From Body Pump to the bakery, I found myself stuck here helping unload our first ingredient order and hungry as a hippo for lunch!
I’d already done some organization
The question was: do I bike home for lunch only to come right back, or do I just find something to eat here!?
A shower could wait
The obvious solution was to get one of my favorite bean + tofu salads from Cville Coffee next door. The only bad part was using a Styrofoam container : ( If you love beans, you’ll love this salad!!
I got hungry Matt a sandwich as well
And because they’re awesome – two honey bunches for dessert!
Another bakery picnic for two!
I’ve got a few more things to wrap up here and then I’m heading home to have a relaxing Friday night. Tomorrow we have 2 events planned, so it will be back to busyness.
Donna @ Love, Run & Travel says
Lol busyness, love it!
Good luck with your 2 events
I would very much like to reach through the screen and eat that salad, mmm beans 🙂
Holly @ The Runny Egg says
That salad looks delicious — good choice staying at work to get more done. Showers are overrated anyway 🙂
M says
Your salad looks much more filling than Matt’s lunch…
was he hungry later?
KathEats says
Well later has only been 30 minutes. I just asked him if it was filling and he said “YEP!”
Heather says
I always prefer to push through and get things done – even if it means a shower has to wait.
That salad looks delicious – I love lots of beans in my salad.
Enjoy the rest of your day!
Miranda @ Working Mom Works Out says
That salad looks good. Maybe I’ll make one tonight for dinner!!
I can’t even imagine how busy you guys are!!
Freya (Brit Chick Runs) says
Ooh what’s a honey bunch when it’s at home!? They look adorable!
Lindsay says
styrafoam is recyclable where i live!
you should look up and see what places in the area take styrafoam!!!!! 🙂
Kate @ NaturaStride says
Hi There! I had to reply to your comment because just yesterday I had this conversation with my husband – he threw some styrofoam from a package we had delivered into our recycle bin and I said “Hun, that’s, like, an oxymoron, you can’t do that.” I had no idea that it actually can be recycled?! Will have to research this!! Thanks!
Ellie@fitforthesoul says
interesting! I just learned something new! 🙂 I don’t think there’s anything like that in CA though~perhaps.
Natalia - a side of simple says
All that stuff at the bakery is looking like a body pump class in the making 😉
Baking 'n' Books says
Do you bike with a backpack? You could just carry a lunch with you as well in case of emergencies/change of plans. Definitely would save time! I’d want that salad too though 🙂 Does Matt always stay at the bakery the whole day though usually?
Mary Frances says
Well, once the bakery opens, they can just be their own best customers 🙂
Baking 'n' Books says
True story! 🙂
Shannon says
If you’re concerned about the styrofoam, couldn’t you keep a similar sized container or some dishes in your office and have Cville Coffee load that up instead (I realize there might be some H&S regulations that prevent that). Or do they serve their food on dishes if you eat in? Maybe being neighbours you could take their dishes and return them when you’re done?
missy says
I was about to suggest the same thing. 🙂
KathEats says
Normally I would but this was totally unexpected and last minute.
Sabina says
I was going to suggest the same thing! I have one that’s compartmentalized, so it’s perfect for a meal like Kath has (I like my food separated 😉 ).
Claire @ Live and Love to Eat says
That salad looks excellent – I’m more likely to buy a salad like that than to make it at home when there are so many ingredients.
Pat says
Ha, just what I was going to suggest! When I worked upstairs from a restaurant, they were always agreeable to us taking dishes to our office.
Haleigh says
The bean + tofu salad looks delicious! I usually don’t eat salad unless I’m out. It’s so expensive to create a salad with various toppings at home.
Gina @Runningtothekitchen says
That’s a lot of wheat!
The salad looks great. I love lots of beans in salads, makes them so filling.
Angela @ Eat Spin Run Repeat says
Hehe I have a feeling that many of your future lunch photos are going to be taken at that table! Nice organization of the labels! 🙂
Angel7 says
You will probably have a lot of lunches at Cville Coffee, since it right next door to the bakery 🙂

KathEats says
Oh but soon we will have our SANDWICH ingredients!! And we hope to do salads too!
J3nn (Jenn's Menu and Lifestyle Blog) says
Salad looks delish. So does Matt’s sandwich. I’d have a hard time choosing one OR the other, haha.
Katherine says
Hey, I have been following your blog, and I am getting my blog up and going. Added you to my blogroll 🙂
KathEats says
Thanks!
Averie (LoveVeggiesAndYoga) says
Your lunch looks great as does the organization you’ve done. I love that no matter what, you always stay neat and organized and don’t let stuff just end up in random spots and everything has a place!
Enjoy your relaxing Fri night!
natalie (the sweets life) says
ahh catching up on your last few posts and your bakery is looking AMAZING! so excited for you guys–it’s been so fun to watch the transition from a dream to a reality! keep it up 🙂
Sarena (The Non-Dairy Queen) says
Just think, soon, your food with me there! Have a great afternoon Kath!
Meredith says
Which sandwich did you get Matt? My fave is the Berry Turkey, but I should probably try something else there too… maybe even a salad *gasp!* 😉
KathEats says
That’s what I got him!
Chelsea says
How exciting! I bet Matt can’t wait to do some baking….and waking up at 3 am!
Nowel says
The bean salad looks awesome, But those beans would be killer on my stomach
Emma (Namaste Everyday) says

Michelle (your girlfriend for fitness) says
That salad looks delish! I wish I had some cool delis or bakeries near my job 🙁 Honey bunches sound awesome right now 🙂
lynn @ the actor's diet says
that’s a lotta wheat
Ash @ Good Taste Healthy Me says
yay for organization! I second the comment above. I want cool delis and bakeries near my job too!
Jessica says
How is Matt feeling? Is he nervous to be in charge of baking everything for the big open? I know he used to work at GH so he knows what he is doing, but it’s one thing to work there and another to be fully in charge and work there. When is the official open? I am pulling for you guys!
KathEats says
He’s feeling good! He doesn’t have to bake everything – we have hired a dozen employees for that. And we have at least 4 Great Harvest team members coming from corporate to help us with the opening, so that’s great too. Hoping for June 3!
Mama Pea says
I’m impressed you spelled receipts right. I didn’t and just had to fix it.
KathEats says
It’s taken me 28.6 years…

Food’s way more important than smelling nice anyway. 😉 Especially if a monsterous salad like that’s up[ for grabs!!
Morgan @ moments of mmm says
Trying to imagine all the things you guys are doing right now makes me dizzy! I can’t imagine organizing, unloading and completely preparing a bakery while blogging 3x’s a day! You are quite amazing Kath…can you lend me some of your energy?
Molly @ RDexposed says
I’ll take a honey bunches for dessert too, please!
Elena @ GagaForGrapefruit says

Jen says

Chelsea @ One Healthy Munchkin says
I always feel bad about using styrofoam containers when I get takeout too. I was thinking about starting to keep tupperware in my car to use when I get takeout.
Andrea @ The Skinny Chronicles says
I love beans in salad! Especially with a splash of shredded mozzarella.
Becky says
Hey Kath. What is the name of the owner of C’ville coffee? Is it Charlie?
KathEats says
Toan! He’s cool
Becky says
Thanks. Will look forward to meeting him. There’s another coffee shop somewhere in C’ville owned by a man named Charlie. Not sure of the address, but he’s a client of mine.
Khushboo says
Pssssh who says veggie meals are boring!!
Katherina says
I only found your blog recently and I have to say I’m devouring these bakery updates – how exciting!!
