I dressed up in my professional clothes today to go talk about bread to two elementary school classes! I went down to Great Harvest this morning and picked up my supplies and then came home for a quick pre-noon lunch so I could get on my way. I wasn’t terribly hungry yet AND my lettuce had turned brown, so I ended up serving hard-boiled eggs over a kale + bean + veggie sauté.

My school visit was very fun. Kindergarten is such a fun age! Ms. Kate is a blog reader who invited me to talk about healthy eating through the lens of whole grains, so my subject was how to make bread and the difference between white + whole wheat flour.
I brought wheatberries, freshly ground flour and bread to visualize the process and white flour to talk about how it’s just a portion of the whole grain [using very simple kindergarten language!!]
They actually understood it really well, and they asked excellent questions!!
We ended with a taste test of Honey Whole Wheat. I’ve never seen so many kids love whole wheat bread in my life. It sure is a winner. They were so cute.
Back at home, ready for a snack before I hit up yoga with Seamane on this rainy, rainy day.

My MIL teaches at a Montessori preschool. Yesterday, my husband dropped off some of our latest batch of 100% whole wheat flour, multi-grain bread for her to try. She ate it at lunch in front of her kids, and they all wanted to know what it was, so she cut a piece into small chunks for them to try — they all loved it 🙂 Who says kids don’t like/won’t eat healthy food?

That would be so fun to go talk to Kindergartners, I love hearing the things they say and the questions they come up with! Kindergarten was probably my favorite year when I was growing up, I weirdly have so many specific memories from that year compared to any other!

My eight year old could teach nutrition classes. Unfortunately, I have taught her too well, she often corrects her teachers on facts about where calcium comes from. She says, “calcium is a mineral, it comes from the ground, not a cow”!

what a fun day! i have always wanted to be a grade school teacher, but sold my soul to the devil and went to law school instead. i love how kids’ brains are like sponges… they’re ready to absorb anything!! it’s also great to hear teachers are conscious of and teaching the importance of good nutrition.

How cute!! I love that age too. I used to want to be a teacher, and I would’ve wanted to teach Kindergarten. I think it’s so great that you took the time to educate the kids on how delicious healthy eating can be. Personally I feel that they have to be shown from a very young age onwards that healthy eating can taste good too. I’m sure you had a fantastic time!

I love eggs. I’m just coming to this realization, and it makes me feel so…satisfied to see that you have them so often. My husband is a scientist and he often does a “hygiene” lesson for kindergarteners. They put their hands on petri dishes (one kid washes his hands for control and the other rubs his in the dirt for another sample), and two days later come back to see what grows up! Always quite interesting! Last time he did our beagle’s paw, and it was pretty clean! I’m not surprised you had fun.

I love the kindergarten age too. I remember volunteering in a kindergarten classroom back in high school and I used to get such a kick out of the kids. They say some pretty funny things. 🙂

Put them in cold water. Bring to a light boil. Turn off heat and cover. Let sit for 13 minutes. Plunge into cold water.
Sara Moulton told me this (in person!!) from Julia Child’s technique and it works like a charm!

I’ll have to try this method, Kath. What I do is put them in a pot of water, bring to a rolling boil, then take them off the heat and set a timer for 26 minutes (you’ll like that part, lol). When the time is up, I drain the pot in the sink and run cold water into the pot X 3. I fill the pot and dump it twice, then let the eggs sit for about 10 minutes in the third pot of cold water. From there I dry them off and put them back in the carton in the fridge (I mark them with a Sharpie if they’re in a carton with fresh eggs) Great way to have an easy grab & go breakfast during the week!

Do your hard boiled eggs peel easily? Back when I was at home, hard boiled eggs always peeled so easily! Now, whenever I make them it’s such a pain to peel! Maybe the eggs were different in California? Who knows. Any tips for soft yellow yolks and easy peel-a-bility is very appreciated!

I think it’s all about how they are cooled. You have to cool them and let the skin retract

My foodservice professor said that older eggs peel better, because the shell is thinner. So this is one time you don’t want to buy the freshest case of eggs!

a different method that works perfect for me every time. fill a pot with water and bring to a boil. carefully lower eggs into the pot (either room temp or straight from the fridge…doesnt matter). set timer for 11 minutes EXACTLY. pull the eggs out and stick them in a bowl of cold water. enjoy 🙂

I love that you went to the K class! I teach 1st and would love someone to come talk to them about healthy eating. We have a grant at our school this year for healthy and unusual fruit/veg. snacks 3 days a week. We are really pushing good /healthy choices and habits. I ate a yummy hardboiled-egg-topped salad the other day: arugula, warm chickpeas tossed in a modified Bittman recipe for warm dressing, red onions (sorry, Kath! too), diced tomatoes, avocado. So, so good.
