Fun afternoon + evening! I’m not sure where it all went though. I got a bit of work done. Oh yeah, and made a retake of a video for Goodbite of that "eat the props" recipe (the original take had some fuzziness 🙁 ) I also iced my foot (I still feel like I need to ice my WHOLE BODY!!) and folded a bunch of laundry.
Speaking of props, props go out to Matt for changing all the bedding, mowing the lawn, cleaning the kitchen twice and doing the taxes!! Such a great husband 🙂
We also watched 30 Rock together and before I knew it it was 5:45 and I was ravenous!!!
Luckily we had pasta salad in the fridge ready for consumption, but I also had a huge craving for hummus (and luckily had a big tupperware of chickpeas in the fridge!!) so I made a batch.
I don’t have the recipe because it was literally a "little of this and that" but the ingredients included:
- Chickpeas
- Tahini
- Lemon
- Salt + pepper
- Water
- Olive oil
- Franks Red Hot
- Cayenne pepper
We broke out some of my Dr. Kracker samples to taste and went a little crazy eating them!
This Cherry Semolina flavor is INCREDIBLE!! The tart cherries went so well with the crackers!!
A lovely dinner for a hungry girl!
A serving of pasta salad (I think we got 4 servings out of the last recipe and this time we got 2!) The pasta salad had whole wheat pasta, olives, zucchini, feta, parsley, capers and almonds.
Hummus + crackers on the side!
This was EXACTLY what I was craving for dinner!
After we ate (and watched Jamie Oliver’s Food Revolution episode II and LOVED him!) Matt took us out for a beer tasting.
We went to the Tilted Kilt where the Stone Brewery owner was said to be making an apperance as part of Charlotte’s Craft Brew Week.
Other than the Stone beers, I’m not sure this bar was quite our style. However, we were SOOO glad North Carolina finally passed a no-smoking law this year because we both commented at how horrible it would have been with a cloud of smoke…
We did get to taste all 6 of the Stone beers and chat with a distributor (sadly the owner was not able to make it)
I really wasn’t in the mood to drink. I feel like my body is in super-repair mode and alcohol would just inhibit important processes, but I did have a taste of each beer – I can’t resist trying new tastes!!
I had a giant water after sipping those! (It’s not as much as it looks like 😉 )
I’m so totally pooped. Going to crawl into my warm bed ASAP!

That homemade hummus sure looks tasty. I’ve been using store-bought lately…. and it just isn’t the same. Glad you’re getting some sleep tonight. You deserve it. Congrats again on your run this AM. Very inspiring!
Monica (Musings of The Granola Girl) says
that hummus looks great!! looks like a fun evening 🙂
Cynthia (It All Changes) says
I need to buy some more garbanzos and then I’m going to make hummus. I already bought the tahini.
rachel says
Wow, Matt crammed a lot into one afternoon! I am impressed. Your dinner looks fabulous. Hope you have a great rest of your night!

the tilted kilt looks too fun! my kinda place 😉
jaclyn@todays lady says
Wow Matt was so productive today!
Your dinner looks so delish and I reallly want to try those crackers!! Cherries in crackers-must try!!!
Enjoy your warm bed!!
Lana says
I bought sardines.
I bravely opened them, inspired by you.
I did look down, but that wasn’t so bad (thanks for the warning though!)
The bad part was after “mashing” them -there were bones and some other unidentifiable things that remind me of organs…I put it in a container because I couldn’t deal with it tonight.
Did your sardines have bones and internals, or did I not buy carefully enough?
Kath says
So proud of you!!
But you didn’t follow the instructions: you were not supposed to LOOK!!! Mine have those gross tidbits as well, but they are all nutritious. The boney things are where all the calcium is!! Next time just don’t look. And remember people have been eating them for eons!
Lana says
Okay. 🙂
I mashed a little more today and tasted at tiny bit in a salad.
I think I can work with them.
Can you please re-post how you prepared them? (Did you just stick them on top of your salad or mix them with any condiments?)
You are an inspiration!
Kath says
If you search for “sardines” in my search bar you’ll find all the times I’ve had them.
Allie says
wow, matt better slow down tomorrow so i don’t feel like such a slacker. the tilted kilet looked interesting. the bartenders uniform was a little little!
i also am so glad about the no smoking inside laws. i can remember people smoking on airplanes, and restaurants and bars were the worst- leavng smelling like smoke. a huge change for everyone’s better.
lynn (The Actors Diet) says
i like the hummus flavor of dr. krackers. dipped in hummus? inSANE
clay says
I dont know why i dont make more hummus! That looks so good. I need to venture outside of the nut butter world for different spreads 🙂
Stacey@http://stacey-healthylife.blogspot.com/ says
That looks like the perfect dinner. No smoking in bars is the best. In Oregon you can’t smoke in our around a public place. So you get to go home we no smoke on your clothes and in your lungs 🙂
Mama Pea says
I’d like to come over next time you watch NBC Sitcoms and make hummus, please.
Kath says
If you are ever in NC, you are more than welcome to come and we’ll play for hours!
Lele says
That carb explosion of a dinner looks awesome. And now I want to make hummus!

so i stumbled across these magnificent baby food pouches by Ella’s Kitchen http://www.ellaskitchen.co.uk/stage-1-baby-food/ and they made me and my best friend think of you IMMEDIATELY!!! sweet potato, pumpkin, apple, and blueberry?!!?! broccoli, pears, and peas?!?! add that to your oatmeal and eat it!!
couldn’t wait to share that find with you 🙂 seems right up your alley… who says it has to be specifically for babies?!?!
Kath says
Those are so cute!!!!!!!! Homemade baby food already made for you 🙂
I’ll keep my eye out for them. Might make a good smoothie ingredient!?
Lauren says
Hummus looks amazing! I’ve never made my own before, but now I want to try…
Have a good night!
Mae says
Hummus is the easiest thing to make… ever, and it costs so much to buy it prepared! The beer tasting sounds fun, I know what you mean about new tastes- I can’t resist trying something different!
Congrats on the run by the way! What an accomplishment. 🙂
Kalli@fitandfortysomething says

Allie (Live Laugh Eat) says
I’ve only tried the apple Dr. Kracker crackers but they went SO FAST. Whew! I bet that cherry is da bomb.
Krystina says
I REALLY want to make my own hummus but tahini is so expensive 🙁
Kath says
Just leave it out!!!! It’s really not that much a part of the taste. Or use a nut butter instead like PB.
Angie says
Yeah, leave it out! I bought tahini and was all excited. But it turns out I like it better without it!
Heather @ Health, Happiness, and Hope says
Sounds like such a great Saturday with the hubby. Get a good night’s rest!
Tasha says
i LOVE Stone beers. They are right here in San Diego and I’ve done the tour =)
Erin (Travel, Eat, Repeat) says
I’ve never found a hummus recipe I like as much as restaurant, or even some store brands. Need to fix that though because yours looks awesome!
Heather (Heather's Dish) says
mmmmm, beer tasting sounds great! i need to make my own hummus more often, but i need to make an effort to find tahini first (i know WF has it, but i always forget when i’m there!) hope your body repairs itself quickly 🙂
Mara @ What's for Dinner? says

Dinner looks fantastic and the homemade hummus looks especially good. Nothing beats the satisfaction of a meal that truly hits THE “spot”!
Penny (Blonde Bibliophile) says
Two things……..
1. I would like for Matt to make an instructional video titled “How to be a Wonderful Husband”.
Then I would like for him to overnight a copy to me.
😉
I jest.
I have a pretty good Hub too. 🙂
2. That waitress seems to have forgotten some of her clothes.
🙂
Kath says
Ha x2!

I don’t think you eat enough after long runs.
Kath says
Can you elaborate please?
Freya @ Brit Chick Runs says
That meals looks lovely – I think you definetly needed that after 13miles!!
I’m yet to make hummus, which seems stupid – it looks so easy!
Hope you don’t feel too stiff this morning 🙂
Anne @ Food Loving Polar Bear says
Those crackers look delicious 🙂
Jen says
YUM! Those Cherry Semolina crackers are my favorite!!
Kelly @ Local Foodie Fight says
what am i doing with my life: must get food processor!!! that hummus looks divine.
Angie says
If you have a stick blender for soups/smoothies, you can use it to make hummus too. Takes a little longer, and it’s not quite as smooth, but I use it when I don’t feel like dragging out the food processor and then cleaning it.
Lauren @ A Fit Foodie says
You totally deserved that awesome pasta and hummus meal after your great run! Hope you enjoy your rest day on Sunday. I’ll definitely be enjoying mine. My body is aching for it. Literally. I probably need to do an ice bath but I’m a wimpo too. Brrr. They’re brutal!!
Cole says
That looks like such a delicious dinner!!
Jenn (www.j3nn.net) says
YUM! Your dinner looks DELICIOUS! The pasta salad looks fantastic. 😀

Hannah says
That looks like such a wonderful breakfast – and believe you me, I hear you on the no smoking thing! People haven’t been able to smoke indoors in Australia for years, so spending time in Belgium a few weeks back, where people could in bars and restaurants, was icky icky icky!
Laura says
Hee, the hubby dragged me to the Tilted Kilt here in Atlanta and I don’t think we’ll ever go again! I can’t eat with women’s navels staring at me!
That hummus looks yum, I make mine with a little sesame oil instead of the tahini!
Jil says
Yumm homemade hummus!! That dinner looks amazing!
Jo says
I make my own hummous a lot but substitute the olive oil for low-fat greek yoghurt – its delicious and cuts out all the calories! Although olive oil is good fats, I get enough fat as it is in my diet and I find this a great way to enjoy guilt-free hummous.
I also make loads of variations (experimentations!!!) of it – roasted red pepper, beetroot, pesto, sun-dried tomato, spinach, artichoke, aubergine…. just add a bit of the ingredient to the mix.
cara says
I am glad to hear you love the Food Revolution show. i think of you when I watch it, since I know you have worked in kids cafeteria’s helping out with the nutrition. that must be very interesting from your perspective!
Natasha says
Hey Kath,
I made my own hummus today and posted my recipe on http://theintolerantstudent.wordpress.com. Pretty much used the same ingredients as you and, safe to say, it was amazing!
