Thomas and I were making a dish to take to a party. I had bought the ingredients for guacamole but forgot the chips. We brainstormed a few ideas on what to do with the avocado and came up with this recipe: avocado and bacon deviled eggs. “Green eggs and ham!” I exclaimed. I lurve me some deviled eggs.
I hard-boiled the eggs Julia Child-style; mixed in a mashed avocado; added just a bit of mayo, mustard, and smoked paprika, and topped them with some crispy bacon. They turned out delicious! Note: you will want to serve these immediately because the avocado will turn army green over time. Still delicious, still green, but less pretty!
The recipe is super easy once your eggs and bacon are cooked.
I piped the mixture back into the egg halves hoping for an artful display. Nothing in my kitchen is ever artful, but I do think this method works better than using two spoons.
Bacon!!
One slice was all I needed to crumble, but feel free to do more – or mix more in!
Green {Deviled} Eggs & Ham
Ingredients
- 6 eggs
- 1 avocado
- 1 tbsp mayo
- 1 tsp Dijon mustard
- 1/2 tsp kosher salt
- 1/4 tsp smoked paprika
- Pepper to taste
- 1 slice cooked bacon
Instructions
- Hard boil your eggs using this method.
- Once eggs are cool, peel, halve, and scoop out yolks.
- Mash yolks with avocado, mayo, mustard, paprika, salt, and pepper.
- Either by piping or scooping, fill egg halves with yolk mixture.
- Crumble bacon and sprinkle over eggs.

Those look really yummy!
One of our favorite restaurants serves deviled eggs as an appetizer. Each deviled egg sits atop a round pickle slice (I think it’s a sweet pickle) and is topped off with chopped bacon and a drop of hot sauce. So delicious!

Haha ! Yes they look very good. They have devilled eggs carriers with lids. That might stop eating them on the way to the party. 🙂
