I say that ^^ because I’m ready to rock and roll. I’m already showered, the dishes are done, the house is put together and I’m ready to start working before 9am. A miracle! I didn’t sleep well, and I’ve been up since 6:30 -I’m having that racing mind syndrome where my brain just keeps going over all the things I have to do – but in a good way. I’m ready to tackle the day and excited to cross things off the list. We are getting so close to our deadline on Friday, and so long as the oven works by the end of today and we pass all of our inspections, I think we’re going to make it! [Knock on wood..]
Thanks for all of your compliments on the bakery – I’m loving how it has turned out!
This morning I dug into a Dough Boy Smoothie – simple banana-oat style.
Banana Oat Dough Boy Smoothie
- 1/3 cup oats
- 2/3 cup milk
- 1/3 cup yogurt
- Pinch salt
- Half banana
- 1 tbsp chia seeds
- Sprinkle cinnamon
- Splash vanilla
–> Put in Vita-mix and sit in fridge overnight. In AM, blend away!
Topped with the last of Lynda’s Granola, coconut, coconut butter and the last of my Honey Crunch PB.
I should have had peppermint tea today, but I had to give coffee #1 one more taste. Tomorrow I’m backing off for a day or so. Caffeine might only have a 12 hour half life, but I swear it lingers in my body. That’s probably why I had racing mind last night!
Big NUT BUTTER steal going out through my OpenSky newsletter today!! Follow me to get it – and get your chocolate hazelnut on!!
I’m off to make labels and get my laminator on!!
See you from the bakery!

You just helped make my mind for brekkie tom..although no blending involved…in other words, overnight oats :)! Have a great & productive day!
Lisa @ Healthful Sense says
I can’t give up coffee for tea. I’ve tried and I always go back. There’s just nothing like a cup of coffee in the morning.
Holly @ The Runny Egg says
If I was opening a bakery like you, I’d probably be drinking a pot of coffee each day!
Molly says
I love love love productive mornings! I love knowing you’ve done more by 8am than what some people will do in their entire day.

I slept terribly last night too – mind racing with stress about exams and the future. It was awful! I’m so tirrred :'(
Sarena (The Non-Dairy Queen) says
Yay! Fire! I am so freakin’ excited for you guys!
Mrs A says
Apparently in addition to being excited on the surface to come into your bakery when y’all are open, I am also subconsciously excited because I had a dream about you guys and your bakery last night!! Haha! Best wishes for smooth sailing 🙂
Nikki (BareFootPrint) says
The bakery looks awesome, and congrats on getting the oven up and working!! I wish I was closer so I could visit!

Baking 'n' Books says
God – the fire thing scared me…Lynda’s Granola – where does that come from and how did you get hooked on it? I’ll have to check it. I’m in love with granola and usually buy Nature’s Path Hemp or something, but go through it too quickly!
Amanda (Eating Up) says
Sounds like things are a little less stressful now!
Kate @ NaturaStride says
Hi Kath! The bakery looks so fantastic! You guys have done so much work!!
Ugh I hate racing mind syndrome – but sometimes the best way to deal with it is just to get up and get going – good for you, girl. Have a great day!
Mari @ itsgoodmari.blogspot.com says
I have yet to try the DBS, but I’m thinking I will this weekend (I usually make my oats at work, blending might be crossing the line…)
Also, I randomly discovered an awesome way to store coconut butter so it’s always a melty consistency: On top of the fridge! The warmth radiated by the fridge keeps it always as a perfect temperature, but not too runny.
However, I don’t think my landlord has replaced the fridge since 1985, so this might not work with newer high efficiency appliances haha.
KathEats says
Oh that’s a wonderful idea!!! Except that I think the eye-sore would drive me nuts 🙂
Nancy says
So, put it in a pretty basket on top of the fridge!
Heather says
Looks like one stresser is taken care of!
When I get nervous, I also have trouble sleeping and need to accomplish things before I can “relax.”
Good luck meeting your Friday deadline!

Looks amazing! I guess it is getting to be that time of year to start ditching hot oats for somehting much cooler…. 🙂 Happy Hump Day!

Kath – the Open Sky promotion is awesome! I just found Justin’s at Target this week and was super excited to get to try it (super delicious!), but I paid nearly $11 for a single jar – so, thanks for the combo pack deal! Good luck with the bakery — it’s looking fantastic!

I hope things go according to plan! Good luck!
I have an Open Sky question. Is there any way to buy some of the older Open Sky products/ For example, the ones you could buy at any time beofre there were promotions? I am wanting things for my kitchen! 🙂
KathEats says
Some of them should be back!! If you have a product in mind please let me know so I can special request it for you!

Some chocolate hazelnut would certainly be the perfect topping for a dough boy smoothie today… 🙂
Lauren says
I hate those restless nights. At least you were able to get so much accomplished this morning. Always a plus.
Ash @ Good Taste Healthy Me says
Yum, that looks delish!!
I can’t wait to see the pictures when it’s all opened! So exciting!
Lindsey says
Hi Kath-
I am a regular reader, but don’t usually comment on blogs. I was originally really excited about the Nut Butter sale, but one thing that Justins nut butters and Danielle’s veggies have in common is Palm Oil. I would recommend looking into the environmental impacts of Palm Oil plantations and Palm Oil harvesting and making your own decision regarding your use of Palm Oil…especially when nut butters really don’t need any additional oil to be delicious!!
Karen says
I’m not thrilled about the use of palm oil in my nut butter either. I don’t mind some seperation; nothing that a quick stir won’t resolve.
Mary @ Bites and Bliss says
I love mornings that are so productive before 9AM!!I haven’t had many of those as the most productive thing I’ve been doing that early is sleeping in as of late..but I do love those mornings nonetheless.
Haleigh says
I still need to try one of those smoothies. Sorry that you didn’t sleep well last night, but way to go for turning into a productive morning!
Stephanie @ StephSnacks says
We all have those days when the mind races until everything is finally complete! It feels great to have everything on our ‘to do’ list checked off! That Dough Boy Smoothie looks amazing.. maybe I will give it a whirl for tomorrow AM 🙂
Alexa @ Simple Eats says
Ah I still can’t believe you guys are opening your bakery. It’s awesome!
Michelle (The Runner's Plate) says
I think caffeine lingers in my body a lot longer than it does for most people, too.
Johanna B says
Fire in your baking oven is a good thing indeed. Now to get past those pesky inspections.
Karen says
Glad your nervous adrenaline is working in your favor esp. after a sleep disturbed night. I rarely function well without a full eight!
Have fun playing in the bakery today!
Lorin says
Hi, I was just wondering what you thought between intuitive eating versus eating to keep metabolism up. For example, I’m never really that hungry for breakfast but I always hear that one should not skip breakfast. However, if I was eating intuitively I would just wait till I actually got hungry and listen to my body, but then slow down my metabolism I guess. I just was wondering what you thought about eating breakfast even if you’re not hungry because I could wait till I get hungry but then it would be close to lunch by then.
KathEats says
Hmm. That’s a tough one. I think saying you could skip breakfast if you’re not hungry would seem like I’m saying it’s ok not to eat – which is not ok! But if you’re not hungry till say, 9am and get up at 7am, then I don’t think you’re going to kill your metabolism by waiting an hour or so. Some people’s hunger hormones act differently. I also don’t think forcing yourself to eat has much benefit, but neither does fasting. If you’re not hungry in the AM, you might want to try eating dinner earlier. Or if you have to eat at 10pm every night and thus aren’t hungry at 7, I think that’s not going to have much of an effect. Does that make sense? I’m rambling!

Hi Kath! I have never posted before but read your blog daily. I thought you should know… I was sitting at work this morning, typing out an address on an envelope that was supposed to say “Lake Country” and I typed KALE COUNTRY. If such a place existed… you would be the mayor!
KathEats says
Haha – awesome!
Elena @ GagaForGrapefruit says
eek that fire scared me! glad things are shaping up 🙂
Ginger&Rice says
When making the Dough Boy smoothie, do you think that a Magic Bullet would work? Or would I have to use a food processor?
KathEats says
Any kind of blender will work!
Laura Jane @ Recovering Chocoholic says
I love your dough boy smoothie idea. I’m pretty new to your blog, so I haven’t seen it before. I love that you do all the work the night before and just blend in the morning. Great for rushed mornings.
