“Guys, just give me five more minutes of peace while I finish this blog post!”
Mazen and I have been talking about work lately. I have explained to him that people have to work to earn money to pay for food, bills, housing, toys, etc. He knows that mommy “writes blog posts”, that daddy “works at the sandwich shop” and Thomas “builds houses”. Mazen wants to be a superhero when he grows up 🙂
Speaking of work, I’ve really been enjoying my new coaching role at Designed To Fit Nutrition. I’m on my 10th client, and I’ve gotten the hang of the meal plan software, so I’m starting to get more efficient each week. My clients can expect to see a lot of real food and a great variety of easy recipes!
Anne let me know that the Joyful Eating program is about to start up again. The six-week program focuses on intuitive and mindful eating – something we all need to work on. And they also have a new self-study program that is great if you like to absorb information at your own pace.
Warm banana oats in a jar with raspberry jam:
When I don’t have eggs for breakfast, I often have them for lunch! I am also still totally digging manchego cheese – can’t get enough. Massaged pesto kale salad on the bottom : )
Look at these BFFs. <3
And finally, I’m loving that natural light is back for dinner!! I made chicken with rice, spinach, peppers, olives and a spiced Greek yogurt sauce, obviously. Soon we’ll be back to eating outside!
What’s up in your neighborhood today?

I always love hearing what children want to be when they grow up 🙂 I once babysat for a little girl who wanted to be “milk” when she grew up…I don’t even know. Then again, my sister and I wanted to be ballerinas who performed in a pizza restaurant and made pizzas while we danced, so I suppose I can’t judge.

Didn’t we all want to be superheroes when we were young, though? 😉 I still wish I was one!

I always ask him which superhero I can be, and he tells me I have to be a villain : (

Maybe in our own way and in our own world we are superhero’s to someone!

Manchego is so darn good. Love the kick it adds! I eat eggs everyday in some way, shape or form. Can’t get enough! Glad to hear the nutrition clients are going well!

Your job sounds so fun! I know they enjoy being able to see their coach in action too via your blog!
I was just saying the same thing about dinner time lighting… it’s the best.

What am I gonna tell my future kids? Daddy helps the hospital count their money? Mommy writes blog posts, teaches, and counsels clients? ha ha that should be a fun convo…

Love that you’re back to making meal plans for people! You have so much knowledge and it’s nice to share it! 🙂 Would you ever share a sample meal plan for someone? I of course know every meal plan is super specific to that individual and his/her needs, but it would just be interesting to see what you recommend!
Also, did I miss something, or does Matt not do his brewery stuff anymore? I thought there was talks of him opening a brewery in Charlottesville? Or is his brewery super cool and serves homemade sandwiches, too? I know he loves baking bread–so that would be a nice blend of his two passions!
KathEats says
Good question! I’ll check with the team and see if I could maybe do a blog post about one and perhaps feature a few recipes.
And Matt left the brewery to manage a gourmet sandwich shop in town that has a few sister properties as well.

I asked my little brother what he wanted to be when he grew up.
He said,
“A adult.”
KathEats says
Haha good answer!

Your new adventure in coaching sounds great Kath! I imagine it’s nice to switch things up a little. I love that picture of Mazen hard at work on the laptop :). Been blogging the morning away over here myself. We are having some beautiful weather here in SoCal…high of 83 today!!!
Jeanie says
Love the picture of Mazen and Gus. One of my dogs is a labradoodle, but with his new haircut he looks just like Gus.
Jeanie says
Where did that question mark come from? Before I hit Post it was a heart.

WordPress is behind the times and doesn’t understand Emojis yet… I fixed it!

That is cool that you have a coaching role as I am sure that many people could benefit from that!

I remember that my sister wanted to be a dolphin farmer (of all things!) when she grew up. I love hearing kids’ creative job aspirations! 😉
