Overnight pumpkin oats in a jar – minus the nut butter. Just an empty ole jar. I missed the sticky sides! But I made up for it with buckwheat crunch.
The Mix
- 1/3 cup oats
- 1/3 cup plain yogurt
- 1/3 cup milk
- 1/3 cup pumpkin!
- 1 tbsp chia seeds
- Pinch salt
- Splash vanilla
- Half banana
- 1 tbsp raisins
This AM: Lots of granola!
[OK, ok, I’ll admit I added a scoop of peanut butter halfway through because I missed it so much!]
Our coffee pot sure is convenient on mornings when we have a full house
Filler up for the day!
Let us all pause, and remember
Matt and I are biking to the farmer’s market, then getting some kind of exercise.. it’s only 48* outside!
Samantha says
How much pumpkin is in there…you missed the star ingredient!?
Valerie @ City|Life|Eats says
LOL I was curious about the amount of pumpkin too. I made pumpkin voo this week and couldn’t get the proportions quite right.
Nicole - yuppie yogini says
Wow! 48* sounds amazing! Have fun.
Freya (Brit Chick Runs) says
That sounds like one freakin amazing jar of oats..oh my!
Amanda says
Do you like the pumpkin in overnight oats better or stove cooked?
Kath says
Cooked better 🙂
Amanda says
I will have to make them that way tomorrow to try!
I decided whenever you and Matt open Great Harvest you should make it unqiue and have an oatmeal bar where people could get all of your unique toppings and ideas! That would be a big hit!
Kath says
That would be fun even if only I ate them!!
Sarena (The Non-Dairy Queen) says
I actually slept in this morning, so you are way ahead of me! Those oats…there are no words. I am still waiting on pumpkin here! Have fun and enjoy the ride!
Lindsey @ Gingerbread Bagels says
Those oats look absolutely delicious! Have a great day at the Farmer’s Market, sounds like fun even though it’s 48 degrees outside! 🙂
holly @ couchpotatoathlete says
I just woke up and I wish I had breakfast waiting for me 🙂
Wei-Wei says
48? outside sounds amazing. I hope you have a wonderful day of remembrance.
Jessica @ How Sweet It Is says
It’s cool here too – I love this weather!
Evan Thomas says
If it starts being 48 deegrees, I think I’d need to crawl back into bed until it warms up.
Natalia @asideofsimple says
I can’t wait to try some of your granola. And by the way, I’m loving your photography skills!
Kath says
Thanks 🙂
Kris says
Aw, I’m so sad. I looked everywhere yesterday for pumpkin and no find. So instead, I have oatmeal w/ fresh off the tree mango, dried pineapple and almonds. Tastey, but not Fallish (but it’s freakin hot here in FL!). I think I’ll have to indulge in a pumpkin beer later 🙂
Annie@stronghealthyfit says
Cute yummy breakfast! Wow it’s cold there.
Hannah says
*laughs* I saw that first photo and thought “wow, I wonder what’s going on with the light there? The oats look so yellow!” As an Australian without access to canned squash and pumpkin, I keep forgetting that Autumn in America means pumpkin oats that I have to be envious of! 😛
Gina says
Oh my! I’m salivating at the sight of those oats. They look incredible!
Shannon, Tropical Eats says
wow 48 degrees??? gives me the chills just thinkin about it.
Remembering 9/11!
Michelle (The Runner's Plate) says
It was 42 degrees here yesterday morning, but I live in Alaska, so that’s to be expected. However, I’m surprised it is that cool where you live! I’m sure it will warm up a lot more where you live!
Tina says
So important to remember!!
And what a beautiful temperature. I love fall. Although I don’t love when that temp is the high. LOL
Jessica@tastyandtrim says
Your oats always look so incredibly delicious. I always want to eat them off the page 🙂
Angie says
Oh my gosh – 48 degrees….I love it. Perfect temperature for pumpkin oats. Beautiful breakfast jar.
9/11 Never Forget.
Camille says
Isn’t this cold weather wonderful!?
Bring it on, Fall!
Kristy @ KristyRuns.com says
48 degrees?!?! Shut the front door! I just finished running 15 miles in 83 degree Atlanta heat. Oh, Lordy, I wish it would have been 48 degrees. Heck! I would have taken 68 degrees! 😉
Vicky says
Kath,
I have a weird question! I love your MIL’s belt from last night’s post. Do you know where she got it?!!
Kath says
She says it’s from a boutique in Charlotte behind Fresh Market!
Kath says
Found it!

I can’t believe it’s only 48* outside! I’m so not ready for fall to be here yet! :/
But on a brighter note, the pumpkin OIAJ look legit!
Sara @ myfancytuna.blogspot.com says
I wish it was 48* here!! It’s going to get up to 91 in GA today 🙁 Oh well, I can embrace fall early through your blog 🙂
JenATX says
so jealous of the weather 🙁 i’m craving fall like i’m craving a glass of milk after a pb&j
Jean@RoastedRootsandPumpkinSpice says
That’s it, I’m determined to find canned pumpkin this weekend one way or another.
lynn (The Actors Diet) says
the oats look particularly yum – i would’ve been excited for them this morning!
Ashley says
I about freaked out when I saw your breakfast. As I’m sitting here, I am eating what looks to be almost the same exact thing and it’s in the same size mason jar! I didn’t make overnight oats though but a layered yogurt + banana + pumpkin + spices + buckwheat + chia + walnut butter etc. Then I stirred it all up so it looks like a big orange mess…just like yours! Have you had walnut butter before? I made some the other day with cinnamon, vanilla + honey. It doesn’t get super smooth and creamy like some of the nut butters but it has this dough like consistency and awesome flavor I think you would love 🙂
Kath says
I have had it, but it’s not my favorite. I just love peanuts and almonds.
Mary @ Bites and Bliss says
Definitely jealous of your pumpkin and weather!! It’s already >90 here and it’s not even 11. Have a good morning!
Alexandra @ A Bit Better Everyday says
So jealous of your weather/farmer’s market right now! Cooler temps would make my run so much better today seeing as I slept in too late and its getting warmer by the minute.
I know you moved out of Charlotte, but I am seriously considering UNC Charlotte for grad school and I was wondering if you have any insight into what neighborhood/area I should move to. I’m looking to be relatively close to school and it would be nice to have a good walking community. Thanks so much for any advice!!
Kath says
That’s a tough question. I’d recommend Dilworth, but it’s pricey and would involve a commute. The whole Lake Norman area (where I went to college) is really nice, but the traffic going north during rush hour can be a beast. I’d be happy to hash it out on the phone or G-chat sometime when you get more research done?
Alexandra @ A Bit Better Everyday says
Thanks so much! You are so thoughtful and I’ll definitely take you up on that Gchat offer when I have things a bit more organized!
Angela @ Eat Spin Run Repeat says
Yummmm! I had pumpkin vanilla oats this morning too… spectacular start to the day. 🙂
Have a great Saturday! 🙂
christina cadden says

Stacey says
Biking to the farmers market IS exercise, haha 🙂 I know what you mean though! Have fun today! (Lovvveeeee the coffee, haven’t had any yet. Blah)
Chelsey says
That looks so good – pumpkn is NOWHERE to be found around here!!!!
Kath (Eating for Living) says
Pumpkin is the absolutely best! 😀
Katie says
Only 48?!?!! It was 38 here when I woke up. I’m thinking hot breakfasts are back in full effect!
ilana says
Kath,
Beautiful pictures! I am also a pumpkin fanatic. I love all things fall, actually. I am loving this weather! You inspired me to finally open up my monster can of Libby’s that I had been saving . . .
And I can’t wait to hear/read which pumpkin ales are best at the festival! (Dogfish’s was kinda dissapointing to me, and Blue Moon’s was just like regular beer to me . . .).
PS: Re: your “animals” post, there are BABY lion cubs at the National zoo. You have to see them!
Uber cuteness.
Cathy Breit says
well…consider another convert, Kath! I started a blog. I never ever dreamed of considering it before I started following yours! (i’m still pinching myself) Thanks for the inspiration!
