^^ That’s Mazen’s new favorite phrase, and it’s so hilarious when he says it with huge enthusiasm!
So imagine his little brain spinning when I said “Do you want to go back to the Jumpy Jumpy place today?” GREAT IDEA MOMMY!!
First: a power breakfast. Eggs (for me, not him, but I tried!), cinnamon swirl toast and blueberries. Coffee. The usual. Protein + whole grains + produce.
And then we jumped!
We went with our friends Brett + S. Brett stepped onto the trampolines and immediately began doing backflips. #impressed!
This was the only photo I sort of got of them together. One up, one down!
And the least blurry photo of me channeling my inner gymnast. I’m not ready for flips yet!
We stopped by Pearl’s Cupcake for a massive cupcake tasting party I’m attending tonight. Got one for M and Matt too!
Back at the casa we had lunch – hot smoked salmon + apple + coconut butter broccoli for M. (Trust me, all of his lunches are not this healthy!)
And a salad with baby kale, chili olive oil, rosemary cheese, green peppers and cornmeal breaded baked tofu! I need to write that up as a recipe, but we basically dipped tofu in egg and then a cornmeal blend mixed with some Mexican spices and baked it for about an hour – till everything was crispy. Delicious!

I’m a little wary of those trampolining places too now, as I saw a broken foot from one while in the emergency department last night. The ER doc was just like “oh yeah, we get injuries from that place all the time” :S That being said, I’d still totally jump around in one!

I made cornmeal-crusted chili tofu from the cookbook Veganomicon on Monday (a component to the most rad vegan po’ boy sandwich ever.) That recipe is the tops for me! I’d highly recommend it.

I LOVE when little kids say ‘adult’ phrases like that! My niece used to use the word “apparently” in her regular vocabulary (she was 5ish) and I cracked up every single time. So cute!

I’ve been wanting to check out a trampoline place so badly! We had a trampoline growing up that I spent endless amounts of time on (back before they had cages). So much fun and quite a good workout!

My son says “good job, mommy” for little tasks like getting him a napkin or changing my clothes. I’m guessing he hears it a lot at work, lord knows we praise him constantly, and I just love it. Is that kid OK in the photo between the two of you jumping (the one with Bret)? They look like they are in rough shape!

When I was 10 years old, I attended a gymnastics camp. We had floor, vault, beams, and bars–everything but a trampoline! Which is unfortunate because that’s such a great workout, not to mention bounds of fun.

Ohh, I like the idea of the battered tofu! Always fun to add a little crispiness to something.

Fun day! Broccoli is the only green thing I can get my kid to eat. I snuck in some butternut squash to his macaroni the other day and actually told him, “no more broccoli until you eat your macaroni”. Words I never thought I’d say! Mazen seems to eat very healthy, even if you say all his meals aren’t this healthy!

I took my husband to a trampoline place like that for his bday last weekend, it’s fun even for adults! I haven’t had kids yet and still feel on the verge of peeing every time I jump high!
