Just call me the Wicked Witch of the West because I was blown all through town today!
First, this morning, to Body Pump, although I drove my car because it was still raining mildly when I left. The class was great! I’m really enjoying BP. Hope I don’t get sick of it! My muscles are growing. I’m kind of at that point when you just look bigger all over and not really more defined? Hopefully it’s just a phase 🙂
The woman in front of me made my day. We just finished the biceps track and I guess I was making a lot of grimacing faces because at the end she turned to me and said “Great job on that!” I thanked her and laughed. She said I had twice as much weight as her and she could barely finish. So nice of her to comment!
Once I was back home, I made an earlier-than-usual lunch because we had a 2PM appointment.
A salad with every vegetable in our fridge, two eggs, pecans, smoked cheddar and an orange! Drizzled in a little honey with sea salt.
Don’t knock the combo until you try it!
It was a fun and fabulous salad.
After eating, Matt and I biked across town (easier said than done!) for our construction meeting.
Ay yi yi. That’s all I’m gonna say!
But after the meeting, we biked, I mean blew, back across town to see the bakery’s demo updates. It looks AMAZING with all the space opened up!!
It used to be filled paint and T-shirts
Then walls were demoed
And today – it’s a wide open space! We’re keeping the open ceiling in the customer area – I’m so excited to get that lofty feel!
Matt and I wrestled the wind [and hills] on our bikes back home. Boy did I need water and chapstick during that 3 mile ride home! Smothering on/in both of them now, and have to make some decisions with Matt as well as pack for our trip!
Amanda (Eating Up) says
What a busy day so far! I hope you have a nice dinner planned for tonight.
cathyb@brightbakes says
I’ve been digging unusual salad combos lately too! As for you bakery demo work…looks great. I’m a big fan of restaurants/stores carrying on with that open ductwork/loft-type look! 🙂 Can’t wait to see the finished product!
love,
cathy b.
Stacy @ Every Little Thing says
Woohoo can’t wait to see more work on the bakery!
Holly @ Couch Potato Athlete says
I love citrus slices in salads — its almost like having extra salad dressing on there with all the juice. And I love eggs on anything so I think your salad looked delicious!
How exciting to see your bakery come together!
Johanna B says
Enjoy your time in Florida as we dig out from another snowstorm. Jealous much?
Jess (Sweet Potato) says
The egg on your salad is an interesting idea! The bakery space looks great! Cant wait to see it come together!
Freya (Brit Chick Runs) says
I started biking yeseterday – 8.5miles yesterday, 7 today – and I have a newfound respect for you – it’s hard!! I think I’ll have thighs of steel soon…
Valerie @ City|Life|Eats says
Wow – I am so impressed you bike in such windy weather!
Allison K. says
Aww..compliments like that in the gym are so nice! how much weight do you usually use in BP?
KathEats says
I use two mediums and a small on each side usually – but take some off and add for different muscles
Sarah @ The Strength of Faith says
That space is going to look awesome! I can’t wait to see it all done. How does franchising work? Does GH help with start up costs?
KathEats says
No, they don’t. we actually pay them! It’s complicated 🙂
Sarah @ The Strength of Faith says
Huh! It’s a good thing you’re organized then 🙂 and that I’m in a business that doesn’t involve franchising, ha.
Mary (What's Cookin' With Mary) says
Your lunch looks so vibrant and full of nutrients. Love all the colors!
We’re supposed to get a ‘cold’ storm tonight/ tmr here in So Cal. Can’t wait 😀 I’m weird. ;P
Annette @ enjoyyourhealthylife says
That is def an interesting combo for lunch-but I should try it, eh? 😉 BodyPUMP will do that to ya-just keep going and you’ll see the definition soon enough! And with that, I am off to go teach BP….gotta love it!

Amelia (Eating Made Easy) says
I would never have thought to mix oranges with eggs, but your salad is so beautiful I just may try it! I had a smoked salmon sandwich for lunch and it was simply divine: http://eating-made-easy.com/2011/02/25/small-bites-for-your-oscar-party/

I can’t wait to see the finished bakery! It has changed so much already! The egg on your salad looks sooo yummy!
Angela (the diet book junkie) says
how exciting to see your bakery come together! sounds like you got a LOT of exercise in for one day too. make sure you take the evening to relax those muscles, girl! 🙂
Paige @Running Around Normal says
Wow what progress!! So exciting 😀
About the body pump/muscle definition thing – we do tend to retain water when first starting back up strength training, thus creating the bigger look. Keep it up for a couple more weeks and the definition part should make an appearance 🙂
Stacey (The Home-Cooked Vegan) says
The feeling big all over part will pass, I promise! Weight training causes water retention in the muscles and it discourages a lot of people when they are training because they get that bloated feeling, but you just have to stick with it! I love BodyPump 🙂 It’s a really great workout!
So excited to see your store coming along!!! Have fun on your trip 🙂
KathEats says
Funny you both wrote teh same thing! I’m so glad to know it’s normal 🙂
Kristen, Sweetly says
Yay, sand! Say hi for me…
And that ceiling looks so fun; I love high, wide-open spaces in places like that. 🙂
[email protected] says
I have been doing bodypump for about a month now two days a week and I feel the exact same way – about my body just getting a bit bulkier and I too am hoping I will start to look more defined. It’s nice to hear someone else say that because my husband kept telling me i was crazy 🙂
Janine
Emily @ Savory and Savage says
I loved seeing the shots of the demolition.
Unusual salad combinations are always fun!
Sarena (The Non-Dairy Queen) says
I am so excited for you guys! The bakery is going to look great! Lunch looks colorful and delicious! Have a great night Kath!
Amanda (The Nutritionist Reviews) says
I love that you put oranges on the salad! Yum!
foodandfarm says
How close is your space to the downtown mall?
KathEats says
about a mile?
Angela @ Eat Spin Run Repeat says
WOW, what a busy day! I’m so excited for you guys and the bakery. That is one different salad combo but I have no doubt it was good – I’ve certainly had some crazy combinations too!
Heather (Heather's Dish) says
that’s quite the day! glad everything’s going well with all the GH stuff…you guys are going to rock it!
Rachel @ Healthy Teacher says
I’ve had boiled eggs in my salad but not a runny one. Looks delish. Let me know how the BP goes. I do it once a week, but I think Jillian Michael’s 30 day shred when I’m trying to get more definition. Something about combining the cardio with muscle building seems to keep me from getting to that bulky stage that I went through when I was weight lifting and running.
Kate (What Kate is Cooking) says
I hope I stick with Body Pump long enough to reap the benefits 🙂
Clare says
Hmmm….it’s so funny you say that about weight training. I go through “phases” of being really into weights and then a few weeks in, I give up because I just feel….well, large all over. I know that it’s good to do but I just can’t make myself love it like I do cardio. I also find that my appetite is really amped up when I do a lot of lifting so that probably contributes!
Baking 'n' Books says
Have a great trip! Hopefully FL won’t be windy 🙂
I think I asked you before – so I apologize if you did answer and I didn’t see it – but what time do you normally eat lunch and dinner? I tend to eat both late and it’s always hyped “not to”, etc.
(p.s is there anyway to get automatic replies sent to you if you do reply like on other blogs – or do you just have to come back and check?)
KathEats says
I usually eat lunch around 1:30 and dinner at 6
Sorry, my theme doesn’t have the response email option
Natalia - a side of simple says
I’m glad to hear you’re keeping the open ceilings! I always like it when cafes and the like have that. It looks so much more open and airy and much less crowded.
Hilary says
That salad combo sounds strange (but interesting) but the colours are gorgeous!
Averie (LoveVeggiesAndYoga) says
windy weather = chapstick for sure! i am a chapstick addict (carmex to be exact). I have to have it!
And how nice of that woman to give you a nice compliment like that…random acts of kindness and nice words make the world go round. Thank you for posting that, Kath 🙂
Sarah (Running To Slow Things Down) says
So exciting to see your business taking off. You guys will do great! 😀
I love interesting salad combos. Definitely trying this one. 😀

Allison @ Happy Tales says
I’ve had many a biketrip going “against” the winds….somehow both ways! I know just how hard it is… it is SUCH a workout!
Camille says
Oh man! It looks like there is a lot of work to do but it will so be worth it!
Teresa (Teresa Tastes & Travels) says
Is your honey drizzle really just honey and sea salt? Nothing else mixed in? …Just want to be sure I’m reading that right…
KathEats says
You mean my dressing? Yes. I just drizzle on some honey and sprinkle on some salt. I often add olive oil too, but we were all out.
lynn @ the actor's diet says
that salad combo sounds great! i’m a fan of unconventional mixes. i recently freaked everyone out with my banana + tuna salad.
kate@ahealthypassion says

KathEats says
Karen brought it back from NZ last year!
Mary Frances says
