About The Dish
Truffle Zest is my new favorite ingredient. It’s an ingredient I would not have had in my pantry if it weren’t for Blue Apron.
The dish featured fregola sarda pasta (like a pearled couscous) with baby spinach, mushrooms, garlic, crème fraîche, verjus blanc, and truffle. Crispy seared scallops were served on top!

Hi Kath! Oh my gosh, that looks delicious. I’ve considered signing up for Blue Apron so many times, and this post might just put me over the top. One thing holds me back – the wastefulness of the packaging. Can you please speak to that, I know you are someone deeply concerned with making good environmental choices. Maybe it isn’t as bad as I’m imagining.

While I do wish it arrived on my doorstep in a cloth reusable bag, the packaging is a little bit unavoidable. That said, Blue Apron has made every effort to minimize packaging and it’s all recyclable. I get deliveries from other brands in much worse packaging (like styrofoam coolers) so I think all in all the best thing is to make sure it gets recycled. The boxes themselves are the biggest piece and I often reuse them for transport or giving to friends who are moving. The product is (for the most part) loose in the bubble cooler so as much of it that can be unpackaged is.
