After wrapping up a project this morning, I decided to check out the group exercise schedule at the gym. I was planning to go swimming, but I just couldn’t stomach getting all wet today. But luckily there was a Cycle class that would work perfectly for my timing!
I ate at date before I left for a bit of quick energy, and because I knew it would be a while before lunch. Dates make the best fuel!
The cycle class was just OK – but I did have a great time. I wasn’t the biggest fan of the instructor or music, but I loved the bikes, the video screen that showed us biking through South Dakota (!) and also that the class was only 45 minutes. My attention span appreciated that
. Hour-long classes can drag sometimes. It felt good to get my spin on!But my gosh the bike ride home was tough. My legs are still feeling the burn a bit. On my ride home I realized I should have just biked OUTdoors rather than indoors! It’s so nice out. But then the fact that two different buses kept getting in my way reminded me why sometimes indoor cycle is nice : )
Once home, we made a hot lunch!
I bought some green beans and mushrooms that had yet to be claimed, so they went into lunch instead of having a side salad.
Matt sautéed them up with two small zucchini with Garlic Gold nuggets and some herbs plus some toasted walnuts!
And with my leftover salmon from dinner last night, this lunch was quite the treat!
<3 capers, salmon, goat cheese AND Dakota bread!!
We dined outdoors and noticed – THE LEAVES ARE FALLING OFF THE TREES!!
Check out KERF as one of Fox News iMag’s Top 5 food blogs!
Planting myself in front of the computer for the afternoon – lots to catch up on! Adios!
Beth @ Beth's Journey to Thin says
Congrats on making the top 5 food blogs!! You deserve it! 😀
It is really nice here in DC too. I’m planning a bike ride after work – – can’t wait!
Heather (Heather's Dish) says

rebecca lustig says
capers and salmon make such a great pair! theyre flavors compliment each other very nicely
Michelle (The Runner's Plate) says
That’s funny you were biking through South Dakota. I used to live in SD and it is pretty flat, except the western side is hilly! I wish it was still nice enough here to eat outside!
AllieNic (Frisky Lemon) says
Congratulations! You really deserve it…
I used to not eat dates…because I thought they looked like cockroaches. Boy was I missing out! Love them now…alone or with some almond or peanut butter!
Gavi @ GaviGetsGoing! says
Congratulations on being featured on Fox News iMag!! That’s totally awesome. I agree with you 100% about spinning classes–my attention starts to flag around the 45-minute mark, so a 45-minute class would be perfect! Enjoy your beautiful fall weather–it’s freezing here in San Francisco!
stacey-healthylife says
Wow top 5 that’s amazing. Congratulation on all your hard work.
Allison K says
Congrats on Fox iMag!
Angela @ Eat Spin Run Repeat says
WOW congrats on the Fox feature Kath!! That’s great! I personally enjoy teaching 45 min spin classes better than 1 hour.. you’re right, 60 mins really drags on!
Maddie says
Congrats on making the top five! That’s awesome! Your spin class sounds fun. That’s cool hat they have the video monitors. I’ve seen gyms with that before but unfortunately mine doesn’t have that. Have a good Thursday!
Alina @ Duty Free Foodie says
I am with you on spin class – my absolute cut-off is 50 minutes. And even then I start getting pretty bored around minute 40. Also, I must now go buy smoked salmon, stat. It’s been three weeks since my last bite.
Tabitha (From Single to Married) says
While not a huge fan of the salmon, I must say that the beans look great!
Jessica @ How Sweet It Is says
At first glance, I thought the date was a roach!
coco says
congrats Kath! 🙂 I have no doubt that you’ll win!
Samantha @ Bikini Birthday says
Congrats on being a Top blogger! How exciting 😀
Melissa @ HerGreenLife says
I’d definitely go for the outdoor cycling over the indoor given the beautiful fall weather, but I have been stuck in the annoying situation of playing leap frog with buses. I have to make myself remember that I LIKE buses, because they’re another non-car method that I can use to get places, especially useful when the weather’s not so nice for biking 🙂
Samantha @ Bikini Birthday says
I love the salmon and caper combo.
Amy @ Huffmania says
Oh oh – those green beans look SO GOOD!
Congratulations on being top 5 too! 🙂 That’s great.
Cathy B. @ Bright Bakes says
i agree on the “exercising outside thing”…here in the Northwoods I’ve been running nearly every morning…simply because I know the days are numbered until it’s indoor workouts!
love,
cathy b.

I had smoked salmon for lunch today too. And I just wrote about spinning and why I don’t really like it anymore. www.marcigilbert.com. I used to like it more and agree 60 minute classes make it long!
Carolyn @ lovinlosing says
That’s funny that you biked to the gym to take a cycling class. 😆 It’s beautiful her in SE VA, too, but windy and warm, so I’m gonna hit the gym today, too. I planned on running, but my lower back has been sore all week since my impromptu 5.69 mi. run on Sunday.

Nice job with the FoxNews article. When stuff like that goes out, do you get an email, or do you find these links on searches? (Or maybe some other way?)
South Dakota is really beautiful – what great scenery to bike (indoors) through.

She emailed me 🙂 But I saw it on Twitter first!

Green beans and mushrooms. Such a perfect combination. Your lunch looks lovely! 😀

The classes at ACAC aren’t any good! The athletic conditioning in the morning is the only one worth your time. I quit and switched to the UVA gym. The classes are much better!
Kath says
I’m not allowed inside the UVA gym!
