Morning from the KERF house. Glad to be here!
The coffee’s strong –
The muffins are wholesome
And the oatmeal is thick n creamy
I opened up the Peanut Flour to have today. I’ve had PB2 before and this is very similar. I do not intend to use this as a peanut butter replacer – it doesn’t really taste like PB to me! But I do love stirring this into yogurt and making the occasional sauce or dip with it. Think of it as a fun ingredient for your kitchen!
[Emily did a great post on peanut flours where you can learn all about it and ask questions
]I stirred mine up with water (we are SO out of milk!) and added some kosher salt like Emily suggested and a splash of vanilla. I thought the flavor was just OK. It tasted a bit chalky to me.
Muffin madness!
The Oat Mix
- Half hot cereal, half oats
- Milk + water
- Half banana
- Half tbsp chia seeds
- Vanilla, salt, cinnamon pinches
- Muffin
- PB Flour sauce
- TJs Pumpkin butter
- A sprinkle of toffee cookie edges
The good stuff.
I’ve got a lot of stuff to do around the house today, and tomorrow will get a move on on my computer + blog related tasks.
Have a great Wednesday!
Gabriela @ Une Vie Saine says
That’s such a great way to use peanut flour- I want to bake with it, but I need to really figure out what it tastes like first!! Might try that today 🙂
Angie @ Musings of a Violet Monkey says
I SO have to try to the TJ’s Peanut Flour!
Beth @ Beth's Journey to Thin says
I bought the peanut flour from Trader Joe’s and I agree – it doesn’t taste like real PB to me but I do think its a fun ingredient to use. I am excited to experiment with it a bit!
Christine says
Haha, the coffee pot looks like it’s floating/pouring itself. Magical coffee pot, that is!
Angela @ Eat Spin Run Repeat says
I need to get my hands on some of this peanut flower! Your bowl looks divine – I thought my breakfast was good but yours looks amazing. Have a great Wednesday!
Samantha @ Bikini Birthday says
Interesting. I’ve never used peanut flour.
Jessica @ How Sweet says
I haven’t opened my peanut flour yet but I am excited to use it!
faith @ gracefulfitness says
Welcome back to C’ville!
I am very curious about this peanut flour stuff and I am sure you will keep us posted on all the possibilities.
Brittany (A Healthy Slice of Life) says
I love reading your blog… I find stuff I’ve never even heard of… like peanut flour. I love learning 🙂
Amy says
My boyfriend just got that same brand of flour PB from TJ’s. I’m curious to try it, he said he likes it, but he likes anything, lol!
Holly @ couchpotatoathlete says
I’ve only added peanut flour to baked goods — I’ve never made “peanut sauce” or anything. At first I was bummed that it comes in those teeny bags, but I barely use it, so now I’m happy it wasn’t a 5 lb bag 🙂
Lea @ Healthy Coconut says
I feel the same way about the Peanut Butter flour when i mixed it in my oatmeal, I couldn’t really taste it. It made my oats thicker and creamier though.
I use PB flour for baking and have a really good Peanut Butter chocolate chip recipe that I tried, they were chewy, dense and delicous cookies 🙂
Anna @ Newlywed, Newly Veg says
I have some PB2 in my pantry, but I always forget about using it! I guess I should use it up before I buy peanut flour 🙂
alyssa says
I miss muffins! Looks great!
Jasmine @ Eat Move Write says
I’ve never used peanut flour, but that’s a cool idea. I can see how it wouldn’t taste as rich. That muffin really looked good to me. I loved muffin-topped oatmeal, but not muffin tops. No fun.
Shannon @ Freshman Yr of Life says
My oatmeal this a.m. was so weak compared to yours. It looks so delicious and I must step my game up!
Amanda (Eating Up) says
Thanks for the peanut flour briefing–I’m actually picking up some today!
Simply Life says
i’ve never used peanut flour – good to know!
Sarena (The Non-Dairy Queen) says
A little maple syrup is great in the peanut flour too! I love the stuff! So good! Have a great day Kath!
Holly @ couchpotatoathlete says
Good idea with the maple syrup!
MaryB says
Love the Harry Potter coffee pot!
Krystina says
Peanut flour tastes similar to pb but the fattiness and silky texture is missing, which is the best part to me!
Katryn@rampantcuisine says
Mmmmm, fantastic combo! Must get some pumpkin butter.
Rachel (Two Healthy Plates) says
I am excited to try TJ’s peanut flour….if I ever make it to one again…the closest one is an hour away =(
diana says
sniff sniff… i miss you peanut butter!
Camille says
I’ve never even heard of peanut flour! I will have to make a point of trying some next time I got to TJs!
Melissa says
I love all of the crazy oat concoctions you come up with; it gives me inspiration to eat more oats! 🙂
Natalia - a side of simple says
Mmm there’s no place like home!
Tabitha (From Single to Married) says
What a fantastic breakfast – looks so yummy!
Foodie (Fab and Delicious Food) says
The peanut flour sounds interesting!
The muffins look good! I’m making muffins today! Probably apple cinnamon muffins and pumpkin muffins! Mmmm! I’ll need to try your idea of using them as an oatmeal topping!
claire says
OK, I really need to open my peanut flour and try it out! I also had muffin oats today too! YUM!…oh, and lots of coffee!
jamie @ jamelafamela says
i have to try that peanut flour— and those muffins too! thanks! i love trader joes 🙂
Rebekah@ Rebeltarian says
Hmm…i might have to pick some of that up!
Karen says
I appreciate the idea of experimenting with new, fun foods but am not inclined to purchasing fake tasting peanut butter to save a few calories or grams of fat. A healthier approach might be to consume reasonable portions of the real thing and relish every bite.
Kath says
I didn’t purchase it to save fat – I purchased it to use in cooking. You’ll see regular PB back tomorrow.
Karen says
I know YOU aren’t afraid of the calories or fat in real nut butter, Kath!
Marisa @ Loser for Life says
I’ve wanted to try that peanut flour, but I still have quite a bit of PB2 to use up! I love it!
Nicole says
So far I’ve only used the peanut flour in my protein shakes. The flavor definitely isn’t as strong as the real stuff, but it works for me as a calorie saver when concocting smoothies.
Marina says
Muffin in the oat bowl is an awesome additions. Gotta make some muffins soon!
stacey-healthylife says
I would not have thought about using the pb flour for that. I really wanna try baking with it.
Erica says
Hey Kath! Nothing like a hot cup of coffee 🙂 I love the peanut flour but I don’t use it as a PB sub on its own. I’ve used it in a few recipes and really really like the outcome. Few suggestions:
Cookies: http://itzyskitchen.blogspot.com/2010/09/peanut-butter-flour-chocolate-chip.html
Bars: http://itzyskitchen.blogspot.com/2010/09/oatmeal-peanut-butter-flour-chocolate.html
I also used it in protein pancakes (using Julie Go Leans recipe).
Good stuff! Have a good day
Mary (What's Cookin' with Mary) says
That muffin looks so moist and has me craving one ! May be time to break out the ole ww banana nut choc chip muffin recipe 🙂
Caitlyn (A Spoonful of Life) says
That’s kind of like “create your own” PB! You could really have fun with that! I must try it!
Shawnee says
Hahaha your first picture looks like your coffee pot is floating.
Kelsey @ CleanTeenKelsey says
I’ve been really curious about peanut flour. Something told me to pick it up while I was at TJ’s a few months ago (the closest TJ’s is 11 hours away!) but I didn’t listen. Darn.
Kjirsten: Balanced Healthy Life says
I have been eager to make something with peanut flour. The muffins looks great!
Katie says
I just got some peanut flour online. I’ve tried all the different kinds, and I agree completely with Emily. I don’t like that PB2 has added sugar, and I love that peanut flour has more protein!
Jil says
I’ve never tried peanut flour; it looks like a fun option though – added to the grocery list. haha
Mary @ Bites and Bliss says
I used to think PB2 tasted like regular peanut butter when I didn’t eat peanut butter (I know!!)..but now it’s not nearly close. Nothing beats the real deal 🙂
chelsey @ clean eating chelsey says
I was so jealous of that HUGE PB blob on your oats!! I was wondering how you were able to do that, and then realized it was a PB sauce. Makes more sense now 🙂
Although, who are we kidding? I usually put that maount of PB on my oats every day.
Cathy B. @ Bright Bakes says
I agree with you on the verdict of peanut flour…I think it’ll be fun to play with in my baking and cooking…but as for a topping/recplacement for real PB or other nut butters….not so much!
🙂
Love,
Cathy B. @ brightbakes
lynn (The Actors Diet) says
i’ve really been hearing a lot about that pb flour but i had no idea it was like PB2 – i thought it was “flour” like for baking?!
Amanda says
It looks like you had the makings for a lovely morning! I hope it was.
I have a question for you—I noticed that you didn’t include measurements for your oatmeal mix (which I think is a good thing), but I’m curious if you DO measure the ingredients. You did say “Half tbsp chia seeds” so I assume you did measure that. But do you usually measure the other stuff, or eyeball it?
Oh, and Kodiak mixes finally showed up in my grocery store. I picked up a box to try, and I’m glad I did! They should give you a commission. 😉
Kath says
Good question 🙂
I usually measure the oats, milk, water with a measuring cup to get the proportions correct for cooking. But all the other ingredients are just dumped in/on to taste. I usually write “half a tbsp chia seeds” because I dump in about a tbsp for both Matt and me. So most of it is eyeballed.
Liz @ Tip Top Shape says
I need to start crumbling muffins on my oatmeal. It looks so good!!!
Paige(Running Around Normal) says
Welcome home! That coffee looks gooood:)
My goodness I’ve been seeing peanut flour every where on blogs lately!! I’ve tried PB2, and it was OK. I think I’ll experience this blog trend from afar:)
Kel says
I don’t understand why there needs to be a substitute for peanut butter; I recognize that you were not advocating it here, but noticed it on Emily’s post. She made a comment that when she was in weight loss she chose a substitute.
I think real peanut butter can SO be a part of a healthy lifestyle, whether you are in a weight loss mode or maintenance stage. Real food!
Okay, getting of my soapbox now…
Karen says
Yes, indeed…that was my thought exactly (hence my earlier comment.) That line of thinking makes me cringe!
Namaste Gurl says
Ok– not only does your bfast look AMAZING, but those place-mats….. Do tell me where they’re from 🙂
Kath says
Pretty sure they’re Crate + Barrel
Ida says
Fun Prairie Home Companion reference! I bought some peanut flour too, wish the package were easier to open, but it makes good pancakes.
Colleen says
Does peanut flour have the same protein content as pb? Is there such a thing as almond flour? I am in the “sniff sniff” miss PB category as have a daughter with a peanut allergy
Kath says
I think based on the fact that some fat is removed the proportion of protein per serving is higher.
If almond flour doesn’t exist yet, it will soon!
Hannah says
That does look like a super hearty oatmeal! Peanut flour isn’t available in Australia, but I can only imagine baking with it, not using it as a PB replacement (ugh!)
Gina says
I gotta get on that Peanut Flour. I always eye it up, but I’m never sure how to use it.
heather says
Ugh, PB2 and peanut flour. I used to eat that crap when I was losing weight to try and fool myself into thinking I was having the real stuff. Id rather have 1 TBSP of the real stuff once a year than a cup of that fake stuff everyday. When I see people eating that on blogs it just screams disordered eating to me. And I’m not referring to you.
notyet100 says
it feels so good na to come bck home
Chelsea @ One Healthy Munchkin says
It’s so hard seeing peanut flour all over blogs lately and not being able to have it because of allergies! 😛
