LOVE working from home!! It’s just so much more pleasant. Makes me so excited for my future as a full-time blogger and writer and part-time bakery operator!
Breakfast held me over really well. Plus eating a little later always helps 🙂
I worked HARD all morning on my presentation. Lots of research on weight loss pills!
At 1PM I decided it was lunchtime and I had a great lunch in mind!
Leftover lentil soup (on its last leg) and pumpkin and a little chicken broth and spinach and cinnamon and salt and pepper!
Nuked.
With the pumpkin and cinnamon, this was just like oatmeal!! I almost went for a spoonful of peanut butter 🙂
And a crunch plate of apple, almonds and Dr. Kracker Seeded Spelt
More tea!
Souper filling!
Check out this fun video mom Emilie made with her kids being enthusiastic about vegetables! I hope I can be that cool of a mom 🙂

I’m off to the office!
Anna @ Newlywed, Newly Veg says
Love that bowl!!! So earthy!
Kath, when you talk about being a writer, do you think you’ll always focus on doing shorter, free-lance stuff, or is it a goal of yours to someday write a book? Just curious!
Kath says
I do hope to write a book – but I’m not ready quite yet!
Megan (bites of the apple) says
Working from home is AWESOME!! I’m jealllous!!
I bet you’re getting excited for your future as a part time bakery owner/worker!!
Leslie @ Chomp! says
my eggs and toast looks so pathetic hahaha
Katy (The Balanced Foodie) says
I would LOVE to find a job that would allow me to work from home! Full-time blogging/writing is something I hope to be able to do one day but until then, the search goes on. 🙂 I am so excited for you and the new bakery endeavors!!
Heather (Heather's Dish) says
that plate is SO awesome! i love the design and the fabulous orange color 🙂 sounds like a wonderful lunch…i can’t wait til you’re a full-time blogger/writer/bakery owner too 🙂
Freya @ foodfitnessandfreya.wordpress.com says
Luurvly looking lunch!!
I really like working from home too – I can take regular little breaks and go for walks and have my own schedule – get SO much more done, whilst keeping sanity!
I’m glad you’re having a productive day 😀
Sarah (Running to Slow Things Down) says
I love working from home too, but would definitely need to get out once in a while to work with people. Owning a bakery *and* writing at home sounds like the best of both worlds! 😀
Ameena says
I love the pumpkin addition, even though I am not a fan of pumpkin! Sometimes the foods you eat make me rethink my own dislikes. 🙂
I love working from home too!
Karla says
That’s such a creative combo!
That video is just adorable!!! I love it when parents get their kids excited about veggies!
Meg @ Be Fit Be Full says
So jealous of your ability to work from home. Three more months and no more 9-5 in an office for meeee! Such a cute video 🙂
Anne Marie@New Weigh of Life says
Working from home is the best! I wish I could do it more often.
Jessica @ How Sweet It Is says
I would do anything to work from home!
Christie @ Honoring Health says
I hope to be working from home by the end of this year. I have some things in the works that I hope will get me there.
Mara @ What's For Dinner? says
If I could be a video-teacher and work from home, that would be fabulous on some days 🙂
Estela @ Weekly bite says
Lovely looking lunch! I love working from home too! Its so freeing!
Ashley M. [at] (never home)maker says
Looks delish! Can’t wait to try it. I heart canned pumpkin so much, and it’s not just for fall. Thanks for reminding us of that 🙂
Hillary says
I didn’t know you want to be a full-time blogger/writer. Are you becoming an RD to just make you more reputable with the letters after your name? You don’t actually want to work in an inpatient or outpatient setting???
Kath says
You make it sound like a bad thing!?!?
Tons of RDs don’t work in clinical. Many are food writers or own private practices or do consulting or speaking.
When I went back to school 2.5 years ago I didn’t know what my future would hold. I had just started KERF and Matt was working in insurance! Life changes 🙂
Hannah says
Weight loss pills ahve always scared me. Will we get a brief summary of your presentation? I’d love to see what your research has found!
Kath says
Summary = there is not a single weight loss pill that research would support recommending!
Hannah says
That’s what I thought, and hoped, to hear! they really freak me out… 😛
Sarah says
I love that orange plate! It would look great in my newly re-decorated kitchen 🙂 Do you happen to remember where you got it?
Kath says
Pottery Barn!
Sarah says
I am very jealous of your future profession(s). You are really inspiring! 🙂
jaclyn@todays lady says
Mmmm you’re right, souper looking lunch!! Sounds like a productive day too, that’s always so satisfying!!
Jules @ eatdrinklivelearn says
You always do such creative things with leftovers! Very impressive. 🙂 I’m definitely envious of your work-from-home schedule, too!
Kristilyn (My 29th Year) says
Yum, that lunch looks amazing! You’re so good at just adding things to leftovers and making them look (and I’m sure, taste!) delicious. How do you do it?
I would love to work from home … unfortunately, I don’t know what I could do! I like the idea of being home with my puppies all day, having the flexibility, and just being alone. LOL! Is that sad?
K
Allison K says
I too am jealous of your future occupations. What do you want to write a book about?
Kath says
A Modern Girl’s Guide To Healthy Living.
But I have NO IDEA what to put in it.
Actually I have LOTS of ideas, but I don’t know if other people would want to read them. Or how I’d organize them. Recipes too!
ari says
judging by how many people read your blog, i’d be fairly certain that A LOT of people would want to read it! 🙂
Katherine (Localvorious) says
Love the lunch combo – you have such a great way of combining foods I’d never think to put together that sound amazing!
I hope you do write a book – I’ve learned so much from you about nutrition and real foods. I’d love to pass the book on to others.
Rachel (suburban yogini) says
I used to love working from home too, especially as Himself also works from home.
Right now though I am working away from home for a while, but it’s all in a good cause – I’ll be back home in the not too distant future – YAY!
Dorry says
Hi! I’ve been reading your blog for a few weeks and really enjoy it! I eat in a very similar manner but it is always nice to see how someone else mixes and matched our favorite foods in a recipe. Just wanted to say hello and thanks for blogging!
Dorry from Dallas
Kath says
Welcome Dorry!!
Lisa @bakebikeblog says
What a yummy looking lunch – I need to start being more creative with my lunches – and leftovers make a great base 🙂
Simply Life says
oh that video is adorable!
Monica @ Musings of the Granola Girl says
I love all your plates and bowls.. how cute!
& your future career sounds exciting! will you be managing in the bakery or actually baking?!
Kath says
More community relations and PR than baking, but I will be working IN the bakery for sure, especially the first year.
Lauren @ eater not a runner says
Working at home is the best, if it was up to me I’d never go back to my office 🙂
Fallon says
What a cute video!! I’m sure you will be a cool mom when you have children one day!
Christie says
Sorry to be off topic but do any readers of “Eat, Live, Run” know what’s going on with Jenna’s blog? Am I the only one having trouble?
JessicaE says
No I’m having trouble as well.
Jessica @ The Process of Healing says
I saw on Twitter that her blog was hacked last night so it’s down right now
Kath says
She got hacked 🙁
Jen says
I am dying to work from home once I have kids – just trying to figure out a way to do it! I am totally making that soup next week, I have the mix in my cabinet!
Stacey@http://stacey-healthylife.blogspot.com/ says
Looks like your having a productive day 🙂
Heather @ Health, Happiness, and Hope says
I’m totally with you on the “working from home.” I plan on pursuing a career teaching yoga, but I definitely will value the time I’ll be able to spend at home, writing and preparing my classes.
Love this lunch! 🙂
Jamie says
I’d love to hear what you’ve found out about the weight loss pills; I’m sure there are SO many myths to debunk!
Jacquie says
It’s funny you posted that video about making veggies fun. I was talking to someone after yoga this morning who’s a mom and said that she give her kids “broccoli pops” which are basically cooked broccoli that she slightly freezes. She tells them not to tell Daddy that they were allowed to have it before dinner and they think it’s this cool, secret thing and something decadent when it’s just broccoli 🙂
Kath says
Oh how fuN!
Tara says
I never would have guessed pumpkin on lentil soup.. YUM!
Suzanne says
Hi Kath,
I can’t tell by your picture, but do you store your pumpkin in the can and refrigerate?
I hope not, because I’ve read that it’s really bad to do this because it’s more prone to bacteria!
Kath says
I usually put it in tupperware but didn’t have time. I’ll do that tomorrow!
Suzanne says
oh good! Just looking out for you! 🙂
ari says
i’m upset that we don’t get to see your presentation!! you should post it up here 😉 (i know, i’m pretty sure you said that you can’t but i’m still jealous!)
Jessica @ The Process of Healing says
Gosh I would LOVE to work from home. You are so lucky Kath, but you’ve worked hard to get there I know!
Your lunch sounds fantastic!
lynn (The Actors Diet) says
i bet PB would’ve been good w/ that lunch!
Cynthia (It All Changes) says
Sometimes you have the weirdest combinations. Makes me want to be more adventurous with food.
Katrina says
I know this is off topic, but I’m wavering on buying the nutzo. I love almond butter and cashew butter. I HAVE to have something crunchy in my naner oatmeal or I can’t deal with the consistency. I usually add granola and some sort of nut butter. I think Nutzo would be right up my ally. I think I just talked myself into buying some. 😀
Being excited about what your future holds is a treasure. I felt that way during student teaching and after 11 years, I’m still excited about what I do. Enjoy the rest of the week!
Kath says
Ifyou love crunch, you will love it!! Also those Vega bars are totally crunchy!
Pam (@ TotalHealthCounseling) says
Great video! Love that the kids helped make the smoothie and enjoyed it so much 🙂
lauren says
I need those whole wheatey looking buns… WHAT are they!
