I can’t stop hiccupping! Matt must have put something in my lunch 😉
After procrastinating and moping around about this freezing cold, raining day, we finally got up the energy to make it to the gym. Thankfully it had stopped raining and we biked (not sure I would have if I’d been solo!).
But since it was 1pm before we left and I was getting a little hungry (but remember I had a late breakfast around 9:30) I had a handful of Cranberry Pecans and Dried Raspberries to tide me over. Worked like a charm to get me through a 3pm lunch.
After our 15 minute bike commute, I spent 30 minutes on the ET, followed by a nice upper body lifting session. For ONCE I enjoyed lifting and would have stayed longer if I didn’t start getting hungry!
Lunch today was a joint effort: Lemon Dill Tempeh Salad.
Step 1: Lots of chopped veggies (bell pepper, cuc, carrot, jalapeno)
Step 2: 1/2 a block of grain tempeh, chopped
Step 3: 1 heaping tbsp mayo, juice of half a lemon, 1 tsp dill, salt + pepper
It reminded me of potato salad! The tempeh was a bit hidden, but it was still delicious.
I ate my portion with a few corn chips –
And had a giant leftover grilled veggie, avocado + feta salad to complete the meal –

The hiccups are gone!!

I like the comparison you make to nesting dolls in your article – great metaphor.
Marisa (trim the fat) says
BOO! That’s just in case the hiccups come back ;P
Interesting recipe with the tempeh. Love your grilled veggie salad!

That tempeh salad sounds amazing!
Sarah (lovINmytummy) says
I think the second best way to eat tempeh is hidden. The best way is not to eat it all. I just don’t dig the birdseed/suet/feet block, but I’m glad you like it!
Courtney (The Hungry Yogini) says
haha my Mom gets hiccups EVERY SINGLE TIME she eats! It’s insane! THey are definitely no FUN!
What a yummy lunch! Enjoy the rest of your day!
Kristin @ Iowa Girl Eats says
Mmmm avacado makes everything better! Hope your hiccups go away soon!

Kath,
Your post on Gather is wonderful and I really enjoyed reading it. Thank you so much for posting the link. My body is my best friend too!

Creative salad! Sorry about the hiccups.
My oatmeal + fruit + tea breakfasts usually last me until about 12:30 or 1:00 – never 3! Maybe it’s the toppings; I usually eat my oats plain. Different strokes for different folks.

I really enjoyed your post on Gather. I’ve repeatedly beat up my body over the years and just started blogging about my journey of losing weight, and taking better care of myself.
You’ve been a great inspiration! 🙂

I got those cranberry pecans. They’re really good!!

Good job on the gather post . Great insight on not seeing our bodies as a possesion to be adorned.
Kristan says
Sorry about your rainy day and hiccups Kath! Glad they’re both gone now. 🙂
Hallie says
Haha blogging = the cure for hiccups? Who knew 🙂
Great Gather post…it’s so sad when our body image or weight affects our personality. I know I’ve been a little less “me” since my recent weight gain (of maybe 5 lbs) and I want to get back to the “old” me who doesn’t stress about body issues all the time.

Lovely tempeh recipe! What brand do you use?

Maybe you drank the selzer too fast? It happens to me all the time with selzer in the can! Drink some body temp water and it should help them.

That tempeh salad looks like a salad I get at the WF salad bar that I love. Hopefully I can recreate it now.

your veggies look so good. I loathe hiccups!! they are horrible!!

I absolutely love your article. It was some amazingly creative thinking and writing. I reread it and do agree with what you say.
So many times I concerntrate on how fat my thighs are or how I weigh ~4 lbs more than what I want and forget how thin my waist is or how lucky I am to be healthy, esp considering that I put in a lot of hard work to get there.
That does not mean that I won’t work towards stronger thighs. I will still do my 100 squats and lunges but I just need to remember that it is not the end of the world.
We need to love our body – it is the only one we have.
Heather says
Love the tempeh salad idea… looks amazing! Where is the tempeh located in a grocery store? I’ve tried looking for it and couldn’t find it!
Another quick question… what can I do with tahini? I bought some to make hummus, but since it only called for 1 tbsp, I’m left with a huge full jar and no idea what else to use it for!
Thanks!

The tempeh salad looks awesome!

HATE hiccups! scrumptious looking salad!

I’ve just been reading your about page and it really hit home. Your before photos are how I look at the moment and your after photos are how I want to look. I seriously didn’t think I could do it (I used to be 180lbs so I’m a lot slimmer than I used to be but still not happy) but now I think I can. You actually make me want to get off my bum and do something about my weight! Thank you so much.

Such a lovely article, Kath. You really do have a good way with words and expressing your feelings. There are some great concepts in that piece, and I’m definitely taking some of them to heart. 🙂 I love my body, too!

looks great. the color and presentation do SO MUCH for making a healthy meal look enjoyable to eat! Sometimes even when things taste good and are good for you, it’s hard to feel motivated to eat them if they don’t LOOK like the taste good!

You know what always gets rid of my hiccups? Eating a spoonful of peanut butter. It works every time!

Great post on Gather! I agree, I’ve come to love my body and even the things I used to hate. I realized that I’ll never have skinny little legs, but they can carry me through a half marathon and I’m grateful for that!
Hope you get some sunshine soon!

I have the hiccups right now too. Seriously most annoying thing ever.

I’m probably about 10-15 lbs heavier than my ideal weight, which I define as the weight that looks best for my body frame. Who doesn’t want to be thinner, right? But I have never have been able to maintain this ideal weight for more than a year at at time. In the meantime, I keep plodding along with my running and attempts at making wise food selections. Even with the 10-15lb of extra flub, I’m happy and know that this body will carry me through races and other endurance sports. It is possible to carry a little excess baggage and be truly happy too.

Kath- great Gather article. You have an insight that I believe is so important.I think women often try to meet this societal or self-imposed expectation of a body type that doesn’t even necessarily exist. I wish you could bottle up the sentiment from your article and sell it! Thanks for some great thought-provoking reading!

Love the tempeh salad. I just tried tempeh the other day and it was pretty good.

I get the most obnoxious hiccups and I can’t help it. It’s horrible. Once in grade school I was put in the corner for it as my teacher thought I was just being silly.

Thank you! I never in a million years thought I had that much weight to lose, much less that it would ever come off, so do know that it’s possible! Best of luck.
Jennifer ,
The sweet potato ones are by far the best!!!

Hi Kath – love the tempeh salad idea. Do you use it straight out of the package (raw) or do you marinate and/or steam first?? i have only made it pan fried or baked.
You always provide us with amazing food ideas – thanks 🙂

I HATE hiccups. I get sooooo annoyed by them. Usually a spoonful of sugar [literally] does the trick for me, but it doesn’t work for everyone.
