Don’t go chasing waterfalls….
Salad extraordinaire –
- Spinach base
- Microwave-steamed broccoli (it tastes too iron-y for me raw so I nuke it in a little water for 1 min)
- Green pepper
- Sprouted mung beans from Emily (go to The Front Burner for sprouting details!)
- Chunky, creamy bleu cheese
- TJ’s Cilantro Jalapeno hummus
- Sea salt

I loooove raw broccoli, but I love the trick of microwaving any veggie with some water to soften it up. I do that with red onions a lot!

Safe travels lady! I am such fan of the TJ’s jalapeno hummus too, sounds great with a sprout topped salad. I should try it. Oh, and I can’t wait to try those Food Should Taste Good chips, ah!

I want to try those Food Should Taste Good cinnamon chips in the WORST WAY, but the stores around me don’t have them! 🙁 I can usually only find the multi-grain & the sweet potato (which are also FABULOUS!)

I hope you have a safe trip! I just stumbled upon your website last week and I love it! I love that you eat real healthy foods as opposed to those “diet foods.” I’ll be moving to NC soon and wish it was to your area, but no such luck. Looking forward to trying some of your oatmeal combos for breakfast!

Sarah for Real says
Anyone remember that episode of The Office where Creed is talking about sprouting mung beans? Bahaha…
Michael: Okay, Ryan, you told Toby that Creed has a distinct old man smell?
Creed: I know exactly what he’s talking about. I sprout mung beans on a damp paper towel in my desk drawer. Very nutritious, but they smell like death.
Jessica @ The Process of Healing says
Mmmm Fresh Strawberries!
BroccoliHut says
I agree–even, I, the broccoli queen, have to nuke it before eating it. I just can’t handle it raw!

Kath, I just wanted to say thank you so much for your delicious blog. I discovered you a few weeks ago and then lost you! *gasp* Luckily I found you again yesterday. Your blog truly makes me want to eat better because, Girl, you make it look easy and yummy.
Sarah (OC2Seattle) says
Mmmmmm strawberry season – so happy. Those cinnamon chips look really good too. Hope you have a safe flight. Impressed you squeezed an early am workout in!
caronae says
Your lunch waterfall is too cute Kath! Me likes. What do mung beans taste like? Like a regular bean, or a lentil, or a sprout? Just curious. Jamba juice is so the best snack ever!
Wei-Wei says
A wonderful looking lunch! I love how you shorten the word “strawberries” into “strawbs.” (Then again, “straws” wouldn’t sound as good, would it?) I’m going to have that word on the tip of my tongue the whole day, now. Strawbbbbs 😀
Have a safe flight! 🙂

Kellie says
I always microwave my broccoli first before adding it to my salad. Tastes so much better. I have that cilantro dressing and don’t like it. Maybe if I add blue cheese it will take the blandness away.
Melissa @ For the Love of Health says
awesome photos! pretty strawberries!
Sarena (The Non-Dairy Queen) says
YUM! I love sprouting my own beans! So much fun and so tasty. We put them in our stir fries and fried rice all the time! Have a safe trip!

I love that hummus on salads makes a great creamy salad dressing. I gotta try those chips.
Amanda @ Cakes and Ale says
Love those TJs hummus… have you tried the Spicy one yet? There’s another one in addition to the jalapeno, and it’s fantastic. The creaminess of them is perfect for salad dressing. Or direct spoon-to-mouth action!
kate says
Those sprouted beans look so tasty!
Emily Eats and Exercises says
I like salads with a lot of cooked veggies mixed in – I always do that with broccoli, but I like to saute my mushrooms as well. I love having hummus on my salads as well.
Hannah says
In Australia, we *never* eat brocolli raw, so the first time I tried it in the US I was really weirded out. It tasted so GREEN. But now I kinda love it, particularly if blue cheese is involved!
