Hoping this lunch hour is a happy one!
I couldn’t help but repeat the same salad I had yesterday: spinach, bell pepper and luscious lemon Sabra hummus. I LOVE this flavor of hummus!!
But the sandwich was new!!
Leftover Mother’s Day picnic brie with apple butter and organic micro greens from Emily‘s farm!!!
I am anticipating this as a killer sandwich!
A peachy peach brought over by the infamous Karen [my mother in law]
And a foggy lens!! You would be proud: we have our AC on now ๐
Friday dance is going 100 mph today!
Freya @ Brit Chick Runs says
Your sandwich is literally mouth-watering! You’re very lucky you get to eat that ๐
Have a great afternoon ๐
Samantha Angela @ Bikini Birthday says
Brie and apple butter is a great combo!
kalli@fitandfortysomething says
love your sandwich! happy friday ๐
Sarena (The Non-Dairy Queen) says
Now I am hungry! That lunch looks amazing! Full of flavor! Enjoy your afternoon!
Melissa @ HerGreenLife says
The sandwich looks fabulous — glad that you’re reaping the benefits of Emily’s time on the farm ๐ I have to say, what impressed me was your time without the AC (ours is on now, too). If we lived in a frame house (ideally with good insulation in the walls), we might stand a chance, but the brick apartment makes it really tough. Brick ovens are great for baking pizza and bread, not so great as a place to live ๐
Marie says
That sandwich looks amazing! Does your MIL read your blog? I hope not! I can’t imagine going as long as you went without AC, yikes! Bet that saved a ton of $ though ๐
Shannon says
Yeah! Why is you MIL infamous?
Jenn says
I repeat meals ALL. THE. TIME. I go in phases. Sabra hummus rocks.
Sara says
kath,
hate to be a stickler for vocab, but infamous is not the same as famous. infamous has a very negative connotation (ie. criminal, malevolent, evil) — so you might not want to use it to characterize your mother-in-law, unless you mean it!:)
claire says
Those microgreens look beautiful…I’ve been wanting some for summer sandwiches recently! Oh, and I had a peach this morning…great season!
A Teenage Gourmet (Sami) says
Gorgeous peach! I just made jam with mine.
Lindsay (Summit Sandwiches) says
Brie and jam is one of the best sandwich combos out there. Ooooh brie, how I adore thee.
Heather (Heather's Dish) says
oh man, i would cut that peach up and put it on the sandwich…hold moly my mouth is watering just thinking about it!
Stacey@http://stacey-healthylife.blogspot.com/ says
That is a yummy sandwich, hope you have a wonderful weekend.
Jenny says
Gotta love Fridays! And healthy lunches like yours:)
Courtney @ Sweet Tooth, Sweet Life says
Anything with brie is going to be a killer sandwich! YUM!
Robyn @ Frugal 'n' Fit! says
I need more brie sandwiches in my life.
Jenn (Jenn's Menu and Lifestyle Blog) says
I’ve never had micro greens. That sandwich looks good. ๐

Laura @ youngDCliving says
OOhh! That sandwich looks so good–can’t wait to hear about it. The micro greens totally make it in my opinion.
Hillary [Nutrition Nut on the Run] says
Ahhh, peaches. The best part of summer!
Wei-Wei says
Mmm, lunch! It’s actually 3.07am where I live right now, and I’m hungry from sitting at the computer for so long… time to go to bed! Maybe a midnight snack beforehand? ๐ Your lunch looks great!
HAPPY FRIDAY! ๐

Your MIL reminds me of my MIL.
I thought the happy hour napkin was a menu of a restaurant named Happy Hour.
This work day needs to end.
TGIF X 1,000.
Jil @ Peace, Love & Munchies says
Kath, seriously. Your sandwiches are works of art. That bread steals the show. Jealous.. ๐

Kellie says
I’m impressed you still had brie left. I would have polished that off a long time ago!
claire says
infamous karen! oh no!
Artemis @ t.a.p.e.s.t.r.y says
Luscious Lemon is TOTALLY the best Sabra. Actually now that you’ve reminded me, it’s def going on my state-side grocery list post return!
Mary @ Bites and Bliss says
thosse micro greens look a lot like clover! hahaa maybe they’ll make for a lucky day ๐ Hopefully it’s been better than yesterday at least ๐
Kath says
So I obviously don’t know English!!!
I had no idea infamous was negative. Or maybe I did and forgot!? Ha. Oops!
Kaz says
I do that, too. Hey, if it tastes good, why change it? ๐
Nancy says
I meant to ask you a question about kombucha when you last tried it but didn’t get a chance til now…did you have an stomach/digestive reaction to the kombucha (feel free to give as little or as much detail as you want)? Just wondering if it might upset a sensitive digestive tract, have others found it improves digestion/regularity??
Kath says
I can totally see with the floating fermentation bits how one would have digestive troubles drinking kombocha. But I haven’t noticed anything out of the ordinary!?
Lisa @ bakebikeblog says
ooooh I want that sandwich NOW!! Love the flavours ๐
Camille says
Hope you have a good Friday!
Kerri says
Lemon hummus sounds delicious.
Chelsea @ One Healthy Munchkin says
I bet apple butter and brie made an amazing combination! I definitely have to try that.
jamie says
hi! I’m a regular lurker and I also live in charlotte. I’ve been getting into yoga lately at my gym, but I’ve been wanting to go to a yoga studio to try something new. Would you recommend Y2 for a college student? It seems like you enjoy the classes there!
Kath says
Abbbbbbbbbsolutely!!
Kath says
PS. I have a free pass card I’ll mail to you if you want!
jamie says
wow that would be amazing! maybe i’ll email you my address rather than putting it up here… i may just be checking it out tomorrow because i’m too excited to wait!
Kath says
Oh definitely email me – don’t post your address here!!! I was thinking about going tomorrow too, but I think I’ll just sleep in instead ๐
Hannah says
Apple butter and brie! Wow! I usually prefer stronger-flavoured cheeses to brie, but I can see that the subtle sweetness of apple butter would really play well with brie’s creamy nature. Win!
Angela (ohsheglows) says
haha glad you have the A/C on! You guys are troopers. Last summer I roasted and was miserable without A/C…this summer I deemed it a necessity for the bakery!
Anne @ Food Loving Polar Bear says
Loving the sandwich, brie… mmm…. ๐
