What. A. Summer!!!!!!
It all started with the end of exams and a wedding in Charleston…
OPRAH rocked Duke!! (And Happy Mother’s Day)
Followed by a double-decker graduation celebration in New Orleans and Bermuda!
The Yellow Rose Party was a debacle…
I finally got to meet Meghann in Asheville!
We ventured to Florida for a wedding + reunion….
where I ate too much of this!
We fell in love with Charlottesville
We took the yankees Tina + Mal on a Southern vacation to meet Erica and Josh and Frank
Chicago and BlogHer festive as always
[Can’t believe I am still going here!!!]
I traveled to Baltimore to see Gram + Pop
And last but not least, the summer ended with a mountain of a Summit!
It was probably the best summer of my life (go 26!!!!) but boy am I glad it’s finally over! Goodbye summer, hello normalcy!

I got some good work complete this afternoon and you guys were right – My intuitive eating caught up with me and I wasn’t hungry all afternoon!
Until cocktail hour when Matt presented me with this –
We got this Coney Island Lager at a tasting at Total Wine. Love it! Even though I had a tiny glass, it was high alcohol and I was feelin’ it by the end!
So thankful for my husband, who made the whole dinner!
It rocked!!!!!!
Red lentils cooked to a pile of delicious mush, brown rice mixed with Grande Grains from Bob’s Red Mill and Coconut Red Curry Eggplant with kale from our garden!! (Yes, that’s right, about 5 leaves grew:…
The eggplant was cooked in a can of lite coconut milk spiked with 1 tsp of Thai Kitchen red curry paste with the kale. The eggplant cooked down and turned into MARSHMALLOWS!! Best eggplant I’ve ever had.
The two sides complemented it well, as the red curry paste was super spicy. Love the grains too!
Such a nice filling meal.

This post took me entirely too long and I still have a lot to do. It’s pretty fun, though, that my classes don’t start until 2PM tomorrow so I have the whole morning to myself to get organized!

Eggplant! I had an eggplant sitting around on my ‘fridge for the last two weeks because I didn’t know what to do with it. That curry looks AWESOME. When the next eggplant comes in my CSA, I know exactly what to do!

Thanks to Matt for the eggplant recipe. I sauteed eggplant last night because I couldn’t think of anything tangy to do with it.. I will definitely have to try this!
