Can you believe I just finished up lunch at 4pm!? On a normal day I’d be itching for an afternoon snack around that time!! My 10am oatmeal held me over beautifully while I was out and about. I love the weekends because I eat three square meals and fill the time in between with stimulating activities. If only everyday was a Saturday.
Shopping was a success. I got a pair of trouser jeans at Kohl’s 50% off plus another discount for some damage in the form of hanging threads. And I got 4 new bowls – all like 70% off!! At Old Navy I got a few fall things – layering shirts – plus 2 fall dresses. (You’ll see them in the weeks to come 🙂 ) And my 20% coupon was very nice indeed. My legs were SO tired from walking when I got home! I go to this huge shopping center that’s probably almost half a mile long and I park in the middle and walk from one end to the other.
I have had soup in the back of my mind all day, so I created one when I got home. I eat huge salads for lunch all through the summer and love vegetable soups in the colder months. I pretty much despise all canned soups, so my way to make soup in a flash is to use Pacific Brand boxed soups as a base and add vegetables for chew. Then there’s no gross oniony canned taste.
Today I started with Buttery Sweet Corn and added some okra and purple beans (that turn green when cooked!!!) from the CSA.

While prepping, I snacked on a few tortilla chips and Karen’s broccoli pesto spread. The spread was good – it tasted like pureed broccoli and garlic – but it was too garlicky for me!
Plus some frozen corn and lima beans, and some leftover shredded chicken. Seasonings included chilli powder, red pepper flakes, oregano and freshly cracked pepper. I topped it all with a dollop of broccoli pesto.
On the side I toasted a pita and cut it into bite size eating pieces –

And then the mail came with our Race for the Cure gear!!

Banana bread hasn’t happened yet. I might just freeze the bananas, because I am not in a baking mood at the moment.
We’re planning to go to some kind of event tonight at a shopping center with food demos and a fashion show that Karen found. Since I had such a late lunch, I might just have a snack around 6 or 7 and then eat there. Maybe we’ll get some wine after at the wine bar across the street!

I went to Old Navy today too…I always forget how inexpensive it is. I got an adorable sweater with butterflies on it 🙂
How in hades does the same oatmeal you eat each day tide you over SO much longer on the weekend?

Two reasons: 1) Because I eat it 3 hours later (10am this morning) – so it’s false timing. I got 5 hours out of it today, which is typical 2) Is because I am always out and about and let hunger build longer because the kitchen isn’t nearby. So I often get 1-2 hours more just for being out and getting hungrier than I normally would.

Ooh, is that the shopping center with the Target and movie theatre and Babies R Us as well? I love being able to walk from Kohls to DSW (and all the great stores in between) and not have to move the car and get exercise! (hmm, that was a lot of “and”s)

when i freeze bananas i just mash them up and put them in a glad tupperware container. When i need them for banana bread i just thaw and use, works great.

Speaking of bananas, have any of you ever tried frozen whole bananas as a snack? It works especially well with smaller varieties.
I peel the bananas, wrap them in cling film individually, and pop them in the freezer. They become fruit popsicles and have great texture and ‘real’ banana flavour. Definitely very yummy,and great in summer especially!

Kath your mention of banana bread reminded me of these pancakes I made that tasted so much like banana bread, maybe even better! I’ll leave you with the recipe in case the mood strikes you- it’s based on Hannah’s (Bittersweet blog) vegan recipe:
1/2 cup whole wheat pastry flour
1 tsp baking powder
pinch of salt
1 tbsp sugar (I used agave)
1/4 tsp cinnamon
1/2 cup skim milk
2 tbsp banana puree
1/2 tsp vanilla extract
-combine dry and wet seperately then blend together gently (don’t overmix) let stand for a few minutes
-slice what’s left of the banana very thin and then place on top of pancake while it’s cooking- sprinkle a little brown sugar on banana slices (when you flip them, the brown sugar caramelizes on the banana slices and is so good!)
I didn’t even need syrup, they’re so sweet alone!
Nutritional info for these guys are also quite good- around 450 cals, 11g protein, 9g fibre!
