I couldn’t resist having the same breakfast I had yesterday – oatmeal with banana, flax, homemade granola and almond butter. I am LOVING this granola!!! The oats are very crunchy, the honey is sweet, the almonds are toasted and the coconut flavor just scents it all.
I did swap the PB for AB today 🙂
With decaf plain tea instead of coffee for a change –
We walked to and from the lightrail again. Not sure if I’m going to do anything else today, but we’ll see. I’ve got lots of prep for my chem lab tonight. Booo.
Cara says
Good luck with your chemistry! And your breakfast looks amazing, as per usual 😉
ChocolateCoveredVegan says
Almond butter is my newest favorite food… and it sounds terrific with your granola oatmeal.
healthyceliac says
Almond butter has become my new obsession. I love it.
Your breakfast looks amazing. You are so good at creating photogenic food. Mine is a mess on the plate, but it tastes good, and I guess that’s all that counts!
Katers says
I loooove making my own granola. I feel so much better knowing exactly what’s in it! Plus it’s tastier and cheaper than store bought brands!
hk says
yum, your bowl of oats looks like the perfect combo of crunchy and creamy! the best:)
Melissa (the other one) says
I’ve never made my own granola but I think it may be time!!!
Katie says
Ahh! You are making me so jealous. it looks great. I HAVE to try this.
Heather says
Nothing wrong with the same breakfast 2 days in a row… I’ve been eating your banana oats recipe for about a month straight 🙂
Good luck with the chem lab tonight!
laurabars says
Yummy granola. Some people may think eating oatmeal everyday is boring, but not when you jazz it up so many different ways.
And how is eating at McDonald’s everyday not boring…not to mention sooo unhealthy.
But I do have to say that I did have a chicken biscuit there one day and it was pretty yummy. I guess I am probably the only reader who has eaten from McDoanald before, but only once in a blue moon.
Kelly T says
I asked a question yesterday but i think it got lost
I checked the labels of peanut butter and my safeway brand is the same as Adam’s natural- so why does everyone buy natural? and I missing something?
cause the word “natural” doesnt mean anything. its not an FDA regulated term.
Sorry, Kath, gotta do the pullups overhand. But 4 with an undergrip is still impressive!
Rachel Ragosa says
I made your granola yesterday and had it this morning! its great!! I added 1/4 cup pumpkin and 1/4 cup vanilla soy milk (sprinkled it with cinnamon and brown sugar) and microwaved it for 1 min. It was like pumpkin crisp!
Kelly T says
Ive never tried granola on my oatmeal, maybe i should give it a shot
Kelly T says
oh, and a client gave me a tip about putting egg whites into your oatmeal….it turns out like cake.
that might be old news but it was new to me
Chelsea says
Did you post the recipe for the granola? I don’t see it on the side bar and I’d love to give it a try.
Jenn says
That granola looks so good and crunchy! I’m definitely going to have to make it soon…once I get through the several different bags of granola and trail mix that I bought at the store recently in an attempt to find “the best” one — I think TJ’s Nutz over Raspberries and Chocolate is going to win out!
Crissy (RD to be) says
hi kath (and everyone else!) I have been reading your blog for a few months but this is my first comment =) I just have to say hang in there with the chem stuff … I’m getting a masters in nutrition right now along with fulfilling the dietetics requirements and I had to start all that chemistry this year too! (I never needed chemistry while getting my BA) I actually just to my organic chemistry final yesterday and what a relief! What chem are you on? And know you are not suffering alone =)
JennC says
I Love MacDonalds. I dont eat it a lot but it sure is good after a late night out. i dont have problems with eating anything.
Crissy (RD to be) says
*just took my organic chemistry final
caitlinbo says
i’m going to make polenta tonight, but i dont have a grill. any suggestions?
mandy says
JennC – don’t know where the McDonalds thing got started, but unlike many other readers here probably, I too enjoy me some fast food every now and then – nothing wrong with some good curly fries, hamburger, milkshake, or mexican – as long as it doesn’t become a regular thing. I too don’t have problems with eating anything 🙂
Tina says
I switched to tea today as well. I was feeling sorta blah about coffee the last few days.
Ange C. says
Kelly T-
When you say overhand, do you mean top of hands facing you on the bar, fingers pointing away from your face?
AND..i wondered the same thing about PB the other day too. Bought the one that wasn’t labeled natural from WF, saving about $2. Same ingredients, same nutrition profile, etc. Anyone??
VeggieGirl says
I don’t blame you for wanting that granola again this morning – looks heavenly!!
Ahhh, best of luck with chemistry tonight – maybe the professor will be nicer?? One can only hope ;0)
Allison says
Kelly T,
The ingredient list of the peanut butter should be “Peanuts” or “Peanuts and Salt”. If that is the ingredient list of the Safeway brand, then great! But even the “natural” peanut butters sometimes have other stuff in them. It isn’t the “natural” part that matters, it is the ingredient list.
Allison K. says
who hasn’t eaten at McDonalds before?
JennC says
I have!
Kelly T says
Ange C- yeah, palms facing away from you is the proper technique. the other way still works muscles and is difficult, but its not a true pullup.
Allison- yeah thats wherei got confused because the ingredients are the same. I compared the generic to Adam’s and they both had the same exact ingredients and nutritional profiles.
thats why i thought maybe people were being tricked into buying the more expensive brands just because it says natural on them.
im sure other brands have more chemicals or additives, though. i think Jiff does.
Kelly T says
the mcdonlads thing was kind of random but the only places to eat around my work are mcdonalds and teriyaki. Ill head to micky d’s everyone once in a while and get a salad and fruit and yogurt parfait or something. and then thereare those late night, coming home from a party nights when i get whatever i want and love every minute of it.
Sunsparklejl says
Kelly T,
How many egg whites per 1/2 cup do you put in your oats? Sounds yummy…
ArdenLynn says
My usual granola recipe calls for 10 cups of oats – no kidding.
I loved this small batch – I used chopped walnuts because that’s what I had. I am finding it almost impossible to stay out of it. I had to talk myself out of putting it on my salad at lunch today. I went with cottage cheese and saved the granola for a snack.
BethT says
Kelly T et al,
The truest “natural” PB is simply peanuts plus or minus salt. That is it. Read the ingredients and if this is all it says, it’s the best for you nutritionally. I don’t know why other brands claim to be natural and then fill it with other ingredients. If you have Trader Joe’s, their natural PB is cheap (less than $2 a jar) and awesomee. Peanuts, salt, that’s it!
maddie says
kath do you or anyone have any good easy recipes for quinoa?? i just bought some yesterday from trader joe’s and really like it but want some more ideas for it. thanks!
Amy says
Kelly T – If the ingredients are the same and the Adam’s brand is not claiming to be organic, I think the word “natural” is meaningless as far as distinguishing between the two pb. The store brand is equally natural, they just don’t spend much time on marketing (ie enticing customers with colors and catch words like natural). Often, the store brands of any product are made in the same exact factories as one of the name brands, so sometimes there is no difference between the generic and name brand product. However, I find that certain generic/store brand products are far inferior to some name brand products!! It’s hit or miss for me.
Erin says
maddie,
I made a recipe for quinoa salad with basil lemon dressing from cookinglight.com last week, and it was really good! More work than I expected though.
Allison says
Kelly T
Jif has a very long ingredient list, which explains why I love it. That is what my children eat because I can’t get them (or my husband) to eat the “natural” stuff….yet.

Crissy (RD to be),
I’m still in General Chem II – but hopefully this is my last irrelevant-to-nutrition chemistry. I can’t wait for BioChem, and I’m sure Organic will be a great base for the rest of the nutr. courses. Congrats on being done with yours!
caitlinbo ,
Here’s a recipe we did with polenta from a bag:
https://www.katheats.com/?p=3143
And a DELICIOUS Rachel Ray one:
https://www.katheats.com/?p=2857
And one using a log:
https://www.katheats.com/?p=2309
You can easily breakdown the log into the more creamy style if that’s what you have. I think the instructions are right on the package.
CookingLight.com is always a good resource too!
maddie ,
If you click on Quinoa in my Tag Cloud you’ll find some of ours, although I have yet to make a quinoa recipe that I love. This one was pretty good:

i LOVED orgo!!! hope your final went well, chrissy. after orgo i seriously almost changed my major to chem. kath it will be a GREAT base. you get such a wonderful understanding of drug and chemical mechanisms. i learned how to make penicillin. also caffeine. i was in an advanced class, but i think that’s kind of standard curriculum. fantastic class.
