Back To School Shopping
The husband and I went shopping together – what fun! We both got much-needed jeans at Kohl’s. It’s funny how I tried on about 10 pairs of expensive Seven For All Mankind jeans last week and none of them fit and today the first pair of $29 jeans fit perfectly. Does that mean I’m not shaped like a designer model!?
I also got 2 pairs of pants at Old Navy and some cute zip bags for back-to-school.
*Note that I did not buy any sweaters or buttondowns 8)
By the time we were done shopping it was nearing 2:30 and we hadn’t had lunch yet!
Lunch
Lunch was bigger than I wanted because I didn’t plan well. Well, I did plan but then the husband made plantains and I had to have some!
But before we get to dessert: we are low on sandwich materials, and since I didn’t have PB or banana for breakfast, this was the first thing to come to mind for lunch= PB + B Quesadilla. I folded over a whole wheat tortilla and slathered one side with 1 tbsp of PB and the other with banana slices. I added a little honey too and toasted it in a skillet. Mmmmmmmmmm
I was also required to eat this grapefruit, which was on its last days. It was a good one! He was huge so I split him with the husband:
Lastly, I had whipped cottage cheese (1/2 c) with jam and graham sticks. Yum!
All served on a pretty white platter for roughly 500 kcal:
Dessert
I mentioned the plantain – the husband sliced 2 small ripe ones that we got at the Fresh Market yesterday and baked them for about 15 minutes and then broiled for another 3-5. Fantastic! We both agreed that they turned out better than any sweet potato fries we’ve made. I drizzled mine with 1 tsp of maple syrup; he covered his in hot sauce. I see a good Kath Eats Plantain Chips video coming out of this!!
I didn’t weigh the plantain so I’m just guessing on calories here, but CK says “90 kcal per half cup of slices” so that’s about what I had.
Afternoon
I’m planning a walk (to Blockbuster), my stats homework (already!), unpacking more antiques from my car, and a yummy grilled dinner TBA.

When you were working toward your weight loss goal how did you determine how many calories to take in a day? Also, how do you determine how many calories you burn at the gym each day? I am sure you have gotten asked this a lot but i was just curious. Glad you found some clothes for back to school. 🙂

Brooke- I think she uses a heart rate monitor to track calories burned at the gym. I'm not positive though!
kath- don't you love when the cheaper pairs of jeans fit nicer than the expensive ones??

random question, but do you ever eat popcorn? seems like it would be a good food for a volumetrics lover… you can get a pretty big bag for only 100 calories! and that's a lot of bites!

Isn't it funny how the whole jeans things works out??? My favorite pants are either 30$ levis or 39$ american rag jeans! Whatever looks good!!!! Your lunch looks YUMMY. i love plaintains!!

I do wear a heart rate monitor. Nothing is completely accurate, but it gives me a pretty good estimate. I determined my calories based on BMR calculators online, CK's recommendation, a BOD POD test, and a consultation with an R.D.

You're right – it is voluminous! But I tend to prefer heavy foods, if that makes sense. I'd rather have 100 kcal of heavy, wet yogurt when I'm hungry than air-popped popcorn. But I do like it and need to remember to eat it more in a combo with a fresh thing like a glass of milk. Thanks for the reminder!

I live in Charlotte, but Charleston is a really fun city too! The husband would love to go into something in the food business if it didn't involve working nights and weekends for the rest of his life. Perhaps we can find something together to do down the road…that would be our dream.

Well I have to admit I'm wearing one right now 😳 I wear them all the time because I'm always FREEZING and need the layers!! You won't find me without a sweater or fleece in the wintertime. Brrrrr!

I could not find whipped cottage cheese in any of our grocery stores or "fresh market" type of stores, so I bought small curd cottage cheese and pulsed it in the food processor. It is the perfect "whipped" consistency now. Thought I would share the tip!
