Because I’m flying from one meeting to another!!
How much more efficient [and fun!] would that be!
Got home from a late meeting at 1:30 ready for lunch. I decided to whip up a quick stir-fry.
In general I crave cold lunches – sandwiches, salads, fruit, snack plates – but sometimes a hot lunch sounds good. I knew I had enough veggies to throw together a dish.
I’ve been on a big tempeh kick lately. I had forgotten about it and picked up a package recently and have been loving it for lunches – on sandwiches, salads, stir-fry. I made Matt a lunch today that I took to the bakery this morning and put some crumbled onto a salad for him.
My stir fry was broccoli, pineapple, 1/3 a block of Lightlife’s 3 grain tempeh, steamed in a pan with a few tbsp of water and then tossed with teriyaki sauce. I added coconut butter on top (GOOD CHOICE!) and some chips on the side for crunchy carbs
As soon as I can change clothes and bike over, I’m headed back to the bakery.
Cait @ Beyond Bananas says
Love how you are ALWAYS able to get in a healthy lunch – homemade – with wholesome, healthy foods.. no matter how busy you are. You really put your health first, which is hard to do. BUT AWESOME!
Lisa Fine says
I agree! I’m always really impressed by how many veggies you eat.
I have all the time in the world to make a healthy lunch, but still sometimes stick to lots of carbs and dairy, cause it’s easy.
Jess says
I wish I had the time! Sometimes its not only the cooking time, but the clean up time- or the coming home to dishes that I dread 😉
Julie @ Lettuce Choose Healthy says
i agree! They are also always so colorful! 🙂
Colleen (What's Baking in the Barbershop) says
YUM! That stir-fry looks awesome. I already had my lunch, but your lunch is making me think about this as a dinner option tonight 🙂
Sarena (The Non-Dairy Queen) says
I am the same way with lunches! However, during the cooker months, I like to put hot stuff on my cold greens! I like the hot/cold mix. Your lunch looks delicious! Have a great afternoon Kath!
Kim @ Spoonful of Sass says
Three grain tempeh and pineapple sound like a perfect combo.
Freya (Brit Chick Runs) says
THAT is my kinda lunch! Bar the coconut butter..never had any!
I hope your broomstick wish comes true soon 🙂
suki says
I’m waiting for the day that we have those flying skateboards from Back to the Future. 😉 I’ll settle for a flying car though.
Heather @ Health, Happiness, and Hope says
I agree – tempeh is really good, and totally versatile! And it’s been a while since I had a hot lunch, but they’re always nice to switch things up with. Good luck at the bakery this afternoon!
Holly @ The Runny Egg says
I’m with you — usually I have a cold lunch and then a warm dinner!
Estela @ Weekly Bite says
Yummy looking lunch! Enjoy the rest of your day 🙂
Michelle (The Runner's Plate) says
I have yet to find a way I really enjoy tempeh, so maybe I’ll have to try this! I didn’t love tofu the first few times I tried it, but now that I know how to prepare it, I have it often!
Christine says
That *would* be a fun way to get around. …then you could sweep up the bakery when you get there too!
KathEats says
Ha!!
Grace says
Love these pictures! Looks delicious 🙂
Nachol Lindsay says
Almost like tempeh nachos!
Annette @ EnjoyYourHealthyLife says
BUSY BUsy!! Good luck with that. Tempeh sounds amazing! Your salad looks great
Angela @ Eat Spin Run Repeat says
Sounds tasty! I haven’t had tempeh in a while but I love its interesting texture. I’ve also been eating more cold lunches than hot ones lately now that the weather is warming up, but sometimes hot ones just taste better!! Have a good afternoon at the bakery!
kaila @ healthy helper! says
Hmmm tempeh on salads is delicious! I love that you paired it with pineapple. I love it with sweet stuff….especially jam on sandwiches! Just like you 🙂
Thealogian says
Yummiest tempeh dish I had recently: crumbled tempeh, adobe rice cooked in veggie broth–mix two in wok and add a bit of white truffle infused olive oil. SOOOO GOOOOOOD. Also, since it was a vegetarian/vegan pot-luck, there was a side of grated extra sharp white cheddar cheese if you wanted to put that on top.
chelsey @ clean eating chelsey says
I love hot lunches and cold dinners for some reason! I love a huge salad at dinner time!
RunEatRepeat says
Blue chips make me happier than yellow ones 🙂
Emma (Namaste Everyday) says
that tempeh looks great! I am just realizing I’ve never cooked with it, only purchased it already prepared. I think I need to get me some!
Natalia - a side of simple says
I’ve been meaning to try tempeh. Could you describe the texture/flavor at all for me? Happy “flying!”
KathEats says
The texture is kind of like rice packed into a patty. The flavor is neutral like tofu, with an ever-so-slight earthiness to it
Namaste Gurl says
Yum- looks delicious! Have fun on your broomstick 😉
Caroline @ French Ponytail says
I have to admit I’m still kind of weirded out by tempeh (I was just getting used to tofu!). I think it’s got a pretty good texture though. Speaking of weird meat substitutes though, I remember when I was living in England as a kid, they had something called Quorn? (Actually, I just looked at Wikipedia and apparently it still exists and is actually extracted from an exotic fungus…hmm). Anyway, we ate a ton of it because my sister’s a vegetarian and it was pretty good.
Averie (LoveVeggiesAndYoga) says
stir fry of broccoli, pineapple, and tempeh….mmmm, good!
I need a broomstick too. Is there one available that could fly me over to a spa for the day or the week where I could pretend I dont have 17 things to do…all at once? haha! 🙂
Laura @ Sprint 2 the Table says
Tempeh has been in heavy rotation at my house too. have you tried tempeh bacon? Delish! I also made tempeh “crab”cakes recently – I don’t eat seafood, but was told by friends that do they were pretty good! 🙂
Katie says
I’ve been big on the tempeh lately too! And boy does your lunch look delicious. I have a trip to the grocery store in my future and I think I need to pick up ingredients for a stir fry…mmmm. 🙂
lynn @ the actor's diet says
i just had a hot lunch – it felt so decadent!
Angel7 says
What a hearty salad! Looks filling.

Justeen @ Blissful Baking says
Pineapple is such an awesome addition to stir fry! Looks delicious!
Jil @ Big City, Lil Kitchen says
That looks fantastic – so filling!
Lisa (bakebikeblog) says
oooh yes – I think a broomstick would be lots of fun 😉
Molly says
So with your broomstick statement, is it ok for me to admit that I wish I attended Hogwarts rather than grad school?
Jordan Wandfluh says
So I bought some Tempeh at the story recently and it is just sitting in my fridge. I am nervous to try it and I don’t really know what to do with it. What is your favorite simple easy way to eat it?
KathEats says
On a sandwich with jam!!
Jordan Wandfluh says
Store*
staceyhealthylife says
Even though you are busy must be nice that you can bike home real quick for a nice homemade lunch. And that way you don’t have to pack one either.
Kat @ Cupcake Kat says
A broomstick would be great. It would be much more fun to get anywhere!
This lunch looks delicious
Christine says
At least the one nice thing about your meetings is that they aren’t all in one building. I hate meeting, but being able to move around in between would be nice.
KathEats says
Agreed!
Cait's Plate says
I’m with ya on the cold lunches. I’m definitely a cold lunch person myself but today I had a veggie burger on a whim and it was SO delicious. It pays to mix things up every once in a while I guess!
Chelsea @ One Healthy Munchkin says
I mostly prefer cold lunches too, but sometimes hot lunches just totally hit the spot. Pineapple and tempeh sound like an awesome combination!
Katie @ running4cupcakes says
Coconut butter on a stir fry with pineapple = genius! Thanks for the great idea. 🙂
Miranda @ Working Mom Works Out says
Busy girl and time to cook lunch?! My hats off to you, as always 🙂
Hannah says
Change clothes into a black cape and pointy hat to acoompany the broomstick look? 😛
Khushboo says
I really want to try tempeh- it’s not avail in Mumbai but it will definitely one of my first purchases when I’m back in London over the summer!
Fran@ Broken Cookies Don't Count says
I do stir fries for dinner a lot but never really thought of them for lunch. As big as mine usually are, if I had one for lunch, I’d only need a snac for dinner. Sounds like a plan…I’ll try it. Yours looked really yummy. Can’t find tempeh around here (southern NJ). I’ll have to look harder.
