I’m currently enjoying this yummy lunch on a bench outside. I’m a little chilly but the fresh air and sunshine are worth it. Im eating my salad, bread and orange and saving the rest for snacktime 🙂
SO EXCITED about this salad!!
Last night while the grill was hot I added a sliced block of tofu. (No seasonings or anything – just threw it on with some cooking spray.)
Salad is a bed of baby spinach topped with grilled carrot, asparagus and tofu along with about 1/4 an avocado and a drizzle of olive oil. YUM!
A slice of Dakota for energy 🙂
A juicy tangelo
I also packed yogurt and a Larabar mini. I’ve been saving some of my lunch for snacktime so I decided to just photograph it all at once. Depending on hunger I might have my yogurt (spiked with PB2!) at lunch or save it for early afternoon. Saving it today.
Can’t wait to try this!!
Lunch + snacks.
Excited for a warm weather walk after work today!!
Christie @ Honoring Health says

What a colorful lunch! I’d love to hear how the yogurt tastes spiked with PB2!
I’m LOVING this weather! It’s well deserved after a long winter 🙂
Have a great day 🙂
Kati @ Living Well says
We’re on the same Larabar schedule :> Yesterday I tried the pb&j and today I have the tropical fruit kind! But mine are the full size… I think it’s a great idea to “save some lunch” too. I always do that!
Kristin @ Iowa Girl Eats says
I saw that grilled tofu in your breakfast post and was so curious about it! I have a big block in my fridge right now that’s been pressed and I’m firing up the grill later this week, so there might be a few slices destined for it! I love finding new ways to use tofu, so thanks! 😀
Jessica @ How Sweet says
Love eating outside. These first signs of Spring are so exciting!
megan says
i always save parts of my lunch for my afternoon snack. I don’t know how I’d get through the afternoon otherwise!
Freya @ Brit Chick Runs says
I really like plain tofu, I don’t understand why people think it’s so skank!!??
That lunch does look delicious 🙂 Have a good day!
Elle @ Acquired Tastes says

Jessica @ The Process of Healing says
That salad sounds fabulous! Need to try tofu on a salad… not to mention just grilled tofu.
LOVE spring weather!!! So fun!
Trishelle says
Love it! Question about your tofu : Did you by chance use your outdoor grill, or an indoor grill for your tofu that you cooked ahead last night? Also, did you drain it before grilling it, or did you just throw it on?
I’ve got some tofu in the fridge and would like to make it soon – and your grill-style looks delicious! 😀
Kath says
Outdoor and it was drained and dried well.
Heather @ Side of Sneakers says
I love having lunch prepped from the night before- it makes it so easy to have a GOOD lunch!!!
Sarena (The Non-Dairy Queen) says
Oh tofu…how I miss thee! I love it with no seasoning…kinda like cheese (which I can’t have either). Your salad looks delicious! The weather is beautiful and I think needed by all right now! I am having a salad with homemade sprouts, carrots and fresh yellow peppers. Feels so spring like right now!
Allie (Live Laugh Eat) says
I’m itching to take advantage of the warm weather outside. It’s supposed to rain at form Thurs-Sun here so I want to soak in the rays + vit D!

Those Larabar minis are cute. Where can you get them?
That salad sounds delicious.
Oh man so hungry right now. And it’s only 10:30!
Kath says
Amie of the Healthy Apple sent them! But I think Larabar makes a few of their flavors in mini now.
Lauren @ Eater not a runner says
I think I’m going to head out for a walk too, gotta take advantage of the nice weather!
Hannah says
It’s so wonderful to have food that you’re really looking forward to! And particularly when it’s as fresh and wonderful-looking as this. Also love those cute little mini Larabars!
Annie @ stronghealthyfit says
Oh gosh that looks like the perfect lunch!
ellen eats beets says
Your lunch looks so well rounded. It’ s inspiring me to actually put something together for lunch, as opposed to just whipping out the hummus and tortillas!
Jennifer says
Hey Kath, What hospital are you at? I am at Presby. in Charlotte, working weekends, I love it. I am still reading your blog. Take Care, Jennifer (from nutrition class long ago)
Kath says
CMC Main. Bummer we couldn’t be at the same one!

Yes let’s try to schedule something in the next few weeks.

No idea Larabars had minis, thanks for the info. So jealous of your warm weather, we just turned cold here in Seattle again (even a little snow yesterday).

The Tropical LARABAR is very tangy with pineapple and coconut; I think you’ll like it. I wonder when they’ll release more than just the Apple Pie, Cashew Cookie, and Cherry Pie for retail sale as minis? And I’m still waiting for Ms. Lara to go organic (good thing for Jocalat)!
Theresa says
Your lunch looks so yummy, I just finished a great salad myself. Unfortunately, I had to eat mine sitting inside at my desk 🙁 I can’t wait for the warm spring weather.
Also, I am sure you have answered this before, but I have only recently discovered you blog and didn’t see it in the Q + A. Where do you get the cute and colorful ceramic spoons?
Enjoy the sun!
Kath says
It is in the Q+As!! “The little green spoon” But since you asked nicely: Crate + Barrel 🙂
Theresa says
Thank you 🙂 I will look harder next time I have a question.
HeatherC says
Hi! I’m a new reader and have been loving your site. Question for you…. I realize you no longer count calories, but when you did- how much did you gague a “drizzle” of olive oil was? I’m used to using a TBSP but realize a drizzle is all I really need. TIA! 🙂
Kath says
About a teaspoon = 40 calories or so. Maybe even a little less
April says
Let me know what you think about the tropical fruit. I was disappointed. The coconut cream pie was yummy but pb cookie is still my favorite 😉
Alison says
i’ve been trying to save some of my lunch for snacks as well. something to look forward to!

That looks like a fabulous lunch! Very well rounded 🙂 I’ll be excited to hear what you think of the larabar flavor – for some reason, I’ve had that one sitting in my work drawer for months and always forget about it! Hoping it tastes good so I have a reason to dig in!
rebecca says
The Tropical Lara is AWESOME. I’m hooked.
Tiffany says
I found your blog about a couple weeks ago, as I was looking up the benefits of almond butter. 😀 Your blogs and pictures have inspired me to spruce up my oatmeal with bananas, PB w/ flax seeds, and almond butter. I will never eat plain oatmeal ever again! For the past 5 months or so, I’ve been counting calories, cutting back on portion sizes, and eating healthier in general (and, of course, exercising). As a result, I’ve lost 25 pounds – I am now down to my ideal weight. Reading your blog has been an inspiration to keep going, maintain healthy eating, and see what I can do to refine and improve this healthy lifestyle even further. So, thank you! I look forward to reading more posts. 🙂
Kath says
Congrats!!! And thank you 🙂
