This was one of the best hours of the semester!! Reading in our Mexican hammock without a care in the world –
We realized it was 7pm and we hadn’t even thought about dinner yet! (Well, that’s not true – I had a few ideas in mind, but we hadn’t started to think about preparing dinner!) I used up the rest of the veggies in our fridge to make this Asian peanut dish
We roasted brussels, a carrot, a tiny bit of zucchini + pepper, tempeh and kale on a baking sheet. The veggies went in first (tossed in olive oil at 425* for 20 minutes), then we added the tempeh for about 5 more, then for the last 5 we added the kale to slightly wilt.
Tossed with whole wheat spaghetti, EarthFare Peanut Satay sauce, coconut and salted chopped peanuts –
Oh, and sriratcha!
Our entertainment this evening was The Kite Runner compliments of Netflix. We both read the book a few years ago, and both enjoyed the movie. Hassan was so cute!!
I was still a little hungry (thirsty? I’m feeling the effects of my long workouts in the sun) after dinner and was craving fruit because I missed out on some at lunch/snack. I chopped up this delightful ripe little pear and nuked it with some vanilla soy milk and topped that with a few tbsp of AgavePlus granola.
Now I’ve moved on to water 🙂
My mom sent me a little spring shopping $$ (yahoo!!) in this cute card! She said the frog “wanted to be on the blog.” Thanks mom!
I’m sleepy and am off to bed. Hope the rain holds off long enough tomorrow to get in a little more time outside!
