We are getting a few flurries here, but nothing to write home the internet about. I hope those of you getting hit hard are safe and warm!
Breakfast today was a quarter of a crumbled Whole Wheat Blueberry Buttermilk muffin from the bakery. Matt brought it home after a test bake and we gave it four thumbs up! Served over Snowville Creamery yogurt with a slice banana and coffee.
For lunch I had a No Bull Burger on a salad! LONG TIME NO SEE!
I actually forgot about No Bulls for a while (I know) but I was pondering how to get out of a lunch rut and remembered how perfect they are for salad toppers. I also found out that they now come in two packs!!! SO convenient! Also of note – the nutrition info has dropped the calories from 170 to 130. I’m not sure if they are smaller (they look the same to me) or if they were re-evaluated, but I’m pleased with the update.
I served the burger with some of this amazing pimento cheese I found at Whole Foods. Smoked everything all the time.
A few marcona almonds, a drizzle of ranch dressing Karen left in our fridge and a leftover slice of cornbread rounded out the meal. Best lunch I’ve had in a while!

Wow that looks delicious! I always crave No Bull Burgers when reading your blog but can never find any up here in Canada! Hope Mazen gets to have some fun in the snow!

I love those No Bull burgers! 🙂 We got a bit of snow here, but not enough to be an excuse to stay home! I wouldn’t mind being curled up with some tea right now, though!

So jealous of your No Bull burgers! Wish they sold them here in the midwest. I’ve gone to their site to order several times but just can’t pull the trigger due to the shipping cost. Fingers crossed they make it to Kansas!

I don’t know if you posted about this, but how did it go when Mazen switched to a toddler bed? Did he climb out a lot at first? We just ordered the toddler rail for our crib and I’ve been thinking about the best way to transition my 2 year old to the “new” bed!

He’s fully in his big boy bed now and never gets in his crib. We actually didn’t have a lot of climbing out but he now plays with toys before nap (“Quiet Time”) and then gets in his bed when he’s ready to go to sleep. It’s working pretty well, although I will admit I miss the days of having him contained : )

Wow, what a big boy! My daughter is only about 6 weeks younger than Mazen, and I think it will be a little while before she’s ready for the full transition to the big bed because she seems to like nestling in the corner of her crib. “Quiet Time” is a great idea, and it’s wonderful that Mazen is so responsive and will still take a nap once he’s tired. He seems like such a sweet kiddo!

Hey Kath! I’ve been wanting to try these No Bull Burgers for quite some time. Do they contain soy? Do you have any opinions (or good resourses) regarding soy and its effects on fertility?

They have it in the form of non-gmo tamari soy sauce, but not in any kind of processed soy product. My opinion is that whole soy (tofu, edamame) are fine but I wouldn’t eat any kind of hydrolyzed soy protein on a regular basis.

For all the years you’ve been eating No Bull burgers, this was the first time I realized they are vegetarian! Ha ha ha. I thought they were bison or buffalo. We don’t have that brand where I live, but they always look great!
