I broke out my fall-inspired tea towel as well as my Halloween orange Pottery Barn plate in mourning. Fall has left the building; humid summer has returned.
And the AC is back on in anticipation of 98 degrees later this week.
I went from hot to cool!!
Apple Crunch French Toast on the menu!!! Topped with smashed super ripe banana and sunflower butter. Coconut per usual!
I couldn’t decide between one slice or two of bread. I cut 1 big and 1 small. Then ate half of the small as I decided how much to make! Compulsive, but tasty eating.
I decided it tastes too good to not have both slices, so 1.5 were cooked and dressed.
YUM!!!!! The egg:bread ratio was great today and gave this that nice eggy French toast aroma.
The New York Times calls this cold brew “coffee concentrate.” I call it coffee! You’re supposed to dilute with 50% concentrate, 50% water. But that made it taste like water! So I just drink the concentrate. I like things strong + bold in my life.
Today is my day off!! I have no plans other than afternoon dance class and stuffed peppers for dinner. Also, a couple of thunderstorms. The rest of the week is going to be very busy again – Amanda from Great Harvest is coming for a month-open visit and Mom + Dad are coming this weekend! Better chill while I can…

Your tea towel and plate made me all nostalgic about Fall! I don’t know what it is, but anything that reminds me of Fall gives me this warm & fuzzy feeling. 🙂 Even though I definitely don’t want summer to end…and with this crazy heat spell we’re having Fall seems like its ages away.

Nice solution to the bread dilemma – I do that all the time! There’s something s satisfying about having the 2 slices to bit through, but often 2 slice is too much for me in the morning.

Oh! Stuffed peppers. You should try putting them on the grill – I did that about 2 weeks ago and LOVED how they turned out. I’m preparing myself for the heat too – lots of cool yogurt and fruit in the morning.

Does Karen living near to your house make you miss your own parents more or less? You obviously have a great connection with her but I can imagine that it can also be hard when you see your husbands mother so much and think “Damn, I want that too!”

Hmm. I don’t think so. I don’t think if my parents lived nearby they would come over and cook dinner! And they live close enough that I get to see them frequently. It would be fun to go on walks with my mom and have them to dinner, but I don’t mind living far away so when I do see them it’s extra special

56 sounds so nice. I was just thinking how tolerable the weather was here in Texas today….it’s overcast and 95. I nice break from the 100+ weather we’ve been having since May. They say it was the hottest June on record here….and of course I decided this would be a great summer to be pregnant. 🙂

Your breakfast reminds me I have a HUGE bag of coconut at home from when I made carrot cake a few months ago (I hope it’s not bad?? It is in my pantry , it’s unsweetened… and seems to be the same ‘flake’ size as what you’re using) If it’s still good, and I imagine it is…. it is going in my breakfast tomorrow!!
There is no happy temperature medium in my office. When the AC is on, I am freezing, when it is off I open the window next to my desk and it quickly becomes too hot. It’s like this constant battle….. cannot WAIT for this humidity to die down here in Boston!!!

I love strong coffee too! It’s nice to see some fallish colors- I know we are still in the middle of summer (though to be fair, it feels pretty cool here), but fall is my favorit season! I only took about a 2 week break from eating pumpkin, but now I’m back at it as addicted as ever!

I totally agree on the cold brewed coffee! I once diluted it like they said to and it was terrible! I like to have hot coffee in the morning though and iced in the afternoon so I just make double in the morning a refrigerate the leftover. works just as well!
