There’s just nothing like ‘em…
Pumpkin pancakes again. Can’t get enough!!
I slept in as long as I could this morning (till 8) but Matt is still asleep! Good for him, but his pancakes are now cold! [Edited to add – it’s not 10am and he’s up and hungry!!]
These are made from the Great Harvest pancake mix along with half a cup of pumpkin and salted almonds with sea salt sprinkled on the wet side before flipping. Topped with Biscoff, chia seeds and coconut = fabulous!
Coconut Pouchong – love this! It’s almost got a candy smell to it
We had plans for some hiking today, but it’s raining. The forecast was all sun a few days ago. Boo!
Angela @ Eat Spin Run Repeat says
Sorry to hear about the rain, but breakfast sure looks good!!
katie @KatieDid says
I know I’ve been cooped up all weekend with the rain, when I usually like to get in a hike or a bike ride. It’s been nice though to just cook, clean, and accomplish some stuff. Have a wonderful Sunday!
Ashley @ My Food 'N' Fitness Diaries says
I LOVE that plate! Pancakes and tea sound like a perfect rainy morning breakfast.
Sweet and Savvy says
What a perfect fall Sunday morning breakfast ! 🙂
Leslie says
Look great! I am having an Pumpkin OIAJ today-can’t wait. Curious how you decided to store your extra pumpkin? I am using canning jars more and more these days. I have one in the fridge with leftover pumpkin in it (with the plastic screw on lids-love those) and am thinking of trying it in the freezer too.
KathEats says
It’s still in the fridge right now but I’m going to freeze some today in ziplocks
Lauren @ What Lauren Likes says
Aww to bad about the hike! At least you have ahamzing pancakes though! Looks great 🙂
lynn @ the actor's diet says
whenever i order pumpkin pancakes at restaurants, they’re not nearly orange enough!
KathEats says
That’s ’cause they don’t use enough!
Erika - The Teenage Taste says
Pancakes topped with Biscoff! That’s genious! I recently broke down and finally bought a jar…that stuff might just be more addictive than Nutella! 😉
Estela @ Weekly Bite says
Hopefully the weather will clear up for our hike 🙂 Happy Sunday 🙂
Meghan @ Day-to-Day Crazy says
Don’t you just love when you have big plans for the day and the silly weather ruins them? 🙁
Khushboo says
Rain rain go away! hate when it rains when I have something fun planned outdoors- hope it clears up!

Those pancakes look great! I love sleeping in some days but I also love getting up early and getting a bunch done. Have a great Sunday!

i had pumpkin pie mix sprinkled with walnuts for breakfast this morning, i highly recommend it as a snacK!
Nikita says
Pumpkin pancakes are the best! I bought a bulk supply of sweet potatoes from costco the other day and I’m wondering if I could cook and mash those and use like I normally use pumpkin. Have you ever tried that?
KathEats says
I don’t see why not!
Dee says
Yay for pumpkin pancakes! Question about the Biscoff spread. Do you buy them online or get them from a particular store?
KathEats says
It’s a Walgreens, I hear
Molly says
Also Publix and Fresh Market!
Katie @ Talk Less, Say More says
Boo the rain ruining your hike, but yay to a delicious pumpkin-y breakfast!
genevieve says
Biscoff and pumpkin? I think I’m in heaven.
Casey @ oatsandnanners says
Pumpkin pancakes are addicting!! It’s like, once Fall is here, you’re officially given permission to eat them for breakfast, lunch, and dinner. I’m glad to see I’m not the only one under their spell!
Annette @ EnjoyYourHealthyLife says
They DO look amazing. I just had pumpkin waffles. SOOO good.
I can’t get enough of pumpkin yet either! haha 🙂
Paige @ Running Around Normal says
I was able to sleep in until 8 this morning too. Man it felt good! Though I’m slightly jealous of Matt’s 10 a.m. waking time 😉
Julie H. of Spinach and Sprinkles says
Perfect fall morning~ Pumpkin and warm tea! 🙂 ….Glad you slept in! It’s going to be a good week!!!
Kelly @ Foodie Fiasco says
Man, those pancakes look good. Why did I have to just eat breakfast? I guess I’m going to have to have two breakfasts, for experimental purposes, of course. It’ll just be our little secret. 😉
Ellie@fitforthesoul says
Yeah, the weather has been pretty up and down huh? I love these pancakes!
Angel7 says
Tea sounds good on a chilly day like today. The Coconut Pouchong sounds like a pick-me-up!

Molly @ RDexposed says
Why have I never put nut butter on pancakes? I may be able to answer that actually due to never making pancakes….
Anna says
Vibrant orange pancakes! 🙂
Oh, and just FYI- wordpress turned your 8 in parentheses (in reference to your sleep-in time) into a little dude with sunglasses, haha. Is there a way to stop it doing that, I wonder?
Errign says
If you backspace once it turns into the sunglasses dude, it changes back.
KathEats says
Haha – oops!
Fran says
The pumpkin pancakes sound wonderful! I’ll have to give them a try!
Brittany says
Perfect breakfast for fall!! Pumpkin never gets old.
kathleen @ the daily crumb says

Those pancakes look absolutely delicious. I have yet to find the time to try this recipe (law school ruins all cooking attempts haha) but this is on the to-do list for this weekend.
