We’re wrapping up a long afternoon around here. I came home from class to find a package on my doorstep. It seems Chobani would like more Greek yogurt in my life – I concur!! I opened the package to find a selection of flavors – yipee!
I came inside to find the husband just putting a batch of Blondies in the oven. Karen is having a pot-luck party with her friends at her Condo tomorrow night. We’re attending and are in charge of bringing a dessert. After the delicious Great Harvest blondie, the husband decided to make some of his own. They are slightly healthier, but not by much! Here’s the recipe: Lower Fat Blondies.
I licked the bowl
Then spontaneously had 4 bagel chips (Karen brought them over)
Followed by the rest of Kelsey’s Trail Mix bar – yum!!! Recipe is coming soon 🙂
I soooooooooooo did not want to go to the gym today. I seriously considered skipping it, but I did a little pros and cons list in my head. I knew I’d enjoy it once I got there, I wanted that fresh feeling over dinner, it wasn’t raining, I really didn’t have anything better to do other than school work – so I talked myself into it and we dragged ourselves upstairs to change clothes. I really think putting on gym clothes is the HARDEST part of working out. I am always happy once I am there! So we biked there, did a fast 30 minutes on the Stairmaster, 4 upper body machines (including pull-ups) and biked home. Ahhhhh.
After quick showers and sweatpants, we created this serendipitous dinner:
Coconut Root Veggie Pilaf.
We cooked 2 portions of Bob’s Red Mill Grade Whole Grain Cereal on the stove-top.
In the oven we roasted (for 30 minutes 450*) a tiny butternut squash and a medium sweet potato in a seasoning of
- 1/2 tsp garam masala
- S+P
- Sprinkle canola oil
- Sprinkle red wine vinegar
We also heated up a leftover half cup of coconut milk, added more garam masala and poured that over it all. (It had a tiny spot of mold on the top so we were sure to bring it to a rolling boil first!!)
Lastly, we topped it all with some raisins, sliced almonds and more coconut.
I got in trouble during dinner for saying “This is so good!!” 5 times 😳
We watched a little TV afterwards and the husband declared he was going to have a huuuuge bowl of ice cream with 2 of the bars he brought home from Great Harvest – yesterday’s Blondie and today’s Peanut Butter Chip. I said I would accept a small portion if he brought it to me 🙂
His + Hers
Hers up close. I ended up having a small bite of the Blondie too 🙂 (See what I mean about having ice cream in the house!!)
I think we are trading in an early morning workout to stay up and watch The Office. I’m planning a mid-day workout since my only plans are study, study, study!

Kath, would you have felt guilty if you skipped the gym? I used to feel guilty but now I freely let myself skip two to three times a week when I just don’t want to go or I’m too exhausted. You make me feel totally lazy sometimes ! haha
sarah says
the office = worth it!
i am the same way about the ice cream . . . and yet right now i am just WISHING we had some (i have a random mint-chocolate-chip craving) but both of us are far too lazy to make the dream a reality . . .
dinner looks like it was creative and delicious!
Kath says
mh ,
I don’t know if guilty is the right word. When I decide to skip it I am excited/happy with the decision. But today I was on the fence and I just tried to walk you through my thought process.

Aww I wish chobani would love me too! hahaha. You are right about how getting the workout clothes is the hardest part of working out.

Your dinner looks SO GOOD!!!!

I totally agree about the gym clothes – so much effort! I’ve been working out in my pj’s in front of the TV which makes it SO much easier to make myself get up to exercise each morning. It’s so simple – I just stumble out of bed, brush my teeth, and turn on ExerciseTV. Have a good night! Your ice cream looks yummy 🙂
hk says
love dinner 🙂 and blondies, of course!!!
Rose says
I know what you mean about having ice cream in the house! It’s so easy to indulge because it’s right there. Love the his and hers versions 🙂
Maureen says
Whenever I’m not in a workout mood I don’t force it because I end up putting in a half-assed effort and staring at my watch the whole time. Although, the last time I felt that way I had a banana and a cup of coffee and felt great (and had a pretty good work out). Carbs + caffeine… who knew??
Eat, Think and Move says
Dinner looks SO good! I also agree with you about how getting ready to go to the gym is the hardest part. Isn’t that weird?
Justy2003 says
If I work out in the morning I have no problem getting ready. Just get up, put on workout clothes and GO. However, if I wait til the afternoon it’s hard to get moving…and, like you said, hard to even put clothes/shoes on to get going!
zestycook says
Can I have a blondie and get some free food sent to me…. I hope so Kath 🙂
mh says
Thanks for responding Kath! have a great night

hey kath,
I’m just wondering if you could explain where you get your motivation every single day from? I mean how is it possible to never slip up? Do you always think that its not worth it to just splurge? I in no means mean for this to come across rude in any way, I just honestly cant comprehend where you get your drive day in and day out.
Kath says
Grounded Fitness,
I think there are few dinners we make that are worth repeating because there are SOO many recipes and food combos I want to try and too few meals to make them! I do want to make last year’s Turkey and Kale Soup soon though. That one’s a winner.
Lauren ,
I don’t know why you guys think I am perfect because I can point out MANY times in the blog archives where I have slipped up, overeaten, pigged out until I felt sick, etc. In terms of exercise, I have always enjoyed the release of it so it’s never been a problem for me, but food on the other hand, has always been harder for me to “do” normally. As for motivation, I don’t think it can be explained. It’s a conversation you have with yourself and a decision you make. “Is this worth the splurge, is it not?” “How far have I worked to lose 30 pounds/” “How did I get here = eating healthy, daily exercise.” If talking to yourself doesn’t work, put it on paper. I wouldn’t be where I am today without food journaling. And as always, practice makes perfect.

Kath, that is exactly how I am with ice cream. If it’s in the house, I’ll eat it; therefore, I haven’t bought any since my daughter’s bday party in August. When I started healthy eating, luckily our fridge died for a few hours and the leftovers melted. That saved me about 2000 calories over a few days, I’m sure!
Marianne says
Both dinner and the blondies look spectacular. I’m a sucker for anything coconut/curry/root vegetably.
