Up at 6:30 this morning to see Matt off to work and get my body clock back on normal hours.
For the first time, I was in charge of Pancake Monday!
How ’bout some Kodiak cakes! I’ve found that the trick for perfect cakes is not to use a 1:1 ratio as the box says. But use a 1 mix: 0.9 water so you have a thicker batter. Makes nice crunchy golden cakes!
Today’s flavors featured butterscotch, flax and peanut butter batter
Topped with peach, Biscoff and TJ’s PB
PB on PB!
A little Cville in the mix!
Starring high school Matt with Karen!
Thinking about going to Celeste’s killer Monday yoga class again. Gotta get in as much of my studio as possible this week. They don’t have hot vinyasa in Cville 🙁 🙁 😥
First I gotta get this lease signed and scanned! Wahoo!
Samantha Angela @ Bikini Birthday says
You can make your own pancake mix from scratch and keep it in your pantry to use whenever you need to.
Karla says
I was planning on pancakes for breakfast too. It’s one of those mornings where I can’t decide what to have. Everything and nothing sounds goods. Your pancakes make me lean toward pancakes now, though.
Have a great day!
Rosey Rebecca says
Butterscotch pancakes sound incredible! I love how pancakes taste like dessert sometimes.
Yay for signing the lease!!
Christie {Honoring Health} says
There are a couple of teachers in Richmond that teach heated vinyasa. One of my friends, Deb is actually one of the best teachers in Richmond for it. Her style is amazing and she teaches at a couple of different studios. There is also one Baptiste class on Sundays that is heated at a studio in downtown Richmond.
Kath says
Glad to hear it, but I don’t think I can swing an hour drive for a class. Maybe once a month?
Rhea (Greek Feaster) says
Oh man, I need some butterscotch action in my morning! A couple of weekends ago, my boyf and I went to Maine and had homemade butterscotch popcorn. Believe it.
Also, Vintage Matt is so CUTE!
Janna (Janna's Keeping it Real) says
Nothing better than pancakes on a Monday!!
Stacey@http://stacey-healthylife.blogspot.com/ says
Those pancakes look fabulous. I’m having Kodiak cakes for the first time this weekend when I go camping, can’t wait.
Heather (Heather's Dish) says
oh my goodness, those pancakes are the best i’ve ever seen on here! seriously, i am DROOLING!
Jessica @ How Sweet says
Those pancakes sound so good. I am still dying to try some Biscoff!
Lisa - respect the shoes says
Your pancakes look incredible. Your blog is a daily read of mine and you have inspired me to move towards healthier eating rather than just “random” eating. I tried kale chips for the first time two weeks ago and now I’m hooked! I get kale whenever I go to the market now and even enjoy it raw in sandwiches in place of lettuce. Thanks much!
(BTW, I didn’t know your hubs went to WFS – my BF did too! He still raves about those grey workout tees and still has his – his comfiest sleep tee ever, he claims.
Kath says
Thanks Lisa! I think all of Matt’s WFS tees have been trashed due to gaping holes from wearing too much! But he might have one left 🙂
Exercise and Eat says
Yummmm! Glad you have the pancake science down:)
Chelsey says
totally love those pancakes – I think I’m feeling pancakes tomorrow! yummm!
Estela @ Weekly Bite says
I have to try that Biscoff butter!
I think they have a Bikram Hot Yoga studio in C-Ville? You could try that?
Kath says
Did not care for Bikram style AT ALL!!!!!!!!
Kath says
Estela,
Mom says I should have written a more polite response 🙂 Thanks for the suggestion!
Amelia says
Delicious pancakes! I <3 peaches.
Jess. says
Pancakes look delicious! I think I know what I am having for breakfast 🙂
The Wife of a Dairyman says
Like the butterscotch addition to your pancakes..YUM! Hope you make it to yoga and have a great class 🙂
Simply Life says
those pancakes look great!
A Teenage Gourmet (Sami) says
Those pancakes look FLUFFY!
Heather says
Those peaches are gorgeous – I hope they make their way up north soon! After living in Georgia though, it is hard for me to find good peaches!
Enjoy your Monday.
Annie@stronghealthyfit says
I want those pancakes!
Congrats on the house 🙂
Brittany @ A Healthy Slice of Life says
I saw you comment that you didn’t like bikram? What is the difference between hot yoga and bikram? I was under the impression they were fairly similar… ?
Katie says
I don’t understand either!
Kath says
Oh no, the only similarity is the fact that they are both done in hot rooms!!
This is my interpretation based on limited knowledge of yoga history and having gone to one Bikram class (in Cville) and many hot vinyasa classes:
Bikram =
104 degree room
Same sequence every time (which includes many of the typical yoga poses)
Very “strict” in the way you do it
No music
Teachers have a very formal training
Not very “flowy” and more “hold this pose and then transition”
Hot vinyasa:
Very hot room – usually in the 90* range
Much more variable in styles depending on teacher
MY studio has amazing music, rock-out style
Very flowy (think downdog to warrior to chataranga and sun salutations) <--- the best part. I like flow Very cool, casual attitude about the series and practice but still very inward focusing. Just more laid back (and again, this is just my experience - not all studios are like that) LOTS more sweating because a lot harder workout (in my opinion!)
Katie says
Thanks! Very good to know.
Sarena (The Non-Dairy Queen) says
Great way to start the week off! YUM! I have been on a waffle kick lately. Enjoy your class today!
Cara says
Those cakes do look good and thick, almost English Muffin like! A great way to start your Monday. Have a splendid day.
Katie says
Sorry they don’t have vinyasa there! I hate having to make a change in my exercise routine/location/gym!
Liza @ Health Nutting says
Those look greattt, gotta get that Kodiak mix!
My name is Liza, by the way, and your healthy living blog was the first I ever read (and I love it!), and I’ve now found such a joy in reading them, so I’ve made my own too! So thanks for the inspiration!
Kath says
Hi Liza! Thanks!
Emily Lou says
Since I don’t believe there is such a thing as “overdosing” on PB, a PB smear on PB pancakes sounds delicious to me!
Evan Thomas says
Butterscotch and maple–yum!
Gavi @ GaviGetsGoing! says
Those pancakes look absolutely incredible! I’ve never tried Kodiak cakes because I’m gluten intolerant, but I definitely admire them from afar. 🙂 Good luck getting back into a rhythm!
Meg says
Hooray for the lease! Not-so-hooray about yoga, maybe if you convince them to start a class somewhere near you, they will 🙂
Pancakes look AMAZING! 😀
Nicole, RD says
Any thing with peaches right now…MMmmmmm!!!! I love your kitchen’s granite! I’m going to miss mine!
Cynthia (It All Changes) says
Take in the last of every little thing in Charlotte so you can totally enjoy your new Charlottesville 🙂
Wei-Wei says
Pancakes…!!! They look amazing. PB on PB… Oh, gosh. You’re tempting me. (We have a newly bought jar of PB…!!!)
Wei-Wei
Paige (Running Around Normal) says
Delicious looking pancakes right there! It’s always good to have your body back to somewhat of a routine – at least for me it is 🙂
tanyasdaily says
Your pancakes look really good with that added fruit.
Melissa says
Wow, those look GREAT! Do you have any ideas on how to mix in canned pumpkin without throwing off the moisture ratio?
Kath says
I don’t – I haven’t made them with pumpkin yet.
Ashley@thehungryscholar says
Congrats on the lease. Those pancakes are perfect for celebrating!
Megan (Braise The Roof) says
Congrats on the lease! I bet that’s a huge weight off your shoulders. 🙂
How did you mix the PB into the pancake mix? Whenever I do that it always seems like the PB gets kind of burned while they’re cooking.
Kath says
I just whisked in a tbsp to the batter. I used the TJ’s PB which is pretty liquidy
Camille says
Those are gorgeous, perfect pancakes! Have a great Monday!
lynn (The Actors Diet) says
your pancakes look fabulous – love ’em thick!
Michelle @ Give Me the Almond Butter says
Wow, those look AMAZING! I must pickup some kodiak cakes.
Stacie @ Imperfectly Healthy says
Butterscotch makes everything better! 🙂
And congrats on signing the lease on your new place!
Angela says
Those pancakes look so delicious. I never have time for pancakes during the week because I’m not exactly a morning person, but I need to try them on the weekend. I’m like you – I like my pancake batter a little thicker. 🙂
Stacey @ Tipping the (Kitchen!) Scales says
Pancakes look good. Nothin’ like a little PB on PB action!!
laura says
Yumm those pancakes look delicious! Howd you make the pb ones? Did you just add pb to the batter? I’ve gotta try them!
Danielle (Runs on Green) says
Those are the fluffiest pancakes I’ve ever seen! What is Kodiak’s secret?!
jaclyn@todayslady says
Mmmm PB on PB? Sounds like my type of breakfast!!! Go Kath!
Kerri @ Kerri Turns into a Zombie says
Love the variety in your pancake stack! Is the Biscoff spread really like the cookies?
Jessica says
It may not be 90* in the room, but the vinyasa classes at Studio 206 on the Downtown Mall are fabulous. I think they heat the room to the low- to mid-80s, so you still get pretty darn sweaty. Anyhow, the classes are VERY challenging. I practiced there for years and miss it!
Kath says
Oh I forgot about that studio!!! SO glad to hear they have challenging classes. Thanks!
Laura says
Wow, these look super! xx
BroccoliHut says
Love the looks of those puffy Kodiak cakes! They look deliciously biscuit-like.
Chelsea @ One Healthy Munchkin says
One of these days I’m going to finally crack and make some pancakes instead of having oatmeal or yogurt messes every morning. Your pancake posts are pushing me further and further towards that point. 😛
Jenna says
Aggie, of ‘Aggie’s Kitchen’ fame, recommended your site to me…so happy she did. Love it! Bookmarking it now.
caronae says
Pb on Pb = best breakfast ever!
Hannah says
Butterscotch and biscoff – you’re right, these definitely aren’t bad pancakes!
pancake recipe says
That looks like the kind of pancake my four kids would devour!!!lol! They love peanut butter, that’s a sure thing! They also don’t mind fruit bits on their pancakes, even if I put it in the batter itself. I heard there are some kids who would literally pick the fruit bits off the pancake, lol! lUcky me, I guess~
