depended on it and waking up is a whole other story! And I’m usually a morning person. 5:30am seems, and is daunting to me lately. Hoping this craziness doesn’t last too long, or I’m going to end up with perma bags under my eyes. haha!
Jessica @ The Process of Healing says
Yay for National RD Day!!! This is especially exciting for me as I’ll be one in a couple of years!
Jody says
I’m willing to deal with the dark for the wonderful long evenings, but man it’s hard to get up at 5:30 when its still pitch black!! 7 hours is a lot for me…I wish I could get more, but there is just not enough time in the day. Maybe your body is sleeping less to prepare you for motherhood?! Because when that baby comes 7 hours will be hard to come by. Worth it though of course 🙂
Anna @ On Anna's Plate says
I haven’t been up before the sun in so long– it’s always so strange!! I guess that’s all going to change soon when baby comes, haha.
Lauren @ Oatmeal after Spinning says
I’d say that your photos still turned out pretty well!
I am loving the extra light- but driving to work in the morning (or even getting UP in the morning) in the dark is really hard. I have felt super tired all week… guess my body just has to adjust. But, it SHOULD start getting lighter earlier, I think? I hope so. 🙂
valed says
Maybe I’m not up with the latest lingo but what does “wide away” mean? I’m soooo jealous of your 7 hours of sleep. You are so lucky!
KathEats says
It was a typo
Cait's Plate says
Ah I love that there’s a full day dedicated to RDs! Happy Registered Dietitian Day to you!!
And yeah – I leave my house at 5am most mornings so I haven’t had a good naturally lit breakfast picture in FOREVER! It really makes a HUGE difference! Your breakfast still looks incredible!
Khushboo says
I love waking up to natural light! Happy RD day :)!
Jamie @ Don't Forget the Cinnamon says
I ate breakfast in the dark too today and it definitely was a challenge to get a photo!
Hillary says
The only bad thing about DST is that it is pitch black when I leave for work at 6:30. The sun doesn’t rise until my kids are arriving for homeroom! Oy. But I do loooove the extra light at the end of the day. Perfect walking weather, too!
Emily G. says
Hi Kath – I have a quick question. My go to breakfast is a smoothie with a banana mixed in. I recently found out I’m allergic to bananas (boo!) and now my smoothies are lacking in flavor. I’m having a total brain fart and cannot think of anything to replace the sweetness. Adding sugar isn’t an option I want to consider as this is normally how I get my fruits in. Do you have any suggestions?
Speaking of allergies, I also found out I’m allergic to lettuce (bizarre!!!) would you recommend kale as a substitute? Or is it also in the lettuce family?
KathEats says
Bummer!!
What about other fruits? Frozen berries? Mango? Are you allergic to those as well? Avocado and tofu can also impart that creaminess that bananas give.
I am not an allergy specialist, so I’d ask yours about the lettuce vs. kale, but my gut would think that spinach/kale/collards would be different in make up, but I’m really not sure.
Nikki T says
Like Kath said, tofu gives the smoothie the creamy texture that the banana does. I sometimes use the little fruit flavoured dessert tofu packs, they are great in smoothies!
Frozen berries definately could replace the sweetness of the banana, but not the creaminess.
Andrea @FrSeed2Stomach says
DATES add a ton of sweetness to smoothies. If you soak them for a bit (like 10 min, but you could just keep a jar of dates in water in the fridge) before adding them to the blender, you’ll get smoother results. The water can go in with the soaked dates if you want. Also, kale is not in the lettuce family. It’s more related to broccoli and cabbage. Arugula and dandelion greens might be other alternative, but I’m not sure. 🙂
Emily G. says
The only other fruit I’m allergic to is pineapple. I assumed strawberries would be sweeter than any other frozen berries so I tried them first but it just didn’t work. Trial and error is the best way to figure it out, right? lol I’m allergic to avocado but will definitely have to try tofu for creaminess.
Can I just say allergies suck? Barley and brewer’s yeast is also on my no-no list which means no beer.
Tracy says
If you can eat mango, it adds a lot of sweetness and creaminess like bananas do.
Karen says
Avocados are wonderful in smoothies! They add creaminess but you can’t detect the avocado flavor. I especially like them combined with spinach (if you can handle that leafy green, that is.)
Jen says
I just have to jump in and second Kath – mango and avocado are excellent!
~Christy @ wonderofallthings says
Yes, the dark in the mornings again is a little tough to get used to but the light in the evening is so worth it! Real food breakfast – CHECK! 😀 What else could it be??
Hope @ With A Side Of Hope says
Happy Registered Dietician Day to you! It’s also Pi day! I remember back in the day in school, they would make a big deal about it.
Sam says
Yep, my norm is usually 5.5-6.5 hrs/night. 7 for me is fantastic!

Happy RD Day! Thanks for this fun and informative blog, Kath. Inspires the rest of us to eat healthful, fresh, REAL food!
Maria@ Sinfully Nutritious says
Love the title. I just said to my husband, now I can take dinner pictures outside, but breakfast will have to be later. The time change effects us all in different ways! 🙂
Averie @ Averie Cooks says
Way to go for sleeping in so late…haha, kidding! 545am is mighty early but at least you GOT sleep. Being pregnant, getting any comfortable sleep can be a challenge some nights!
natasha e says
I would kill for 7 hours of sleep! Your breakfast looks yummy and I always love a good cup of hot tea with my oats too.
Lyn says
Enjoy your sleep NOW…. ::evil laugh from a mother of five::
I want a husband who makes me breakfast!!
Lindsay @ Fuel My Family says
Good choice on eating breakfast first and not waiting for the sun just for picture purposes. We can surely look at a lower quality picture so you can feed that baby when you need to :). Ah pregnancy eating is great but eating while breastfeeding is even better, you get to eat SO dang much all the time just to keep up!
Tatiana, Lexington MA says
Your breakfast looks wonderful!
Every time I see pictures of your new porch, I keep admiring it more and more. It looks great even in the dark:) If you do not mind sharing what was the ballpark cost of building it?
KathEats says
It was about $20K and we are sooooo glad we did it!!
Lisa says
I have been a practicing RD for 10 years and had nearly forgotten it was our ‘day’. Happy RD day to you too.
Ellie@Fit for the Soul says
whoa I didn’t know today is a special day! 😀 Even more motivation to eat healthfully? 😉
Andrea @FrSeed2Stomach says
I’m so jealous of that back yard. Any plans to plant some veggies?!
KathEats says
YES! We’re trying to figure this out. I don’t think I’m really in a condition to be digging in dirt or building beds (I think I could learn, but I’m just gonna go ahead and say that I don’t want this task right now). I can maintain a garden, but I can’t build it. And Matt is busy all the time. So we’re just trying to figure out if we’ll wait a year to build one or maybe hire someone or if Matt will just get excited about it when warm weather is here to stay.
Sam says
Why can’t you dig? I know you’re pregnant, but you worked out before pregnancy and you have no health conditions that would prevent you from shoveling normally. I’m just confused.
KathEats says
Well I could do some light shoveling, but I just don’t feel comfortable doing back-breaking digging on a big garden
Karen says
Kath! I noticed that the Eat More Kale guy, Bo, offers infant size onesie’s and thought of your little one…check ’em out! 🙂

Happy RD Day to you too! I got an Edible Arrangement today at work for the occasion, so nice of my coworkers! 🙂 And they even got me some chocolate covered pineapples in there, YUM!
Andrea @FrSeed2Stomach says
YAY. I so look forward to reading those posts! I hear you on timing, but I think you guys will have a blast with it and will find that it’s a lot easier than you might expect. I’ve blogged about my adventures in gardening and have learned that it’s never perfect. If a renter in Boston can do it, anyone can! You’re fortunate to have a long growing season and lots of land. 🙂 Good luck!
Paige @ Healthy Hits the Spot says
I know what you mean about the photos, but yours still look great, and they actually give some feeling to your pictures. They look super cozy 🙂

I don’t see the trampoline in your backyard anymore–I believe you said that you were going to sell it. However, I see a trampoline in your neighbor’s yard. Did your neighbor’s buy it from you both?

i definitely love the longer days, but not a fan of the early morning darkness!! a trade off i suppose 🙂
Stacy @ Say It With Sprinkles says
I do NOT do well getting up when it’s still dark out…or eating breakfast when it’s still dark out, for that matter! Give me my sunny mornings!
Madge says
Just wait girl, once that baby gets here you won’t see 7 straight hours of sleep for a long time.
Madge says
….but, it’s so worth every waking moment…
Just wanted to add that 😉

Happy RD day to you!!
I started my day with some Gluten free toast with peanut butter w/ flax and a banana. (plus some coffee with almond milk for good measure) 😉
