I spent the afternoon studying and Huck Finn spent it napping and drinking mint juleps!
He deserved it, though, for getting up at 3 and working a 12 hour shift
I found myself digging in the Kashi cracker box around 4pm. I was procrastinating studying!! (Also a little hungry) I had a serving or so – straight from the box. I forgot how delicious they are!
Dinner was another hit: Melting Pot Lentil Stew.
Sippin’ some mint julep while I cooked 😎
I had a slice of buttered rye on the side –
And HE had two butter sandwiches!! I swear he lives on bread. He’ll come home from work and not want lunch and I’ll ask him what he ate all day: bread! I often have to remind him there are nutrients in fruits and veggies that he needs too 😉
I actually didn’t quite finish my soup – the bread was tastier and I left a 1/3 cup or so of lentils on the bottom (ate out all the good stuff.) I was full and trying to eat intuitively!
We are going to watch an Office episode online and then I am getting back to studying. Tomorrow is my long day in addition to the back-to-back tests, but once I chug through it I’ll have Thursday to recover. I’d MUCH rather cram a ton into one day and have a day off than maintain a medium load everyday.
See y’all in the AM!

My fave pick: sippin the drank while cooking! Too cute! Dinner looks fab too.
Good luck with your insane day tomorrow! You’re right, one super-busy day is better than lots of random stuff throughout the week. G’night!

Love the Huck Finn reference 😀
WEEKLY BITE says
Lentils sound so good!
Fresh bread is VERY hard to resist!! I would eat it all day too if I was around it so much 🙂

Mint Juleps and Huck Finn- very southern and makes me very happy 🙂
I love the husbands butter sandwiches…haha!
I hope you have a wonderful night, Kath!
Hallie says
Lentils and sweet potatoes are a great combination, I’ve discovered. I use red lentils and they get kinda mushy, but that’s what I have!
Meg says
Huck Finn looks so comfy! What a great lentil dinner! Good luck with all the studying!
Sharon says
Oh wow, love the pictures!
Sarah (Tales of Expansion) says
i am a procrastination snacker, too. dangerous with kashi golean crunch in the house!
i’m so wanting a butter sandwich right now. i was probably 11 the last time i had one!
Courtney (The Hungry Yogini) says
Yum! The soup looks good! Men can just eat whatever they want can’t they! Not fair!
Christy says
I absolutely love when you include pictures of your yard! I wish I had a hammock to lounge in. I had cravings for bread and butter today too. Yum!
Clean Veggie says

ohh huck finn – i just finished that for english. haha
Maggie says
I love the hammock!
If it were up to Bobby he would just eat rice, all day, every day. I have to make him eat the veggies!
theoddbod says
i simply must get me a hammock!

Lounging in the sun with a drink is one of my favorite rewards! Have a great evening and enjoy the warm temps while you’re out tomorrow.
Biz319 says
I’ve always wanted a hammock! Glad Matt got a chance to rest.
Bummed I didn’t win his bagels though!
I did win bellaeats banana apple bread which sounds equally insulin worthy!!
Hang in there tomorrow – 1 day closer to the weekend!
Leanne says
You’re so lucky to be able to taste all of those amazing kinds of bread! I wish I could always have a selection on hand to make the perfect sandwich… I need to marry a bread baker!
Emily W. says
I hear you about cramming in the studying!
Looks like some great eats!!
Amanda says
Aww, that picture of him in the hammock is so sweet! The stew looks great too. I’ll have to try that recipe next time my hubs is out of town as he won’t eat lentils. Boo on him!
Anna says
Nice dinner! Those Kashi crackers look yummy, I’ve always wanted to try some.
P.S. I just got into watching The Office too…..GREAT hilarious show. Jim is my favorite! <3

I’m the same way! I’d rather spend a full afternoon studying than take 1 hour each day and do it. It’s nice to have a completely FREE day 🙂

That orange candle is so adorable!

I would LOVE to live on bread 🙂 Soup looks great! Good luck with your tests tomorrow!
Sarah says
I love have elegant but clean your eating is!
Can you send some of your nice weather up here to New England?
Meagan says
I agree with what you said about having a hard day and then a day off, rather than a couple of medium days. I love to do that too! This semester I got all my labs on one day – ouch, but it’s so nice to have thursday with nearly nothing to do!

Hi everyone-
I’m so jealous of all the delish food you guys have down South! In Canada we have no TJs and only a few Whole Foods! SO I was wondering if anyone (Kath or commenters) would want to do a bar exchange with me…? I LOVE Kashi GoLEAN Crunchy and Roll bars (oh, and Luna bars!), but sadly have none here… However, we have wide access to every flavour of Larabars! If anyone’s interested, email me at [email protected]! Thanks! 🙂

I just wanted to let you know that I had a Katheats dinner tonight – baked tofu (the one you had a few night ago), sp fries, and kale chips! Thanks for all your inspiration!
Amelia says
Mmm I want a mint julep. Sounds delish right now. I wouldn’t mind a hammock to lounge in either! 🙂

ooh! hammock looks so cozy! Gotta love lentils too – they are amazing!!!

I totally understand the husband’s obsession. I could eat bread all the time, but I have to remind myself I should eat other things too. I can’t imagine working in a bakery.
Ryane says
Ugh, you make me want to move more south so much!
I would love to hammock the afternoon away in FEBRUARY!

My dear husband is a big bread eater too. I think he could live on bread and chocolate 🙂
Andrea [bella eats] says
Mmmm…I had lentils for dinner last night too. I’ve finally got the cooking time down, I used to turn them to mush, much to my hubb’s dismay. 🙂
brandi says
I can’t wait until we put our hammock up now!!!
Looks like a great dinner
Rose says
Bread is so good – I don’t blame the husband one bit 🙂
I’m also envious of how relaxed he looks in that swing – I would kill for an afternoon like that! But I wouldn’t kill for a 12-hour work day… That’s a long time!
skinnyrunner says
good luck on your tests! cute pics of you and hubby!
