I’m thrilled that I woke up today to bright sunshine and no hangover or “foodover.”
Workout
The husband and I spent the night at his mom’s so we wouldn’t have to drive home late last night. We slept until 8:20! Geez! His mom lives in a brand new condo building that looks like a cross between a castle and the Biltmore Estate. Just down the hall is a GREAT gym with all brand new equipment, so knowing we were spending the night, the husband and I brought our workout gear. We were in the gym at 8:30! I did 40 minutes on the ET and then we did two weight circuits on all the new machines. 375 kcal burned.
Hey, it was a great way to start the day and the year!
Breakfast
After our workout we made oatmeal pancakes for husband’s mom. We had to use real eggs instead of whites, which is a little different but still delicious! I think the yolk emulsifies the mixture better because they are thicker and don’t run on the pan as much.
I drizzled my pancake with a leftover honey favor from our wedding 🙂
Also had some orange:
And more peach tea (cool mug!)
All together for ~410 calories (I didn’t have my scale so I just eyeballed portions)
Today
We’re planning a nice walk this afternoon to the grocery store for some collards. We had turkey cutlet and mushroom pasta planned, but my MIL gave us some black eyed peas in honor of being Southern on New Year’s Day so we’re going to do mushroom, black-eyed pea, collard green pasta instead.
Too bad I have to work tomorrow 👿

Happy New Year, Kath! I'm very impressed with you not being hungover today like the rest of us 😉 My choice of mixed drinks and various flip cup battles last night left me feeling a little worse for the wear this morning! But I was able to drag myself to the gym this afternoon and stay healthy food wise 🙂 Back on track!!
